RUTH'S SECRET SWEET ICED TEA



Ruth's Secret Sweet Iced Tea image

Sweet and refreshing tea; back in the 1950's-60's my best friend's mom (Ruth) used to make this every day and served it poolside when we were kids. The "secret" is adding the sugar to taste to the strong brew, then adding ice cubes.

9 -10 tea bags
ice cube
water (1/2 kettle full)
sugar (to taste)
1 lemon

Steps:

  • Place the tea bags in half of a large kettle of water and bring to a boil. Remove from heat and let steep for 15 minutes.
  • Remove tea bags and add sugar until the bitterness is gone. Add 3 trays of ice cubes (36 cubes) and stir.
  • Add juice of one lemon, or to taste. Slice the squeezed lemon and put in pitcher or glasses. Serve over ice.

It is said the "secret" ingredient removes any bitterness and creates a smooth, clear tea. I have seen this twice in the last month. One from the deep south and the other from the (now closed) Lone Star Steakhouse in Houston, TX.

12 tea bags
1 quart water, boiling
3 quarts water, cool
1 cup sugar (more or less to taste, in TX they use 1.5 cups)
1/4 teaspoon baking soda (the secret ingredient)

Steps:

  • Sprinkle baking soda into a 1 gallon pitcher.
  • Add tea bags.
  • Pour boiling water over tea bags.
  • Cover and steep 15 minutes.
  • Remove tea bags (I hope you compost them).
  • Add cool water.
  • Refrigerate until cold and you are ready to drink it.
  • Serve over ice.

This is a refreshing fruit tea. I brew the tea in in my 3 quart Mr Coffee Iced Tea Pot. Other fruits or juices can be used too. It will probably be good as a hot tea as well.

2 quarts brewed tea
1 (15 ounce) can cling peaches in juice
1 (15 ounce) can water
1/4 cup sugar (optional)

Steps:

  • Make the tea in a 3 or 4 quart pitcher (or iced tea pot). Set aside.
  • Pour peaches and water into a blender.
  • Blend on high speed until well blended.
  • Add sugar and blend for a few more seconds.
  • Add more water until there is 1 quart.
  • Blend for a few seconds-- pulse.
  • Pour this mixture into the pitcher of tea and stir until well mixed.
  • Chill before serving.
  • Serve over ice or warm up for a hot drink.

This is how my Granny made sweet tea and it is some kind of sweet. Know that and beware. Pa-Paw used to down 2-3 glasses after working in the garden all day. Back off the sugar if you can't handle it. This one is for true southerners only ;)

6 regular tea bags
1/8 teaspoon baking soda
2 cups boiling water
1 1/2-2 cups sugar
6 cups cold water

Steps:

  • In a large glass measuring cup, place the tea bags and add the baking soda.
  • Pour the boiling water over the tea bags.
  • Cover and steep for 15 minutes.
  • Take out the tea bags and do not squeeze them.
  • Pour the tea mixture into a 2-quart pitcher; add the sugar.
  • Stir until the sugar is dissolved.
  • Add in the cold water.
  • Let cool; chill in the refrigerator and serve over ice.

The best way to get great iced tea - something the South is known for. Not heating the water prevents bitterness.

2 quarts water
2 family sized tea bags (preferably a cold brew variety)
1 cup sugar or 1 cup Splenda sugar substitute
ice

Steps:

  • Fill a 2 qt pitcher (that's pitcha in the South) about halfway up with ice.
  • Clip the clothespin onto the side of the pitcher and"hang" the tea bags through it (keeps the paper from getting in the tea and makes the bags easier to retrieve- you don't want to be seen with your hand in the pitcher here in the South).
  • Pour the sugar or Splenda on top of the ice cubes and now fill the pitcher up with water.
  • Let sit about an hour, pull out tea bags and serve.
