This is the easiest pressure cooker rump roast recipe you'll ever make! Whether you make this rump roast in an Instant Pot, pressure cooker or slow cooker, this dish is something the entire family will love!

- Turn Instant Pot on Sauté mode. Add sliced onions, shallot and olive oil and cook for ~5 minutes.
- Hit cancel on Instant Pot. Add CK Mondavi Cab to deglaze.
- Add rump roast, sprinkle with montreal seasoning (salt, pepper, garlic).
- Add broth.
- Hit manual on Instant Pot and increase time to 40 minutes (make sure it is set to locked). Walk away and do a happy dance or sip on your cheese and nibble on apps.
- After 40 minutes is up. Do quick pressure release (turn it from sealed to venting), add in your baby carrots and potatoes (do this in a quickish manner).
- Replace the top, turn nob to locked, set to manual 5 minutes. Do NPR (natural pressure release) for 15 minutes.

- Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function.
- Combine salt, marjoram, rosemary, garlic powder, onion powder, black pepper, and paprika in a small bowl. Rub mixture all over roast to coat all sides.
- Drizzle oil into the preheated pot. Wait 30 seconds, then place roast into the pot; do not move the meat, allowing it to sear for 3 or 4 minutes. Turn the roast and sear again, 3 to 4 minutes. Repeat until all sides are browned, about 15 minutes total.
- Add potatoes, carrots, and onion to the pot. Pour in broth and Worcestershire sauce. Close and lock the lid; set vent to sealing. Select high pressure according to manufacturer's instructions; set timer for 60 minutes for a 3-pound roast or 80 minutes for a 5-pound roast. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions for 10 minutes. Release remaining pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid.
- Transfer roast, potatoes, carrots, and onions to a platter for serving.

- In a large skillet, brown roast on all sides in oil over medium-high heat; drain. Place carrots and potatoes in a 5-qt. slow cooker. Top with meat and onions. CROCK POT RUMP ROAST
While searching for a crock pot recipe, I ended up throwing together what I had on hand. I found that the carrots made the gravy on the sweet side. So if that is not what you like then leave them out. I think I would add fresh mushrooms next time. Also my roast was mostly frozen after sitting in the refrigerator overnight, and turned out perfectly tender!

- Whisk 1/4 cup wine, 3 tablespoons olive oil, kosher salt, Italian seasoning, vinegar, 1/2 teaspoon black pepper, and garlic salt together in a bowl and pour into a resealable plastic bag. Add rump roast, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 8 hours to overnight.
- Remove roast from the refrigerator. Melt butter in a large skillet over medium-high heat. Sear roast in hot skillet, turning to brown all sides, about 10 minutes.
- Place roast in a slow cooker with vegetable broth, remaining 1/2 cup red wine, onion, parsley, carrots, celery, remaining 4 tablespoons olive oil, garlic, salt, and pepper. Cover and cook on Low heat until roast is fall-apart tender, 9 to 10 hours. An instant-read thermometer inserted into the center should read at least 145 degrees F (63 degrees C).

- Place your trimmed roast in your Instant Pot. Pour in the water. Sprinkle the packet of onion soup mix over the roast. Sprinkle your packet of au jus gravy mix on top of the roast.
- Cover the pot and secure the lid. Make sure valve is set to sealing. Set the manual/pressure cook button to 90 minutes on high pressure. The pot will take about 10 minutes to build pressure and then will start counting down from 90.
- Once the time is up let the pot sit there for another 15 minutes (display will read L0:15) and then move the valve to venting. Remove the lid. Potatoes and carrots option: Once the time is up move the valve to venting. Remove the lid. Add in the potatoes and carrots. Replace the lid and set the valve to sealing. Set the manual/pressure cook button to 4 minutes (for less soft vegetables) or 5 minutes (or softer vegetables). When the time is up let the pot sit there for 10-15 minutes (L0:10) and then move the valve to venting.
- Place the meat and vegetables on a platter and set aside. Turn the Instant Pot to the saute setting. Make a cornstarch slurry in a small bowl. Stir together 2 Tbsp of cornstarch and 2 Tbsp of cold water until smooth. Stir the slurry into the pot. Whisk. It should thicken the gravy very quickly.

- Place roast in large mixing bowl and generously sprinkle all sides with kosher salt and pepper. Next, evenly cover all sides with brown sugar. Allow to rest while preparing Instant Pot.
- Place olive oil in Instant Pot and turn to sautée (high). Once the Instant Pot is fully heated, ensure that olive oil is evenly distribute throughout bottom surface of pot and sear each side of the roast for 4 to 5 minutes, using a set of large kitchen tongs to handle the meat.
- After all sides of roast are seared, turn Instant Pot to off and add broth. Be sure that the level of broth reaches at least one half the height of the roast. Close Instant Pot and place vent valve in "sealing" position. Use manual setting (high) and set for 70 minutes. (See recipe note regarding cooking time). At conclusion of cooking cycle, allow for a natural release (NR) of pressure. Carefully remove roast and juices, place both in large bowl and tent with foil while you make the gravy. Turn Instant Pot to off position.
- Turn Instant Pot to sauté function., medium setting. Add butter to pot and when that is melted, stir in and sauté the mushrooms until soft. Use a hand held fine mesh strainer and sprinkle flour onto mushrooms and butter, while stirring constantly and until a paste forms. Increase sauté heat to high (you may need to turn it off first) and gradually add 1 to 2 cups of reserved juices. Adjust flour to juice ration for desired consistency. Add salt and pepper to taste.
