Steps:
- Drain and flake salmon.
- Add all other ingredients and mix lightly.
- Pour mixture into well greased 8"X4" loaf pan.
- Bake at 375 degrees for 40 minutes.

Steps:
- Cook the rice following pack instructions and 3 mins before it's done, add the soya beans. Drain and cool under cold running water.
- Meanwhile, put the salmon on a plate, then microwave on High for 3 mins or until cooked through. Allow to cool slightly, remove the skin with a fork, then flake.
- Gently fold the cucumber, spring onions, coriander and salmon into the rice and beans. In a separate bowl, mix the lime zest and juice, chilli and soy, then pour over the rice before serving.

- Pre-heat oven to 375°F.
- Combine all but cheese in a 11/2 quart casserole.
- Cover and bake until done.about 30 minutes.
- Uncover and sprinkle with cheese.
- Bake 5 minutes more or until cheese is bubbly.
- * I would leave the bones in They are very soft, just mash a little. Really very healthy.

- Mix all the ingredients together well.
- Spoon into a greased loaf pan.
- Bake at 190°C for 40 minutes, or until cooked.
- Chef's Suggestions: Obviously, if you have some leftover rice from another meal, you could use this instead of the plain brown rice; and you could certainly also add leftover - or needing to be used ASAP - chopped vegetables in this dish. You could also add an additional can of salmon. If adding more ingredients than those in the basic recipe, increase the quantities of mayonnaise, sour cream and add an extra egg. You would also need to cook the loaf for a little longer.

BROWN RICE VEGETABLE LOAF
I came up with this recipe in an effort to make some food stretch until payday. Using random vegetables I had in the fridge, plus some leftover rice, I came up with this casserole and was pleasantly surprised with the results. You could easily add chicken or leave as-is for a great vegetarian dinner!

- Preheat oven to 350 degrees F (175 degrees C).
- Spread 1/2 of the rice into the bottom of a large baking dish. Pour about 1/2 can tomato soup over rice and top with zucchini, yellow squash, and mushrooms. Sprinkle 1/2 cup mozzarella cheese and 1/2 cup Cheddar cheese over vegetables. Pour remaining 1/2 can soup over cheese.
- Spread remaining rice into baking dish. Add broccoli, onion, red bell pepper, green bell pepper, carrot, garlic, parsley, and oregano. Season with salt and pepper. Pour remaining 1 can soup over vegetables and top with remaining cheese.
- Bake in the preheated oven until tomato soup is bubbly and cheese is melted, 25 to 30 minutes. Let stand about 5 minutes before serving.

- Preheat oven to 400°. Place fillets on a foil-lined baking sheet; brush with 3 tablespoons salad dressing. Bake, uncovered, 10-12 minutes or until fish just begins to flake easily with a fork.
