Ingredients

50ml dark rum
1 tsp sugar syrup
few dashes of orange bitters
ice
strip of orange peel, to garnish

Steps:

Put half the rum, the sugar syrup and bitters in a mixing glass or jug. Add three ice cubes and stir slowly with a mixing spoon until the outside of the glass feels cold. Add the rest of the rum and a few more ice cubes, then stir to just combine.
Strain the drink into an ice-filled rocks glass or tumbler and garnish with the strip of orange peel.

Ingredients

1 cup sugar
1 cup brown sugar
1 cup butter
2 cups vanilla ice cream
rum
water
nutmeg

Steps:

Combine sugar, brown sugar and butter in a 2-quart saucepan.
Cook over low heat, stirring occasionally, until butter is melted (6-8 min).
Combine cooked mixture with ice-cream in a large mixing bowl, and beat at medium speed, scraping bowl often until smooth (1-2 min).
Store refrigerated up to 2 weeks or frozen up to one month.
For each serving, fill one-quarter of a mug with mixture, add one ounce rum and three-quarters of a cup of boiling water. Sprinkle with nutmeg.

1 cube sugar
2 or 3 dashes Angostura or orange bitters
Twist lemon peel
Handful ice cubes
2 oz. rum
Slice orange or orange twist
Maraschino cherry

Steps:

Place the sugar cube in an old-fashioned glass and sprinkle with bitters. Crush sugar with muddler or the back of a wooden spoon. Add lemon peel, ice cubes, and rum, and stir gently until glass is cool. Garnish with orange slice or twist and cherry.
