A rich and smooth pie. It takes a half hour to make, but is well worth the effort! Top with whipped cream and toasted coconut, if desired.

1 cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
3 cups milk
4 egg yolks
3 tablespoons butter
1 ½ teaspoons vanilla extract
1 cup flaked coconut
1 (9 inch) pie shell, baked

Steps:

  • In a medium saucepan, combine sugar, flour and salt over a medium heat; gradually stir in milk. Cook and stir over medium heat until the mixture is thick and bubbly. Reduce heat to low and cook 2 minutes more. Remove the pan from heat.
  • Place a strainer over a clean mixing bowl; set aside.
  • Beat the egg yolks slightly. Gradually pour 1 cup of the hot custard mixture into yolks, whisking constantly. Return the egg mixture to the saucepan and bring the entire mixture to a gentle boil. Cook and stir 2 minutes before removing the pan from heat. Immediately pour custard through the strainer.
  • Stir butter, vanilla, and coconut into the hot mixture. Pour the hot filling into the baked pie crust. Cool and refrigerate until set, about 4 hours.

This sweet and silky Coconut Cream Pie Dip calls for only 6 ingredients and 10 minutes of prep time. It's no bake so it's a great little treat in the summer when you don't want to turn on the oven. Great for parties, too!

3 ounce box instant coconut cream Jell-O pudding
2 cups whole milk
8 ounces cream cheese (, softened)
1 cup powdered sugar
8 ounce container Cool Whip topping (, thawed)
1 cup sweetened coconut flakes
toasted coconut flakes (, for serving)
graham crackers, Nilla Wafers, or banana, (for serving)

Steps:

  • In a large bowl, combine the pudding powder and milk; whisk vigorously for 2 minutes until very thick. Set aside.
  • In another large bowl with an electric mixer, beat the cream cheese and powdered sugar until combined and fluffy; add in the Cool Whip and continue to mix until combined. Fold in the sweetened coconut flakes.
  • Combine the pudding mixture with the Cool Whip mixture.
  • Chill in the refrigerator for 1-2 hours to thicken and set completely.
  • Sprinkle some toasted coconut flakes over the top and serve with graham crackers, Nilla Wafers, or banana!

1 (15 ounce) can cream of coconut
1/4 cup milk
1 (5 1/8 ounce) box instant vanilla pudding
1 (14 ounce) can sweetened condensed milk
2 cups sweetened flaked coconut, toasted and divided
1 (8 ounce) container Cool Whip, thawed

Steps:

  • Add cream of coconut and milk to a stand mixer (or large bowl if using a hand held mixer) and mix on medium speed until smooth. Add pudding mix and sweetened condensed milk and mix thoroughly combined. Fold in a heaping cup of toasted coconut. and cool whip until just combined.
  • Add mixture to a serving bowl and garnish with remaining toasted coconut.
  • Mixture can be put into a graham cracker pie crust and garnished with toasted coconut.

2/3 cup sugar
1/4 teaspoon salt
3 cups whole milk, do not use low fat
1/3 cup cornstarch
3 eggs, beaten
1 tablespoon butter
2 teaspoons coconut extract
1 cup coconut flakes
1 (9 inch) pie shells, baked and cooled
1/3 cup sugar
1/2 pint whipping cream
2 teaspoons coconut extract
1/4 cup coconut flakes, baked

Steps:

  • In a medium sauce pan, stir together the sugar, cornstarch, salt and milk.
  • Beat the eggs then blend with mixture in the sauce pan.
  • Cook over medium heat, mixing constantly with a hand electric mixer, until mixture boils; boil mixing for one minute.
  • Remove from heat; stir in butter and coconut extract, mix in coconut with electric mixer.
  • Return to heat, cooking until boiling, mixing with electric mixer.
  • Remove from heat and pour into pie crust, spread evenly.
  • Press plastic wrap directly onto surface; refrigerate 6 to 8 hours.
  • Put 1/4 cup coconut into a pie pan and bake under broiler until just browned, stirring frequently.
  • Mix whipping cream in a chilled bowl with sugar and coconut extract until real stiff.
  • Remove plastic wrap from pie and spread whipping cream mixture over pie, sprinkle with baked coconut.

1 (9 inch) baked pie crusts (although the non baked graham cracker crust can be used too!)
1 (5 ounce) package vanilla instant pudding mix or 1 (5 ounce) package instant coconut cream pudding mix
1 1/2 cups cold milk
1 1/2 cups flaked coconut
1 (8 ounce) container Cool Whip, thawed

Steps:

  • In a large bowl mix pudding and milk until pudding becomes thick (usually about 2 minutes).
  • Fold in 4 oz (1/2) of the Cool-Whip.
  • Fold in 1 cup of coconut.
  • Spread mix into bottom of pie crust.
  • Spread remaining Cool-Whip on top.
  • Sprinkle with left-over coconut.
  • Serve cooled (about one hour in the fridge).
  • Keep refrigerated.
  • Enjoy!

Rich and "dreamy" coconut cream pie, better than any other I have ever tried. Want to make it even richer, try chocolate pudding. Killer!

1 pie shell (10 inch is perfect or 2 smaller 8 inch will do)
2 1/4 cups coconut (toast 1 1/4 cup)
2 (6 ounce) packages instant vanilla pudding
2 (1 1/3 ounce) envelopes Dream Whip
2 pints half-and-half
2 teaspoons vanilla
8 ounces Cool Whip

Steps:

  • Prepare and bake pie shell.
  • Toast 1 1/4 cup coconut in the oven until lightly browned.
  • Whip together pudding, dream whip and half and half together in a large mixing bowl, mixture will be quite thick.
  • Stir in vanilla and 1 cup coconut and 1/2 cup toasted coconut.
  • Pour into prepared and cooled pie shell.
  • Stir 1/2 cup toasted coconut into cool whip and frost pie.
  • Sprinkle with remaining 1/4 cup toasted coconut.
  • Refrigerate until serving.
