1 can (27 ounces) sauerkraut, rinsed and drained
1 medium tart apple, peeled and chopped
1 small onion, chopped
3/4 cup chopped dill pickle
3 tablespoons lemon juice
1 tablespoon sugar
1 tablespoon dried basil
1 tablespoon dill weed
1 tablespoon dried parsley flakes
1 teaspoon salt
1/4 cup vegetable oil

Steps:

  • In a bowl, combine the first 10 ingredients. Drizzle with oil; toss to coat. Cover and refrigerate for at least 2 hours before serving.

The sophistication and finesse of the western salad preparations have not yet penetrated into the Russian home, and the salads remain simple and down to earth. Because of the enormous premium placed on fresh vegetables, many people prefer to eat them without any dressing at all, or just lightly sprinkled with oil and vinegar. Or lemon juice. This salad is made with olive oil, which used to be called "oil of Provence", thus named Provencal.

2 (1 lb) packages sauerkraut (do not use canned)
1 large sweet red apple, cored and diced
1/2 cup red seedless grapes, each one cut lengthwise in half
1/3 cup fresh cranberries
4 plums, canned, drained well, cut in half, and pitted
1 large carrot, peeled and julienned
6 scallions, trimmed and finely chopped (green 0nions)
3 tablespoons chopped fresh dill
1/2 cup olive oil
1/2 teaspoon sugar (to taste)

Steps:

  • Drain the sauerkraut thoroughly.
  • Rinse under cold running water and squeeze the sauerkraut to remove any excess liquid.
  • In a large salad bowl, combine the sauerkraut with the apple, grapes, cranberries, plums, carrot, scallions, and dill and toss well.
  • Sprinkle with the sugar and toss with the oil.
  • Taste and add more sugar, if needed.
  • Cover and refrigerate overnight.

HOMEMADE SAUERKRAUT RECIPE (KVASHENAYA KAPUSTA)



Homemade Sauerkraut Recipe (Kvashenaya Kapusta) image

2 medium/large cabbages (2 1/2 kg or about 5 1/2 lbs)
2-3 medium carrots (grated)
2 Tbsp fine sea salt
1 Tbsp sugar
1/2 small purple Onion (finely diced)
2 Tbsp Sunflower Oil (preferred for more flavor, or olive oil)
1/2 small purple Onion (finely diced)
1/2 Apple (any kind; I used gala, diced)
1/2 tsp sugar
2 Tbsp white grapes or dried cranberries
1-2 Tbsp extra light olive oil (not extra virgin)

Steps:

  • Remove the outermost leaves of the cabbage, cut it into quarters and shred cabbage finely (use a mandolin to do this faster and discard the core.
  • In a large silver bowl, place cabbage, carrots, 2 Tbsp sea salt and 1 Tbsp sugar and scrunch and knead it together really well for the juice to be released from the cabbage (4-5 min). You don't want it to be super juicy, just enough to cover the lettuce when you really pack it down in a jar.
  • Scrunch it until juices start to come out.
  • Fill a glass jar with the cabbage mixture and pack it in very tightly so that the juice from the cabbage covers the cabbage completely. You want a jar big enough to be filled only about 2/3 full so it has room to expand.
  • Make a press over the top of the cabbage by pushing down with a plate (or the lid from a large sour cream container). Top with a small jar of water, a super clean rock or whatever else would make a good weight. Place the lid on the jar but do not tighten. Its a good idea to keep the bottle in the sink or over a dish since there is risk of it overflowing (this is also why we only fill it 2/3 full; it grows!). Let stand at room temp for 4 days or until sour. It will stop fermenting/rising when it's done.
  • While it sits at room temperature, once each day: poke a few holes through the cabbage with the back of a wooden mixing spoon to release the gas that this process produces and pack the cabbage down tightly.
  • After 4 days, refrigerate until ready to serve. Can be stored for a few weeks if kept very cold.

In the Chesapeake, seafood often finds its way onto the Thanksgiving menu. But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.

6 tablespoons butter
4 slices bacon, cut into 1/2-inch pieces
1 small onion, thinly sliced
3 tart apples, such as Stayman, Pippin, Granny Smith or Jonagold, peeled, cored, and thinly sliced
2 pounds sauerkraut, drained and rinsed
1 bottle (12 ounces) beer (you may substitute apple cider)
Black pepper, to taste
1/2 teaspoon caraway seeds

Steps:

  • Melt butter in a large heavy pot over medium-high heat. Add bacon and cook, stirring often, until fat has started to render, about 5 minutes.
  • Toss onion and apples in the fat and cook, stirring occasionally, until onions begin to soften, about 3 minutes. Stir in sauerkraut.
  • Add beer and season with pepper and caraway seeds. Bring mixture to a boil, then cover the pot. Reduce heat so mixture is just simmering and cook for 45 minutes. Or transfer the covered pot to a 350-degree oven and bake for 1 hour. Stir and serve hot.
