Olivier Salad - Russian Salad image

Olivier salad, also known as Russian Salad, was originally invented at the Hermitage restaurant in Moscow in the 1860's. Get the recipe on Honest Cooking.

3 golden potatoes
3 medium carrots
1 C frozen peas
4 hardboiled eggs
6 small kosher dill pickles
1 - 1½ C olive oil mayonnaise
¾ C diced smoked ham (optional)
finely chopped dill, to garnish

Steps:

  • The first step is to cook your potatoes and carrots. I used a steamer, but you can always go the traditional route and boil them. In either case, peel the carrots but not the potatoes. If you are steaming (or nuking in the microwave to streamline the process), make sure to prick the potatoes with a fork. I'm not sure that they would actually explode in a steamer, but given that you want to end up with neatly diced potato cubes, better safe than sorry. And did I mention that stabbing potatoes with a fork does wonders for relieving stress?
  • Steam the potatoes for 30 minutes to start with, and then add the peeled carrots. Continue steaming for 10-15 more minutes, or until the potatoes and carrots are firm but tender when poked.
  • Meanwhile, cook your frozen peas according to package directions. I use the kind that can be steamed in the package in the microwave. When they are done, set them aside to cool.
  • Note: there are traditionalists who will argue that nothing but canned peas will do in this salad, but I beg to differ. The faded, dull color and taste of canned peas just cannot compare to fresh or frozen steamed peas.
  • When the potatoes and carrots are done, allow them to cool to the point that you can handle them easily.
  • Peel the potatoes. Using your fingers or the back of a knife, gently scrape the thin layer of skin off of the potatoes. Dice them into ½-inch cube-ish shapes and put them into a medium serving bowl.
  • Next, dice your carrots. I've heard it said that a Soviet housewife could be judged on her housekeeping skills by how finely she could dice vegetables for her soups and salads. I, however, won't judge you. In fact, if you chop your potatoes and carrots a little larger, I would probably even thank you. I happen to like chunky salads.
  • Toss the carrots and a cup of steamed peas into the bowl with the potatoes.
  • Peel and dice your hardboiled eggs. Again, I know some like to have their salads with finely diced ingredients, but I don't. So dice them however you like.
  • Chop pickles finely. I used small snacking dill pickles, so I needed to use six of them. If you have larger pickles, try using three and see if that is enough for you.
  • Add the ham if using and mix everything together gently before you add the mayonnaise.
  • Stir in one cup of mayo to start with, and add more if you think that the salad needs more binding together.
  • Cover the salad and chill for at least one hour or overnight to allow the flavors to come together. And of course, garnish with dill. This is a Russian salad, after all.

RUSSIAN STYLE SALAD(SALAT OLIVIER)

This is a popular cold dish in Russia, but was actually crated by a Frenchman, Monsieur Olivier, at his Moscow restaurant, L'Ermitage, in the late 1800's. He then went on to cook for Russia's last czar, Nicholas ll. The original recipe called for 6-8 oz. chicken,diced, but I have left it out, to make this vegetarian. Feel free to add the chicken back in, if you like!

2 medium waxy potatoes
3 carrots, trimmed
1/4 cup sweet onion, chopped
1 cucumber, seeded, diced
1 large deli style pickle, diced
1/2 cup frozen peas, thawed (or canned, drained peas)
2 hard-boiled eggs, peeled, diced
4 sprigs fresh dill, chopped (or 1 tsp. dried)
6 sprigs parsley, chopped
1/2 cup mayonnaise
2 tablespoons white wine vinegar
salt
pepper

Steps:

  • Place the potatoes and carrots into a medium saucepan, cover with cold water, and gently boil over medium heat until tender, about 30 minutes for the potato and 20 minutes for the carrots.
  • Move vegetables as done to a plate and let cool completely.
  • Discard cooking water.
  • Peel the potato and carrots and cut each into 1/4" dice.
  • Transfer vegetables to a large bowl.
  • Add onions, cucumbers, pickles, peas, eggs, dill, paarsley, mayonnaise, and vinegar to the bowl and stir until well combined.
  • Season to taste with salt and pepper.
  • Cover and refrigerate until well chilled.
  • Adjust seasonings.
  • Transfer to a serving dish. Enjoy!

4 medium potatoes, cooked and 1/2-inch diced
2 1/2 hard-boiled eggs, chopped
1 1/2 lbs ham, 1/2-inch dice
1 medium cucumber, peeled, quartered and cut into 1/2-inch pieces
2 -3 large apples, sweet, cored and cut into 1/4-inch pieces, coated with
2 -3 tablespoons lemon juice
3 tablespoons green olives, chopped, pitted
1/4 cup celery, finely diced
3/4 cup peas
5 -6 cups water
1 large onion, studded with
2 cloves
2 stalks celery & leaves, coarsely chopped
1 bay leaf
1 carrot, coarsely chopped
1 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon thyme
3 whole chicken breasts (approx. 3 lbs)
1 1/2 cups mayonnaise
2/3-1 cup sour cream
3 tablespoons Dijon mustard
1/2 cup dill pickle, small cubed
1 -1 1/2 tablespoon onion, grated
2 tablespoons capers
salt
pepper
3 tablespoons dill, minced
3 small-medium tomatoes, cut into wedges
2 1/2 hard-boiled eggs, sliced

Steps:

  • Boil the potatoes, let cool, and cut into 1/2-inch dice.
  • Boil the eggs, let cool, and coarsely chop.
  • To prepare the chicken, combine ingredients water through thyme, and bring to a boil. Lower heat and simmer, covered, for 10-15 minutes.
  • Add chicken breasts. Bring to a boil and lower heat. Simmer, covered, for 20-30 minutes. Cool breasts in the broth.
  • While chicken is cooking, combine potatoes, eggs, and remaining salad ingredients in a large bowl.
  • When chicken has cooled, drain the chicken (discard or save broth, as desired). Remove skin, bones and any gristle. Cut chicken into neat 1/2 to 3/4 inch pieces.
  • In a medium bowl, combine all dressing ingredients. Salt and pepper to taste.
  • Combine chicken, salad ingredients, and dressing. (All ingredients should be at room temperature).
  • Place chicken salad in a large serving bowl. Decorate with tomato wedges and egg slices. Sprinkle with dill.
  • Serve cool, but not chilled.

The finer the chopping, the more "gourmet" it is to Russians. The technique here is easy; it just takes a lot of chopping, so give yourself enough time.

6 potatoes, parboiled, peeled, and chopped
6 eggs, hardboiled, peeled and chopped
6 pickles, chopped
1/2-3/4 lb of cooked meat, chopped (e.g., coldcuts, leftover roast beef or chicken)
1 (14 ounce) can peas, well drained
6 -8 scallions, chopped
salt, pepper to taste
mayonnaise
3 large carrots, parboiled, peeled, and chopped
1/2-1 cup sauerkraut, drained and chopped
1 cup cooked beans, well drained

Steps:

  • Cook potatoes and eggs.
  • Chop everything and put in large container.
  • Mix well, being careful not to mush it all up.
  • Season with salt and pepper.
  • Add mayonnaise to taste (or maybe a little less, since it seems to get moister after it sits for a bit).
  • Serve, or refrigerate for later use.

3 waxy potatoes , cut into small chunks
mugful frozen peas
6 small cornichons or gherkins , sliced
2 rounded tbsp light mayonnaise
a little chopped parsley

Steps:

  • Cook the carrots and potatoes in a pan of boiling salted water for 4 mins, then throw in the peas and cook for 4 mins more until all the vegetables are tender. Drain, cool for a few mins, then tip into a bowl with the cornichons, mayonnaise and parsley, if using. Mix well and season to taste. Delicious with leftover roast beef or lamb, wedges of pork pie or cold sliced ham or chicken.

1 (15 ounce) can sweet peas
1 bunch green onion
3 hot dogs (also works with cooked chicken bits or bologna)
6 polish dill pickles (or regular pickles if you want less spiciness)
1 bunch fresh cilantro
5 eggs
1 bunch fresh dill
1 tablespoon dry oregano
1 tablespoon crushed black pepper
2 teaspoons crushed white pepper
8 ounces regular sour cream
5 tablespoons regular mayonnaise
1 tablespoon horseradish sauce (Boar's Head Pub Style sold at Kroger)
2 teaspoons sriracha hot chili sauce (optional)

Steps:

  • You will need a large mixing bowl.
  • The following items add to taste, the amounts listed above are approximate: hot dogs (depends how much meat you want); pickles (Depends how salty you want the salad. This is the only source of salt in the salad.); oregano; black pepper; white pepper; sour cream (add more if salad too dry); mayonnaise (add more if salad too dry); horseradish; hot sauce (depends how spicy you want).
  • Boil potatoes, carrots, hot dogs until cooked.
  • Hard boil the eggs.
  • While the above are boiling, add to bowl sweet peas.
  • Finely chop and add to bowl: cilantro, dill.
  • Cut to small pieces (to size of a pea) and add to bowl pickles.
  • Once all the boiled items are cooked: peel, chop (to size of a pea) and add them all to the bowl: potatoes, carrots, hot dogs, eggs.
  • Add the rest of the ingredients to the bowl: oregano, black pepper, white pepper, sour cream, mayonnaise, horseradish, hot sauce.
  • Mix well and serve or place in fridge for later use.
