8 hard-boiled large eggs
1 package (3 ounces) smoked salmon or lox, finely chopped
6 tablespoons sour cream
1 tablespoon chopped fresh dill or 1 teaspoon dill weed
1 teaspoon cider vinegar
1 teaspoon Dijon mustard
1/4 teaspoon cayenne pepper

Steps:

  • Cut eggs lengthwise in half. Remove yolks; set whites aside. , In a small bowl, mash yolks. Add the remaining ingredients; mix well. Spoon into egg whites. Refrigerate until serving.

Smoked salmon devilled eggs are such delightful finger food. Dill and salmon flavours pair exceptionally well with the creamy texture of devilled egg yolks. Make a day ahead for an easy appetizer.

12 hard boiled eggs, peeled
½ cup ( 125 mL ) finely chopped smoked salmon
¼ cup ( 60 mL ) light mayonnaise or salad dressing
2 tbsp ( 30 mL ) chopped fresh dill
4 tsp ( 20 mL ) capers, minced
2 tsp ( 10 mL ) Dijonnaise
1 tsp ( 5 mL ) lemon juice
¼ tsp ( 1.25 mL ) pepper
Strips of smoked salmon and/or dill sprigs (optional)

Steps:

  • Cut eggs in half lengthwise. Remove yolks and place in medium bowl; set egg whites aside.
  • Mash yolks with fork; stir in salmon, mayonnaise, dill, capers, dijonnaise, lemon juice and pepper. Spoon or pipe yolk mixture into egg white halves. Garnish with smoked salmon and/or dill, if desired.
  • Serve immediately or store, covered, in refrigerator. Serve within two days.

1/3 cup mayonnaise
2 tablespoons snipped fresh dill

1/2 teaspoon freshly ground pepper
3/4 cup flaked smoked salmon fillet
SAUCE:
1 cup mayonnaise
1/4 cup plus 2 tablespoons ketchup
1 tablespoon horseradish sauce
1 tablespoon prepared mustard
1/4 cup smoked salmon fillets, optional

Steps:

  • Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Mix in cream cheese, mayonnaise, dill, capers, lemon juice, horseradish sauce, mustard and pepper. Fold in salmon. Spoon into egg whites. Refrigerate, covered, until serving., For sauce, in a small bowl, mix mayonnaise, ketchup, horseradish sauce and mustard. If desired, top eggs with salmon mixture; serve with sauce.

1/2 cup mayonnaise
1/4 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon pepper
1/8 teaspoon garlic powder
1/4 cup flaked smoked salmon
Fresh dill sprigs

Steps:

  • Cut eggs lengthwise in half. Remove yolks, reserving whites. In a small bowl, mash yolks. Stir in mayonnaise and seasonings; gently stir in salmon. Spoon or pipe into egg whites; top with dill. Refrigerate, covered, until serving.

6 hard-boiled eggs (peeled)
1/8 cup mayonnaise
1/8 cup sour cream
2 ounces smoked salmon (lox, finely chopped)
1 teaspoon chopped dill, plus
more chopped dill, for garnish
1/2 teaspoon lemon juice
1/2 teaspoon black pepper
1/4 teaspoon salt

Steps:

  • Slice the eggs in half lengthwise.
  • Carefully remove the yolks.
  • Press yolks thru a fine-mesh sieve into a mixing bowl, or just mash them real good with a fork.
  • Add the mayonnaise, sour cream, salmon, dill, lemon juice, pepper and salt.
  • Stir to blend thoroughly.
  • Spoon heaping amounts of the mixture into the egg whites.
  • Cover and chill for at least 1 hour before serving.
  • Sprinkle with chopped dill before serving.

Number Of Ingredients 10

8 extra-large eggs
1/2 cup sour cream
2 ounces cream cheese, at room temperature
2 tablespoons good mayonnaise
1 tablespoon freshly squeezed lemon juice
2 tablespoons minced fresh chives, plus extra for garnish
4 ounces good smoked salmon, minced
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
2 ounces salmon roe

Steps:

  • Place the eggs in a pot large enough to hold them in a single layer. Cover the eggs with cold water and bring to a full boil over high heat. As soon as the water boils, turn off the heat, cover the pot, and let the eggs stand for 15 minutes. Drain the eggs and fill the pot with cold water. Set aside until the eggs are cool.
  • Peel the eggs and then slice them in half lengthwise. Remove the yolks carefully. Place the yolks in the bowl of an electric mixer fitted with the paddle attachment and arrange the whites on a platter in a single layer with the cut sides up and sprinkle with salt.
  • To the egg yolks, add the sour cream, cream cheese, mayonnaise, lemon juice, chives, salmon, salt, and pepper. Beat on medium speed until fluffy. With a small spoon, fill the egg whites with the egg yolk mixture. Cover loosely with plastic wrap (you don't want to flatten the filling) and refrigerate for 30 minutes for the flavors to blend.
  • When ready to serve, garnish with a dollop of salmon roe and some extra chopped chives. Sprinkle with salt and pepper and serve.

  • In a large saucepan, cover the eggs with water and bring to a vigorous boil. Cover the saucepan, remove from the heat and let stand for 10 minutes.
  • Drain off the water and shake the pan gently to crack the eggs. Cool the eggs slightly under cold running water, then peel them under running water. Pat dry.
  • Cut the eggs in half lengthwise and carefully remove the yolks. Transfer the yolks to a bowl and mash well with a fork. Stir in the salmon, mayonnaise, cornichons, cornichon liquid and Dijon mustard. Season with salt. Mound the filling in the egg-white halves and sprinkle with Old Bay. Serve lightly chilled.
