THE ULTIMATE GRILLED CHEESE SANDWICH
Steps:
- Gather the ingredients.
- Place two slices of bread on a cutting board and spread 1 tablespoon of the softened butter evenly and thinly on one side of each slice. Make sure you cover the entire slice from edge to edge.
- Place a nonstick or well-seasoned skillet over medium-low heat. Place 1 slice of bread in the pan, butter-side down. Spread 1/2 teaspoon of mustard, if using, over the bread slice in the pan. Mound half of the cheese on the bread. If you're going to add the pickles, tomato, or bacon, do so now.
- Spread 1/2 teaspoon of mustard on the unbuttered side of the remaining slice of bread. Place the slice of bread on the cheese, butter-side up.
- Cook until the sandwich is brown on the bottom, 3 to 4 minutes. Carefully flip with a spatula and continue to cook until the second side is brown, 2 to 3 minutes more. If the bread is browning too quickly, turn the heat down.
- Remove the sandwich to a plate and repeat steps 2 through 5 for the second sandwich.

We used cheddar cheese in these sandwiches, but any type of cheese that oozes when it melts, such as Swiss, will produce just as delicious a sandwich.

- Preheat oven to 300 degrees. Spread butter over one side of each slice of bread.
- Arrange bread, butter side down, on a piece of plastic wrap or wax paper. Spread each slice of bread with mustard. Arrange cheese over 4 slices of bread, and sandwich together with remaining bread, butter side out.
- Set a large cast-iron skillet over medium heat. Cook sandwiches in batches in skillet. Using a spatula, press down firmly on sandwiches. Cook until bread is golden brown, 2 to 3 minutes. Reduce heat to medium low. Turn sandwiches over, press down with spatula, and cook until bread is golden and cheese is starting to melt, about 2 minutes more. Transfer to a baking sheet, and place in oven. Bake until cheese is completely melted. Serve immediately.

- Mix mayonnaise, chives and Dijon mustard in small bowl. Season with generous amount of pepper. Spread 1 side of each bread slice with mayonnaise mixture. Divide cheddar cheese among 4 bread slices, then top with remaining bread, mayonnaise side down.
- Preheat oven to 250°F. Melt 2 tablespoons butter in griddle or heavy large skillet over medium heat. Add 2 sandwiches; turn to coat with butter. Cook until golden on each side and cheese melts, about 5 minutes per side. Transfer to baking sheet. Keep warm in oven. Repeat with remaining 2 tablespoons butter and remaining sandwiches.

- In a large skillet, saute peppers in oil just until tender. Sprinkle with salt and pepper. Meanwhile, in a small bowl, combine the butter, mustard, chives, garlic and pepper flakes., Cut bread into 1/2-in. slices, leaving slices attached at the bottom. Cut loaf through the two center slices, separating loaf into two halves. Cut off and discard end slices. Place each loaf on heavy-duty foil coated with cooking spray. Spread butter mixture between every other slice. Alongside buttered slices, insert cheese, meat and peppers, using provolone cheese and salami in one loaf and cheddar cheese and roast beef in the other., Wrap each loaf tightly in foil; place on grill rack. Grill, covered, over indirect medium heat for 8-10 minutes or until cheese is melted. Using a serrated knife, separate sandwiches.
