GRILLED MISO SALMON WITH RICE NOODLES



Grilled miso salmon with rice noodles image

Glaze succulent salmon fillets, then serve on a bed of noodles and beansprouts for an easy and quick dinner party main

4 salmon fillets , about 140g each
sunflower oil , for greasing
2 tsp brown miso paste
2 tsp balsamic vinegar
2 tsp soy sauce
1 tsp Spanish smoked paprika
200g dried rice noodles
3 tbsp sunflower oil
3 garlic cloves , finely grated
25g ginger , finely grated
8 spring onions , sliced
2 medium red chillies , thinly sliced
100g beansprouts
small pack of coriander , chopped
1 tbsp fish sauce

Steps:

  • Boil the noodles for 3 mins in a large pan, drain and rinse under cold water through a sieve and set aside to drain completely.
  • Heat the grill to high. Mix together the miso paste, balsamic vinegar, soy sauce and paprika to make the miso glaze and brush over the salmon fillets with a pastry brush. Lay the salmon skin side down on a greased baking tray and grill for 6-8 mins until just cooked through.
  • Heat the oil in a wok and stir-fry the garlic, ginger, spring onions and chillies for a couple of mins until soft, then add the cooked noodles, beansprouts and coriander. Toss everything together until well combined and turn off the heat. To finish, stir the fish sauce into the stir-fried vegetables and noodles, then pile onto plates, topping with the salmon.

1 lb salmon
1/2 cup soy sauce
4 tbsp brown sugar
4 tbsp olive oil
2 tsp ginger (grated)
1 tsp corn starch
5 oz rice noodles (or soba or udon)
2 tsp sesame oil
2 tsp olive oil
1/2 onion (thinly sliced)
1/2 red pepper (thinly sliced)
8 oz gourmet mushrooms (shitake, enoki, oyster, crimini or button )
1/2 cup snow peas
1 tbsp garlic (minced)
1 tsp soy sauce
1/4 cup sweet thai chili sauce
1 cup spinach leaves (chopped)
1 lime

Steps:

  • Whisk teriyaki sauce ingredients together (soy sauce, brown sugar, oil, ginger and corn starch). You can also use 1 cup pre-made teriyaki sauce instead.
  • Pour into a ziploc bag and place salmon in bag. Marinate for 30 min - 2 hrs.
  • For last 15 minutes of marinating, prep rest of items & start cooking
  • Cook rice noodles according to package directions, prep veggies
  • After noodles are cooked, rinse with cold water and drain. Set aside.
  • Heat sesame oil in a skillet
  • Add onions and peppers and cook for 2-3 min until soft
  • While veggies are cooking, prepare salmon - instructions below.
  • Add garlic, mushrooms, snow peas and soy sauce. Cook for 3-5 minutes until mushrooms are done
  • Add in chili sauce, drained noodles and 1/4 cup remaining marinade
  • Toss and remove from heat
  • Add spinach and juice from lime - toss again until spinach wilts slightly
  • Serve in bowls
  • Top with salmon

1l low-salt chicken stock
2 tsp Thai red curry paste
100g flat rice noodle
150g pack shiitake mushroom , sliced
125g pack baby corn , sliced
2 skinless salmon fillets , sliced
juice 2 limes
1 tbsp reduced-salt soy sauce
pinch brown sugar
small bunch coriander , chopped

Steps:

  • Pour the stock into a large pan, bring to the boil, then stir in the curry paste. Add the noodles and cook for 8 mins. Tip in the mushrooms and corn and cook for 2 mins more.
  • Add the salmon to the pan and cook for 3 mins or until cooked through. Remove from the heat and stir in the lime juice, soy sauce and a pinch of sugar. Ladle into 4 bowls and sprinkle over the coriander just before you serve.

3 cups mushroom broth
1/4 cup mirin or white wine
2 tablespoons low-sodium soy sauce
2 teaspoons fish sauce
1 1/4 pounds center-cut wild salmon fillet (1 inch thick), cut into 4 pieces
Kosher salt and freshly ground pepper
1 red bell pepper, thinly sliced
2 stalks celery, thinly sliced
1/2 cup fresh basil
1 teaspoon toasted sesame seeds

Steps:

  • Bring a large pot of water to a boil. Add the noodles and cook as the label directs. Drain and rinse well under cold water; set aside.
  • Meanwhile, combine the mushroom broth, mirin, soy sauce and fish sauce in a medium skillet. Bring to a boil, then reduce the heat to a bare simmer. Season the salmon with salt and pepper and add to the skillet along with the bell pepper and celery. Cover and cook, carefully flipping once, until the salmon is cooked through and flakes at the touch, 21/2 to 3 minutes per side. Remove the salmon using a slotted spoon or fish spatula; discard the skin.

2 skin-on salmon fillets (about 125g/41/2oz each)
1 small red chilli , deseeded and finely chopped
1 tbsp mirin
1 tbsp soy sauce
½ thumb-sized piece ginger , peeled and finely grated
½ small pack coriander , chopped
140g mangetout
2 tbsp teriyaki sauce
300g straight-to-wok noodles

Steps:

  • Heat oven to 190C/170C fan/gas 5. Line a baking tray with parchment and put the salmon, skin-side down, on top. Mix together the chilli, mirin, soy, ginger and coriander, and spoon over the salmon. Roast the salmon in the oven for 12-15 mins until just cooked.
  • Heat a large frying pan or wok and cook the mangetout with 1 tbsp water for 2 mins until tender but still with some bite. Stir in the teriyaki sauce and noodles to heat through. Divide between 2 plates and top with the salmon.

This simple, Asian-inspired fish and fried noodle dish makes a perfect casual, mid-week supper

4 tbsp dark, light, low-salt (or a mixture) soy sauce
4 tbsp rice wine or mirin
1 stem ginger, finely chopped, plus 2 tbsp syrup from the jar
1 garlic clove, crushed
2 salmon fillets
140g any noodle
2 tbsp sesame seed
2 spring onions, chopped

Steps:

  • Heat oven to 180C/160C fan/gas 4. In a small jug, whisk together the soy, rice wine or mirin, stem ginger and syrup, and garlic. Line a roasting tin with baking parchment and put the salmon in it. Pour over half the sauce, then bake for 15 mins until the salmon is cooked through.
  • Meanwhile, bring a large pan of water to the boil. Add the noodles and cook following pack instructions, then drain well.
  • In a small frying pan, lightly toast the sesame seeds for 1 min, then add to the cooked noodles (reserving a sprinkle for the top). Pour the remaining sauce over the noodles, plus any from the roasting tin, and toss together. Serve with the salmon, scattered with the chopped spring onions and remaining sesame seeds.

1 tsp olive oil
2-3 tsp Thai red curry paste
2 spring onions , chopped
1 sweet potato , cubed
200ml vegetable or chicken stock
100ml skimmed milk
2 skinless salmon fillets , cut in half and then into fine strips
½ small bunch coriander , roughly chopped

Steps:

  • Cook the noodles following the pack instructions, rinse and drain. Heat the oil in a deep saucepan and fry the curry paste for 1 min until fragrant. Add the spring onions, reserving 1 tbsp, the sweet potato, stock and milk, bring quickly to the boil and simmer for 5 mins until the potato is tender. Add the salmon pieces and cook for 2 mins, then stir in half the coriander.
  • Divide the noodles between 4 bowls and spoon over the salmon and sauce. Sprinkle over the remaining coriander and spring onions.

Four 6-ounce skin-on salmon fillets
Kosher salt and freshly ground black pepper
12 ounces spaghetti
2 teaspoons sesame oil
1/4 cup miso
3 tablespoons fresh lime juice
6 tablespoons vegetable oil
2 tablespoons honey
1 clove garlic, finely grated
2 scallions, thinly sliced
1/2 hothouse cucumber, cut into thin half-moons (about 1 1/2 cups)
1 red chile or jalapeno, thinly sliced into half-moons
1/2 cup cilantro, roughly chopped

Steps:

  • Bring the salmon to room temperature 10 minutes before cooking. Bring a large pot of salted water to a boil. Cook the spaghetti according to the package directions. Drain and toss with 1 teaspoon sesame oil and set aside.
  • Meanwhile, whisk together the miso, lime juice, 3 tablespoons of the vegetable oil, honey, garlic and remaining 1 teaspoon sesame oil in a large bowl.
  • Heat the remaining 3 tablespoons vegetable oil in a large skillet. Pat dry the salmon, then sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Place in the skillet skin-side up; cook until the bottom is golden and crispy, 2 to 3 minutes. Flip the salmon and cook on all sides until opaque throughout, about 2 minutes per side.
  • When ready to serve, toss the spaghetti with the miso dressing, scallions, cucumber, chile and cilantro. Divide between plates and top with the crispy salmon.

50 g creamed coconut (one sachet)

1 tablespoon fish sauce
1 tablespoon dark soy sauce

Steps:

  • Blanch the cut vegetables. Remove and keep warm.
  • Make the sauce: combine the peanut butter, the reserved brine, and the 8 ingredients that follow, in a small pan over medium heat (enough heat to melt the peanut butter and creamed coconut). Reduce heat to lowest setting.
  • Prepare the dried egg noodles according to the instructions on the packet. (I use the leftover vegetable water to cook the egg noodles -- its already hot, and full of vitamins!).
  • Drain the noodles. Stir in the sauce and the basil or cilantro (aka coriander) (optional). Flake the salmon and fold it into the noodles.

4 (6 -8 ounce) salmon fillets (or other firm fish such as tuna, swordfish or halibut)
1/3 cup soy sauce
1/2 lime, juice of
1 teaspoon fresh ginger, finely minced
1 garlic clove, finely minced
4 tablespoons vegetable oil, divided
1 tablespoon rice wine vinegar
1 tablespoon honey
1/8 teaspoon black pepper
1/2 teaspoon hot sauce
1 lb linguine (can use any long pasta)
2 tablespoons vegetable oil
1/2 red bell pepper, thinly sliced
1/4 lb sugar snap pea
1/2 cup carrot, shredded
1 small onion, halved then thinly sliced
3 garlic cloves, finely chopped
1 tablespoon ginger, finely chopped

Steps:

  • Ginger-Soy Salmon: Place the salmon in a shallow baking dish or large pie plate. Whisk together all of the remaining ingredients but only 2 tablespoons of the vegetable oil. Pour the mixture over the salmon and turn the salmon to coat. Let marinate in the refrigerator for 20 - 30 minutes, turning once. Add the bell peppers and snap peas until they start to brown a little, about 2 minutes. Add the carrots and onion and cook 2 minutes.
