Categories     Dessert

Time 1h22m

Number Of Ingredients 6

4 eggs
2 cups of powdered sugar
2 sticks of unsalted butter room temperature
2 cups of all purpose flour
1 cup raisins
1 tablespoon rum flavor(or 2 tablespoon real rum)

Steps:

  • Cream the butter with the powder sugar until smooth.
  • Incorporate the eggs one by one.
  • Add the flour gradually.
  • Add the raisins and the rum flavor to the batter. Mix to incorporate all ingredients.
  • Refrigerate the dough for an hour, in the same bowl you mixed it. The dough will be soft initially, but it will be easy to scoop into small balls after refrigeration.
  • Preheat the oven to 350F.
  • Cover a cookie sheet with parchment paper and drop with the spoon small balls of batter, leaving 1-2 inches distance between them. Cookies will spread a lot.
  • Bake the cookies in the oven for no more than 10-12 mins. Keep an eye on them, as they should be in the oven only until they become lightly golden brown at the edges.
  • Leave them on the cookie sheet for about 5 minutes, then transfer them to a rack to cool.

RUM SNICKERDOODLES

Rum Snickerdoodles image

Soft, chewy rum snickerdoodles. These easy butter rum cookies taste like classic snickerdoodles with the special touch of rum extract.

Provided by Erin Clarke / Well Plated

Categories     Dessert

Time 1h

Number Of Ingredients 16

1/2 cup (1 stick) unsalted butter (at room temperature)
3/4 cup granulated sugar
1 large egg
1 1/2 teaspoons rum exact
1 teaspoon pure vanilla extract
1 teaspoon baking powder
1/4 teaspoon ground nutmeg
1/2 teaspoon kosher salt
2/3 cup white whole wheat flour
2/3 cup all-purpose flour
2 tablespoons granulated sugar
1 teaspoon ground cinnamon
2 ounces white chocolate (chopped)
2 ounces semisweet chocolate (chopped)
3 teaspoons coconut oil (divided)
Sparkling sugar and/or sprinkles

Steps:

  • Place racks in the upper and lower thirds of the oven and preheat the oven to 375 degrees F. Line two baking sheets with parchment paper.
  • In a large mixing bowl or the bowl of a stand mixer fitted with the paddle attachment, beat together the butter and sugar on medium speed until smooth, creamy, and combined, about 1 minute. Add the egg and beat again until it disappears. Beat in the rum extract, vanilla extract, baking powder, nutmeg, and salt.
  • Sprinkle the whole wheat flour and all-purpose flour over the top. Beat on low speed, mixing just until the flour completely disappears.
  • Make the coating: In a large ziptop bag, place the sugar and cinnamon. Seal and shake to combine.
  • Scoop the dough into 1-inch-diameter balls and drop them into the bag about 6 at a time. Gently roll/toss the balls in the cinnamon sugar until each is completely coated. Transfer to the prepared baking sheets, spacing at least 1 1/2 inches apart. With the flat bottom of a drinking glass, gently flatten the cookies until they are 1/2 inch thick and 1 1/2 inches wide.
  • Bake the cookies on the upper and lower racks of the oven for 8 to 9 minutes, switching the pans' position once halfway through if your oven has hot spots. Remove the pans from the oven and place them on a wire rack. Let cool on the pan for 3 minutes, then gently transfer them to the wire rack to finish cooling completely.
  • For the chocolate dip: Line a fresh baking sheet with clean parchment or wax paper. Place the white and semisweet chocolate in separate microwave-safe bowls. Add 1 1/2 teaspoons coconut oil to each. Microwave for 30 seconds, stir, then return to the microwave and continue heating in 10- to 15-second bursts, until the chocolate is almost fully melted. Remove from the microwave and stir, allowing the residual heat to melt the chocolate completely, stirring until it is shiny and smooth.
  • Dip each cookie halfway into the chocolate, then transfer it to the prepared baking sheet. While the chocolate is still wet, add any desired sprinkles. Repeat with the remaining cookies, alternating between white and semisweet chocolate. Let rest until the chocolate sets. Enjoy!

CELEBRITY FOOD STYLIST JESSE SZEWCZYK GIVES THESE HOT BUTTERED RUM SUGAR COOKIES A BOOZY SPIN

Celebrity Food Stylist Jesse Szewczyk Gives These Hot Buttered Rum Sugar Cookies a Boozy Spin image

Inspired by the classic winter sipper-hot buttered rum-these deep-flavored Buttered Rum Sugar Cookies from Jesse Szewczyk's new cookbook will be your go-to nibble while wrapping presents by the fire.

Provided by Alison Ashton

Categories     Dessert, Cookie

Yield 2 dozen

Number Of Ingredients 10

½ lb (2 sticks) unsalted butter
2¾ cups all-purpose flour
1½ tsp kosher salt
¾ tsp baking soda
1⅔ cups packed light brown sugar
1 large egg, room temperature
2 Tbsp unsulphured molasses
2 Tbsp dark rum
1 Tbsp vanilla extract
⅔ cup granulated sugar

Steps:

  • In a small saucepan over medium, melt butter. Cooking, stirring often to prevent milk solids from burning, 3-4 minutes or until butter foams, darkens in color slightly and is very fragrant. Immediately pour butter into a medium, heatproof bowl; chill 1½ hours or until mostly resolidified. (It's OK if butter is still slightly soft.) Meanwhile, in a medium bowl, combine flour, salt and baking soda. Set aside. Arrange racks in upper-middle and lower middle positions in oven. Preheat oven to 350°F. Line 2 baking sheets with parchment paper or nonstick baking mats. In a large bowl, combine cooled butter and brown sugar. Beat on medium speed, 2-3 minutes, scraping down sides and bottom of bowl halfway through, until smooth and fully combined. Turn mixer off; add egg, molasses, rum and vanilla. Mix on medium speed 2-3 minutes or until very fluffy and lightened in color. With mixer running on low speed, gradually add flour mixture, beating until just combined. Place granulated sugar in a shallow, wide bowl. Using a medium 1¾-inch (#40) cookie scoop or 2 tablespoons, portion out dough and roll into balls. Roll balls in granulated sugar; place at least 3 inches apart on prepared baking sheets (12 per pan). Bake both sheets 10-13 minutes, swapping positions midway through baking, until cookies are lightly browned. Cool slightly on baking sheets, then transfer to a wire rack and let cool completely. Store cookies in an airtight container up to 1 week.

RICH CHOCOLATE RUM COOKIES

Rich Chocolate Rum Cookies image

Categories     Cookies     Rum     Chocolate     Dessert     Bake     Kid-Friendly     Chill     Hazelnut     Gourmet     Small Plates

Yield Serves 4

Number Of Ingredients 9

1 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup ground hazelnuts (about 1/2 cup shelled nuts)
12 ounces fine-quality bittersweet chocolate (not unsweetened)
1/2 stick (1/4 cup) unsalted butter
1/4 cup dark rum
2 large eggs
about 1/4 cup confectioners' sugar for sprinkling cookies

Steps:

  • In a bowl whisk together flour, baking powder, salt, and hazelnuts. In a metal bowl set over a saucepan of barely simmering water melt chocolate and butter, stirring occasionally. Stir in rum and cool. Whisk in eggs and stir in flour mixture. Chill dough, covered, 1 hour, or until firm enough to handle.
  • Halve dough and on a sheet of wax paper form each half into a 10-inch log, using paper as a guide. Chill logs, wrapped in wax paper, 4 hours, or until firm.
  • (After the dough has been formed into a log it can be kept in the refrigerator for one week or the freezer for one month. Thaw the frozen dough in the refrigerator until sliceable, about four hours.)
  • Preheat oven to 350° F. and lightly butter 2 baking sheets.
  • Cut logs into 1/2-inch-thick rounds and arrange about 1 inch apart on baking sheets. Bake cookies in batches in middle of oven 8 minutes and transfer to racks. Cool cookies completely and sprinkle with confectioners' sugar. Makes about 36 cookies.
