  • Mix all ingredients in 1 1/2-quart saucepan. Heat to boiling over medium heat, stirring constantly.
  • Boil 3 to 4 minutes, stirring constantly, until slightly thickened. Serve warm. Store covered in refrigerator.

Steps:

  • To make the ice cream: In a large saucepan combine the cream, milk, and cinnamon sticks and bring just to a boil over medium-high heat. Remove the pan from the heat, cover, and let rest 15 to 20 minutes. Remove the cinnamon sticks. In the bowl of an electric mixer fitted with a balloon whisk, whisk the egg yolks with the sugar, molasses, brown sugar, and ground cinnamon. In a steady stream, gradually whisk about one-third of the cinnamon-infused cream mixture into the egg mixture. Add this mixture back into the egg mixture and put in a heavy saucepan over medium-low heat. Cook, stirring constantly with a wooden spoon, for about 5 minutes, or until the custard thickens enough to coat the spoon. Do not let the custard boil. Strain the custard through a fine-meshed sieve into a metal bowl and cover. Refrigerate, stirring occasionally, until cold. Pour into the canister of an ice cream maker and freeze according to manufacturer's directions. Pack into an airtight container and store in the freezer. Let the ice cream soften slightly before serving. To make the filling: In a medium saucepan combine all filling ingredients and cook over medium heat, stirring occasionally, about 7 minutes, or until the mixture is thick and bubbling. Remove the pan from the heat, let cool to room temperature, cover, and refrigerate. To make the sauce: In a medium saucepan combine the brown sugar, coffee, half-and-half, butter, and corn syrup. Bring to a boil over medium-high heat and cook about 4 minutes, until the sauce is shiny and smooth. Remove the pan from the heat. Stir in the rum and walnuts. Set aside. To assemble: Brush the edges of the tortillas with the egg wash. Place 1/2 cup of banana filling in the center of each tortilla, top each with three pieces of chocolate, and roll up like a burrito. Heat the vegetable oil to 350 F in a deep fryer or deep saucepan. Fry the chimichangas, 2 at a time, until golden brown, about 1-1/2 minutes. Remove to paper towels with tongs and drain. Sprinkle with the cinnamon-sugar mixture. To serve: Slice the hot chimichangas diagonally at the center. Place two halves on each dessert plate. Place a scoop of cinnamon ice cream and a strawberry on each plate beside the chimichanga halves. Spoon rum-walnut sauce around the plates.

  • Preheat oven to 350 degrees F. Spray a 13 by 9-inch baking dish with nonstick cooking spray. Tear brioche into 1-inch pieces and place in prepared dish. In a large bowl, combine milk, custard dessert mix, rum, eggs, and nutmeg. Whisk until well blended. Stir in nuts and raisins, if using. Pour over brioche; press down lightly on brioche to submerge into custard. Let stand for 10 minutes, or until brioche absorbs custard slightly. Steps:

  • BREAD PUDDING:.
  • Preheat the oven to 350ºF.
  • Lightly grease a 9 by 13-inch baking dish with 1 tablespoon of the butter and set aside.
  • Place the cubed bread in a large mixing bowl.
  • In a small saucepan, melt 4 tablespoons of the butter over medium heat and pour the butter over the bread cubes.

1/2 cup light brown sugar
1/2 cup heavy cream
1/4 cup (4 tablespoons) unsalted butter
1 tablespoon dark rum
1/4 teaspoon salt
1/3 cup toasted walnuts
1 pint maple, ginger, vanilla chocolate chip or other ice cream
Extra-bitter chocolate, for serving
Crème fraîche, lightly whipped optional

Steps:

  • In a small heavy-bottomed pot, over medium-low heat, stir together 1/2 cup of the maple syrup, the brown sugar, cream, butter, rum and salt. Cook, stirring constantly and scraping the sides and the bottom of the pan, until the sauce is thick and coats the back of the spoon, about 10 minutes. Pour into a heat-proof container and let cool a bit before making the sundaes.
  • In a small bowl, combine the remaining maple syrup with the nuts. Scoop the ice cream into dishes. Top with the warm sauce and maple nuts. Grate some of the chocolate over the top and serve with a dollop of crème fraîche and more chocolate shavings if you like.

1 1/2 cups walnut pieces, roughly chopped
1/4 cup honey
1/4 cup sour cream
4 cups all-purpose flour
2 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
10 ounces (2 1/2 sticks) unsalted butter, softened
1 1/2 cups packed brown sugar
2 teaspoons vanilla extract
1 teaspoon salt
5 large eggs
4 tablespoons unsalted butter
1/2 cup sugar
2 tablespoons water
I/4 cup rum

Steps:

  • Preheat the oven to 325 degrees F. Generously butter a large bundt pan. Evenly spread the walnut halves over the bottom of the pan.
  • Combine the raisins, 1/2 cup of the rum and the water in a small saucepan. Cook over low heat, shaking frequently, until all the liquid is absorbed. Set aside to cool, and then stir in the chopped walnuts. Reserve.
  • Combine the honey, sour cream and remaining 1/4 cup rum in a small bowl and reserve.
  • In another bowl, stir together the flour, baking powder and soda.
  • With an electric mixer, cream together the butter and brown sugar until light and fluffy. Beat in the vanilla and salt. Add the eggs, one at a time, beating about a minute at medium speed after each addition.
  • Add the flour mixture, alternating with the sour cream/honey combination, in five parts, mixing gently between additions. (The last addition should be the liquids.) Fold in the rum-soaked raisins and nuts.
  • In another bowl, stir together the flour, baking powder and soda.
  • With an electric mixer, cream together the butter and brown sugar until light and fluffy. Beat in the vanilla and salt. Add the eggs, one at a time, beating about a minute at medium speed after each addition.
  • Add the flour mixture, alternating with the sour cream/honey combination, in five parts, mixing gently between additions. (The last addition should be the liquids.) Fold in the rum-soaked raisins and nuts.
  • Spoon the batter evenly into the prepared pan. Poke the batter in a few places with a knife to release large air bubbles. Smooth the top with a spatula and tap on a counter twice to release air bubbles. Bake 1 to 1 1/4 hours, until a skewer inserted in the center comes out dry. Cool on a rack while preparing the glaze.
  • To make the glaze, combine the butter, sugar and water in a small saucepan. Bring to a boil and let boil 2 minutes. Remove from the heat and stir in the rum.
  • To glaze, poke a few deep holes in the cake with a skewer or toothpick. Brush on one-third of the glaze. Invert the cake onto a baking pan and remove the cake pan. Brush the remaining glaze over the top, sides and down the center. Let cool completely before transferring to a platter and slicing.

  • 1 Combine the maple syrup, honey, cinnamon, allspice, salt and butter in a heavy saucepan over low heat
  • 2 Cook for 10 minutes, whisking occasionally; the butter should be completely melted
  • 3 Remove from the heat
  • 4 At this point, if you plan to serve the sauce on another day, do not stir in the nuts and vanilla extract
  • 5 Cool and refrigerate
  • 6 When ready to use, reheat the sauce over low heat
  • 7 Remove from the heat, then stir in the chopped walnuts and vanilla extract

3 small bananas, peeled, quartered lengthwise, trimmed to 4 inches
1/4 cup toffee bits (such as Skor)
1/4 cup finely chopped toasted walnuts
Vegetable oil (for deep-frying)
Powdered sugar
Chinese five-spice powder

Steps:

  • Make sauce:
  • Stir sugar and 1/2 cup water in heavy medium saucepan over medium-low heat until sugar dissolves. Increase heat and boil until syrup turns deep amber, brushing down sides of pan with wet pastry brush and swirling pan occasionally, about 12 minutes. Reduce heat to low. Add cream (mixture will bubble vigorously) and stir until caramel bits dissolve. Remove from heat. Mix in rum. (Can be made 1 day ahead. Chill. Before serving, rewarm over low heat, stirring occasionally.)
  • Make rolls:
  • Arrange 4 spring roll wrappers on work surface (keep remainder covered). Place 1 banana piece diagonally across 1 corner of each wrapper. Brush opposite corner with water. Drizzle each banana with 1 teaspoon caramel sauce, 1 teaspoon toffee bits and 1 teaspoon walnuts. Fold in wrapper corner closest to banana. Roll wrapper over banana once, then fold in sides and roll up as for egg roll, pressing ends to seal. Repeat filling and rolling remaining wrappers. (Can be made 2 hours ahead. Cover and chill.)
  • Pour enough oil into heavy large saucepan to reach depth of 3 inches. Heat oil to 375°F. Working in batches, fry rolls in oil until deep golden brown, turning frequently, about 3 minutes per batch. Using slotted spoon, transfer rolls to paper towels and drain. Arrange 2 rolls on each plate. Sift powdered sugar over. Sprinkle with five-spice powder. Drizzle caramel sauce around rolls and serve.
