1 (15-ounce) can salmon (bones removed)
2 green bell peppers, finely diced
1 yellow onion, finely diced
Salt and pepper
3 cups yellow cornmeal
1 cup all-purpose flour
Vegetable oil, for frying
Ketchup, for serving, optional
Hot sauce, for serving, optional

Steps:

  • Combine salmon, bell peppers, and onion in a bowl. Season with salt and pepper. Shape by hand into patties, as you would a hamburger. In a separate bowl, combine cornmeal and flour. Roll salmon patties in the cornmeal mixture.
  • Heat about 1-inch of oil in a large, heavy skillet to 340 degrees F. Carefully place patties, in batches as necessary, in the hot oil and fry for 3 minutes on each side or until golden brown. Drain patties on paper towels. Serve with ketchup and/or hot sauce, if desired.

1 cup louana vegetable oil or 1 cup canola oil
1/4 cup mayonnaise
3 tablespoons finely chopped fresh chives (optional)
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 large egg
2 (7 1/2 ounce) cans salmon, drained
20 saltine crackers
1/2 cup mayonnaise
2 teaspoons prepared horseradish
1 teaspoon fresh lemon juice
1/8 teaspoon salt

Steps:

  • Heat oil in a large skillet over medium-high heat.
  • Combine 1/4 cup mayonnaise and next 4 ingredients (through egg) in a large bowl, stirring well.
  • Add salmon to mayonnaise mixture; toss to combine.
  • Process crackers in a food processor until finely ground.
  • Add 3 tablespoons cracker meal to salmon mixture; stir to combine.
  • Shape salmon into 4 patties.
  • Place remaining cracker meal in a shallow dish. Dredge patties in cracker meal.
  • Add patties to pan; cook 2 1/2 minutes on each side or until golden.
  • Combine 1/2 cup mayonnaise and remaining ingredients, stirring well. Serve with croquettes.

2 tablespoons shallots, finely-chopped
1/4 cup dry white wine or 1/4 cup vermouth
2 tablespoons light mayonnaise
2 tablespoons light sour cream
2 teaspoons fresh lemon juice
2 teaspoons freshly-grated horseradish or 2 teaspoons prepared horseradish
2 teaspoons drained capers (optional)

Steps:

  • Preheat the oven to 450 degrees.
  • Prepare a shallow roasting pan or baking dish with nonstick pan spray.
  • Place the salmon fillets, skin-side down, in the pan.
  • Sprinkle the shallots over the slices; pour wine evenly over all.
  • Bake 6 to 8 minutes, or until the fish is opaque.

1 can (14-3/4 ounces) pink salmon, drained, deboned and flaked
1 cup evaporated milk, divided
1-1/2 cups cornflake crumbs, divided
1/4 cup dill pickle relish
1/4 cup finely chopped celery
2 tablespoons finely chopped onion
Oil for deep-fat frying
TARTAR SAUCE:
2/3 cup evaporated milk
1/4 cup mayonnaise
2 tablespoons dill pickle relish
1 tablespoon finely chopped onion

Steps:

  • In a large bowl, combine the salmon, 1/2 cup milk, 1/2 cup crumbs, relish, celery and onion. With wet hands, shape 1/4 cupfuls into cones. Dip into remaining milk, then into remaining crumbs. Heat oil in a deep-fat fryer to 365°. Fry croquettes, a few at a time, for 2 to 2-1/2 minutes or until golden brown, Drain on paper towels; keep warm., In a small saucepan, combine tartar sauce ingredients; cook over medium-low heat until heated through and slightly thickened. Steps:

  • For sauce:

  • For salmon:
  • Spray grill rack generously with nonstick spray. Prepare barbecue (medium-high heat). Whisk oil, horseradish, soy sauce, garlic, salt, and pepper in another small bowl. These croquettes are made with fresh salmon, but still cook really quickly. They are great to snack on as an appetizer dipped into some tartar or remoulade sauce, over a green salad, or with some wild rice and veggies on the side.

1 pound boneless, skinless salmon fillets
½ cup baking mix (such as Bisquick®)
½ cup diced onion
¼ cup diced red bell pepper
¼ cup freshly chopped parsley
1 large egg
3 cloves garlic, minced
½ teaspoon Worcestershire sauce
¼ teaspoon seasoned salt
¼ teaspoon seafood seasoning (such as Old Bay®)
⅓ cup cornmeal
2 tablespoons vegetable oil

Steps:

  • Finely chop the salmon using a food processor.
  • Transfer salmon to a bowl with baking mix, onion, bell pepper, parsley, egg, garlic, Worcestershire, seasoned salt, and seafood seasoning. Mix until the ingredients are well blended.
  • Form the mixture into 8 small patties, and place onto a plate lined with waxed paper. If you are struggling to form the patties due to the mixture being sticky, rinse your hands after forming every few patties, as the mixture is easier to work with while your hands are clean. Refrigerate the patties for 30 minutes.
  • Heat the vegetable oil in a skillet over medium heat. Place the cornmeal into a shallow dish and dredge each patty in the cornmeal, pressing lightly so that the cornmeal adheres to both sides of the patties.
  • Working in batches, cook the patties in the oil until golden and cooked through, 3 to 4 minutes per side.
