1 pound carrots (about 6 medium), quartered lengthwise and sliced 1/8 inch thick diagonally
1 cup uncooked couscous
1/2 cup slivered almonds
1/2 cup raisins
1/4 cup chopped fresh mint
1 tablespoon olive oil
Coarse salt and ground pepper
4 skinless salmon fillets (6 to 8 ounces each)
Lemon wedges, for serving

Steps:

  • Preheat oven to 450 degrees. In a 9-by-13-inch baking pan, mix together carrots, couscous, almonds, raisins, mint, oil, 1 1/4 cups water, 1 1/2 teaspoons salt, and 1/4 teaspoon pepper.
  • Place salmon fillets on top of couscous mixture; season generously with salt and pepper. Cover pan with foil; bake until fish is opaque throughout, 30 to 35 minutes.
  • Transfer fish to plates. Fluff couscous with a fork; serve with fish and lemon wedges.

4 Salmon (each about 140 grams)
1 Tbsp freshly grated ginger
4 Tbsps olive oil
4 Tbsps lemon juice
300 grams Couscous (Instant)
60 grams dried Apricot
0.5 Cucumber
2 Tbsps freshly chopped cilantro
salt
peppers (freshly ground)
pickled ginger
lemons

Steps:

  • Rinse the salmon and pat dry. In a bowl, mix the ginger with 3 tablespoons of the olive oil and half of the lemon juice. Brush this mixture on the salmon fillets. Cover and refrigerate for 30 minutes to marinate.
  • Soak the apricots in hot water.
  • Soak the couscous in 500 ml (approximately 2 cups) of boiling water until tender, about 10 minutes.
  • Heat the remaining oil in a skillet. Cook the fish until golden on both sides, about 3-4 minutes.
  • Drain and chop the apricots. Rinse the cucumber. Quarter it lengthwise and chop into small pieces. Stir the apricots, cucumber, remaining lemon juice and cilantro leaves into the couscous. Season with salt and pepper.
  • To serve, divide the couscous between serving plates, top with a salmon fillet and garnish with the lemon and ginger slices.

1/4 cup of fresh mint, chopped

lemon wedge

Steps:

  • Preheat oven to 450 degrees F.
  • Slice the carrots lengthwise and then in 1/8 inch diagonal sections.
  • In a 9x13 inch baking pan, mix together the carrots, couscous, almonds, raisins, mint, oil, salt and pepper and 1 1/4 cups of water.
  • Place the salmon fillets on top of this mixture and season generously with more salt and pepper.
  • Cover the pan with a piece of aluminum foil.
  • Bake for 30-35 minutes, or until fish is opaque.
  • Transfer fish to plates.
  • Fluff couscous with a fork and place next to salmon on plates.
  • Serve with lemon wedges.

8 ounces couscous (230g)
2 (7 ounce) salmon fillets, skin on, scaled and pinboned (each ca 7oz/200g)
olive oil
sea salt
fresh ground black pepper
16 asparagus spears
1 -2 red chile, deseeded and finely chopped
4 ripe tomatoes, roughly chopped
1 lemon, juice of
2 small courgettes, sliced into batons
1/4 cup fresh coriander, roughly chopped
2 tablespoons sour cream

Steps:

  • Put your couscous in a bowl, then pour over just enough water to cover it.
  • Set aside for 3 minutes to allow the couscous to soak up the water.
  • Slice the salmon widthways into finger-size or twofinger-size strips (I've made 3 out of each fillet), drizzle with olive oil, and season with salt and pepper.
  • Heat a non-stick frying pan and add the courgettes, asparagus tips and chilli. The vegetables will need 2-5 minutes, depending on their size and on your taste.
  • Heat another non-stick frying pan and add the salmon strips (non-skin side first). They will need one minute on each side.
  • Mix the tomatoes, lemon juice, 4 tablespoons of the olive oil and the coriander into the couscous and season to taste.
  • Add the couscous to the veggies in the pan and mix.
  • Put the salmon strips on top of the couscous, place a lid on and put back on a high heat for a minute.
  • Serve:.
  • Slide everything on to plates and spoon over some sour cream.
