CARAMELIZED ONION AND CORNBREAD STUFFING

Steps:
- Preheat the oven to 375 degrees F.
- Melt the butter in a medium skillet over medium heat. Add the onions and cook, stirring, for about 10 minutes, or until soft and caramelized. Add sage and scrape into a large mixing bowl. Add the cornbread pieces, season well with salt and pepper, and give it a good toss until it's well combined. In a separate bowl, whisk together the egg, cream, and stock, and pour that over the cornbread. Stir the stuffing together and stuff the cavity of the turkey. You could also spoon it into a buttered baking dish and put it in the oven along with the turkey. Bake until hot and crusty on top, about 30 minutes.
SAGE AND ONION CORNBREAD
This is a great way to serve cornbread as a side dish. I use whole sage leaves from my herb garden and it looks so pretty when you turn the cornbread out onto the plate.( I use buttermilk self rising cornmeal.)

- Preheat oven to 400, place cast iron skillet in hot oven for 10 minutes.
- Add 1/4 cup butter to skillet and heat 5 more minutes.
- Combine 1/4 cup butter, cornmeal mix, and next four ingredients stirring well with wire whisk.
- Let stand two minutes.
- Arrange onion and sage in the bottom of hot skillet; Pour batter slowly over onions and sage.
- Bake at 350 for 40-45 minutes or until toothpick comes out clean.
- Invert skillet over a serving platter to remove cornbread. Cut into wedges and serve.

This recipes comes from the Food Network courtesy of Tyler Florence. I made this for Thanksgiving this year. The amount of chicken stock was listed as 1/4 cup, this was cooked in a small pan in the oven and I found that I needed additional for the stuffing to be as moist as we liked.

Steps:
- Melt the butter over medium heat, add onions and cook until soft and caramelized, stirring frequently, approximately 10 to 15 minutes; stir in the fresh sage.
- Pour mixture into a large mixing bowl, add in the cornbread and season well with salt and pepper; toss gently until well combined.
- In a small bowl, whisk together the egg, cream and 1/4 cup of chicken stock, pour over the cornbread mixture, stir gently.
- If cooking in the turkey, stuff and proceed as per your recipe for roasted turkey.
- If cooking outside the bird, spoon the mixture into a 2 quart casserole dish, pour the additional stock over all and place in oven the last 30 minutes that turkey is baking.
- Bake until hot and crusty on top.

Steps:
- Sift the first four ingredients together and then add sage.
- In another bowl beat buttermilk, honey, eggs, and the butter together.
- Add to dry ingredients and stir only enough to moisten.
- Pour batter into 9 x 9 greased pan.
- Bake at 425 degrees for 25 to 30 minutes or until top is golden.

- Add the butter to a large sauté pan over medium heat. When the butter is melted and bubbling add the 12 sage leaves and cook until crispy. Remove and set aside. To the same butter add the cornbread cubes. Toss to coat in the butter, cook on each side, turning until they are evenly browned . Remove and set aside. Remove the browned butter and wipe out the pan.

Add the crumbled cornbread and salt (you can add more later) depending how salty your stock is.
- Turn off the heat and allow to cool slightly. Transfer in small batches to a blender and blend until smooth. If the soup is too thick, add a little more stock until it is the consistency you want. Taste to see if it needs more salt. Top with croutons and crispy sage.
