Shake rum and orange liqueur with lime juice and pureed watermelon for a seriously refreshing cocktail.

1 1/3 cups diced seedless watermelon
1/2 cup rum, white or dark
2 tablespoons orange-flavored liqueur, such as triple sec
Juice of 1 lime (about 2 tablespoons)
2 thin lime rounds, for garnish (optional)

Steps:

  • Puree the watermelon in a blender until very smooth. Pour into a cocktail shaker filled with ice and add the rum, liqueur and lime juice. Shake vigorously and strain into 2 ice-filled cocktail glasses. Garnish each with a lime round if using.

3/4 cup sugar
3/4 cup water
1 cup fresh lime juice
3 cups white rum
4 cups seedless watermelon, chunks (one-quarter of a watermelon)
8 cups crushed ice
watermelon spears and mint sprig, for garnish

Steps:

  • In a saucepan, combine the sugar and water. Bring to a simmer over moderate heat, stirring until the sugar dissolves. Remove from the heat and let cool.
  • In a blender, combine half of the sugar syrup with half of the lime juice, rum and watermelon chunks and blend until combined. Add half of the ice and blend until smooth, then pour into a large pitcher. Repeat with the remaining ingredients. Serve in chilled glasses, garnished with watermelon spears and topped with mint sprigs.
  • The watermelon mixture can be blended earlier in the day and refrigerated. Blend with ice just before serving.

3/4 cup rum

Steps:

  • Cut about a 3 inch plug from the melon. Trim the ripe part of the melon off of the plug which you cut out.
  • Pour rum into plug hole of melon; insert plug back in melon.
  • Refrigerate for about 8 hours or overnight for rum to spread through melon.
  • Cut into wedges and serve.

8 cups 3/4-inch seedless watermelon cubes (from 1/2 small watermelon, rind removed), plus more for garnish
Scant 2 1/4 teaspoons unflavored gelatin (one 1/4-ounce envelope)
1/4 cup cold water
1/4 teaspoon coarse salt
1 1/2 teaspoons fresh lemon juice
Rose Hip-Hibiscus "Ice Cubes"(optional)
Mint or basil sprigs, for garnish

Steps:

  • Puree watermelon cubes in a blender or food processor until smooth. Press through a fine sieve into a large bowl and discard solids. Measure 3 cups strained juice.
  • Prepare an ice-water bath. Sprinkle gelatin over cold water, and let stand until softened, about 5 minutes. Bring 1/2 cup watermelon juice and salt to a simmer in a small saucepan over medium-high heat. Add softened gelatin, stirring to dissolve. Strain into a bowl set in ice water bath. Stir in remaining 2 1/2 cups watermelon juice and the lemon juice.
  • Let stand, stirring often, until just beginning to gel, 15 to 20 minutes. Divide among 4 glasses. Garnish with watermelon cubes. Refrigerate until set, at least 2 hours or up to overnight. Top with rose hip-hibiscus "ice cubes" if desired, and garnish with mint or basil sprigs.

3 tablespoons dry mesquite marinade

1/4 cup maple syrup, divided
1 1/2 lbs grilling steaks (such as ribeye, strip, or tenderloin)
3/4 cup frozen limeade concentrate, thawed
4 cups seedless watermelon, chunks (about 1 1/2 lb)
6 cups cherry carbonated lemon-lime beverage (chilled)

Steps:

  • Mesquite Maple Steaks & Vegetables:.
  • Quarter bell peppers lengthwise; remove core and seeds.
  • Discard stems and gills (dark brown layers) from mushrooms.
  • Preheat grill (or grill pan). Combine in bag: marinade mix, oil, and 2 tablespoons syrup; shake to blend. Add steaks, peppers, and mushrooms; seal bag tightly and shake to coat evenly. Let stand 10 minutes (or overnight) to marinate.
  • Place steaks and peppers on grill; cook 4-5 minutes on each side or until steak is 145°F (for medium rare) and peppers are tender. Remove steaks from grill; let stand 5 minutes to rest.
  • Place mushrooms on grill; cook 1-2 minutes on each side or until tender. Cut peppers into bite-size strips. Drizzle remaining 2 tablespoons syrup over steaks. Serve.
