RUSSIAN MUSHROOM SALAD



Russian Mushroom Salad image

A traditional layered Russian salad of mushrooms, hard-boiled eggs, pickled cucumbers, onion, and mayonnaise. Decorate with chopped parsley or dill. If you are not making the salad in a mold, simply reverse the order of layers and layer directly onto a serving plate. Cover with plastic wrap and refrigerate before serving.

2 potatoes
1 tablespoon butter
4 cups chopped mushrooms
4 hard-boiled eggs, peeled and diced
2 red onions, finely chopped
1 cup mayonnaise, or to taste
1 cup finely chopped pickles
1 cup finely chopped cornichons

Steps:

  • Place potatoes, unpeeled, into a pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, about 20 minutes. Drain and cool until easily handled; peel and dice.
  • Melt butter in a large skillet over medium heat. Add mushrooms; cook and stir until browned, 8 to 10 minutes. Remove from heat and let cool.
  • Cover the bottom of a mold with 2 diced eggs. Layer 1 onion, 1/4 cup mayonnaise, 1/2 of the mushrooms, and all the potatoes on top. Spread 1/4 cup mayonnaise, all the cornichons, remaining eggs, and another 3 1/2 tablespoons mayonnaise on top. Finish layers with remaining onion, mushrooms, and mayonnaise.
  • Refrigerate until firm, 1 to 2 hours. Invert onto a serving platter and lift off mold.

1 pound white button mushrooms, thinly sliced
Garlic and Parsley Vinaigrette, recipe follows
Salt and freshly ground black pepper
2 tablespoons finely chopped shallot (about 1 small)
1 large clove garlic, finely chopped
2 tablespoons freshly chopped parsley leaves
1 1/2 tablespoons country Dijon mustard
4 tablespoons red wine vinegar
1/2 teaspoon coarse salt
1/4 teaspoon freshly cracked black pepper
5 tablespoons olive oil

Steps:

  • Place the mushrooms in a medium glass bowl. Add the vinaigrette and toss gently. Allow to sit at least 10 minutes, until the mushrooms are wilted and impregnated with sauce. Check for seasoning and add additional salt and pepper, if necessary.;
  • Place shallot, garlic, parsley, mustard, vinegar, salt and pepper in the bottom of a small mixing bowl. Stir to combine, then whisk in olive oil in a slow, steady stream. Alternately, place all ingredients in a clean 8-ounce jar. Cover and shake vigorously.

4 ounces button mushrooms, large
1/2 cup mayonnaise
1 tablespoon lemon juice, freshly squeezed
12 ounces shrimp, peeled, cooked
1 dill pickle, large, finely chopped
4 ounces fava beans
4 ounces new potatoes, small, scrubbed
4 ounces baby carrots, trimmed, peeled
4 ounces baby corn
4 ounces baby turnips, trimmed
1 tablespoon olive oil
4 eggs, hard-cooked, shelled
1 pinch salt
1 pinch pepper
1 pinch paprika
2 anchovies (optional)

Steps:

  • Slice mushrooms thinly, then cut into matchsticks.
  • Combine mayo & lemon juice.
  • Fold half the mayo mixture into the mushrooms & shrimp, then add dill pickle & season to taste with salt & pepper.
  • Bring large saucepan of salted water to boil, then add fava beans & cook 3 minutes.
  • Drain & cool under running water, then pinch beans between thumb & forefinger to release them from their tough skins.
  • Boil potatoes 20 minutes & the remaining vegetables for 6 minutes.
  • Drain & cool under running water.
  • Toss vegetables with oil & divide among 4 shallow bowls.
  • Spoon on the dressed shrimp & place a hard-cooked egg in the center.
  • OPTIONAL ~ If using anchovies, cut into fine strips & with 2 strips make an X on top of each egg, then sprinkle with paprika.

Mushrooms baked with sour cream and cheese is one of our family favorites. This delicious vegetarian dish can be served alongside a salad as a complete meal.

4 tablespoons vegetable oil, divided
7 cups quartered button mushrooms
1 cup sour cream
1 onion, chopped
salt and ground black pepper to taste
1 ¼ cups shredded Gouda cheese

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • Heat 2 tablespoons oil in a skillet over medium heat. Increase heat to high and add mushrooms. Cook and stir until golden brown, 6 to 8 minutes. Do not cook so long so that they begin to release a lot of liquid. Add sour cream, mix well, and transfer mixture to a casserole dish.
  • Heat remaining 2 tablespoons oil in a second skillet over medium heat and cook onion until soft and translucent, 4 to 6 minutes. Distribute onions over mushrooms and season with salt and pepper. Sprinkle with Gouda cheese.
  • Bake in the preheated oven until the cheese has melted and is golden brown, 15 to 20 minutes.

2 tablespoons butter or 2 tablespoons extra virgin olive oil
1 medium onion, diced
2 garlic cloves, minced
1 lb button mushroom
2 tablespoons fresh lemon juice
3 tablespoons sour cream
salt and pepper
2 tablespoons fresh dill, chopped (to garnish)

Steps:

  • Trim mushrooms--remove tough ends. Cut into a 1/4-inch dice. If you dice them too small, they'll turn pasty.
  • Put butter (or oil) in skillet and turn heat to medium. A minute later, add onion and garlic. Cook till softened, stirring occasionally, about 5 minutes. Add mushrooms. Raise heat to med-high, and cook until lightly browned, about 10 minutes.
  • Remove from heat and stir in lemon juice and sour cream. Season with salt and pepper. Garnish with dill.
