3 grapefruits (preferably 2 white and 1 pink or red)
1/4 cup dry white wine
1 shallot, minced
2 tablespoons white wine vinegar
5/8 cup unsalted butter, cut into tbl pieces
4 halibut steaks, with skin (1/2 inch-thick, 1 1/2 lb)
3 tablespoons vegetable oil
1 lb fresh shiitake mushroom, stems discarded and caps thinly sliced
2 Belgian endive, trimmed and cut crosswise into 1-inch-thick slices

Steps:

  • Make Beurre blanc:.
  • Finely grate 1 tsp zest from a grapefruit. Squeeze 1/2 cup juice from a white grapefruit.
  • Cut peel, including all white pith, from remaining fruit with a sharp paring knife and cut segments free from membranes. Chop enough grapefruit segments (use all colors) to measure 1/2 cup. Reserve 1 cup of remaining whole segments.
  • Boil juice, wine, shallot, and vinegar in a small heavy saucepan until reduced to about 1 Tbl. Reduce heat to low and whisk in butter 1 piece at a time, lifting pan from heat occasionally to cool sauce and adding each new piece of butter before previous one has melted completely (sauce must not get hot enough to separate).
  • Stir in chopped grapefruit and season with salt and pepper. Keep beurre blanc warm in a metal bowl set over a saucepan of hot water.
  • Cook fish and vegetables:.
  • Preheat oven to 250 degrees F. Pat halibut dry and season with salt and pepper. Heat 1 1/2 Tbl oil in a large nonstick skillet over moderately high heat until hot but not smoking, then saute fish, in batches, if necessary, turning over once, until golden brown and just cooked through, about 5 minutes total. Transfer fish to a shallow baking pan and keep warm in oven.
  • Wipe skillet clean and heat remaining 1 1/2 Tbl oil over moderately high heat until hot but not smoking, then saute mushrooms with salt and pepper to taste, stirring, until golden brown, 5 - 7 minutes. Add endives and saute, stirring, until leaves are slightly wilted, about 1 minute. Stir in reserved whole grapefruit segments and remove from heat.
  • Serve fish over mushrooms, topped with beurre blanc and zest.

2 ruby red grapefruits
1 sprig plus 1 teaspoon chopped fresh rosemary
1 tablespoon sugar
Coarse salt and ground pepper
1 tablespoon olive oil
4 skinless halibuts or other firm white fish fillets (6 ounces each)

Steps:

  • Preheat broiler with rack 4 inches from the heat. Using a vegetable peeler, remove 4 large strips of zest from one grapefruit, avoiding the bitter white pith. Cut into slivers; set aside.
  • Slice the top and bottom of both grapefruits with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding the grapefruit over a bowl, cut along both sides of each segment, staying close to the membrane, to release. Squeeze membranes over a small saucepan and add any juices that have accumulated in the bowl. Add rosemary sprig, sugar, grapefruit zest, 1/2 cup water, and 1/4 teaspoon coarse salt. Place saucepan over medium-high heat and bring to a boil. Cook until syrupy, 8 to 10 minutes.
  • Meanwhile, rub fish fillets with oil; season with salt and pepper. Place on a broilerproof rimmed baking sheet; broil until opaque throughout, 7 to 10 minutes.
  • When syrup is done, discard rosemary sprig. Add syrup and chopped rosemary to bowl with grapefruit segments. Toss gently; place on top of fish, and serve.

Recently, we were fortunate to get some freshly caught halibut. This must have been one large fish because the fillet was almost 2 inches thick!!! This sauce is "a must" for any halibut lover...it compliments the fish so well!!!

4 halibut steaks, about 7 oz each
2 grapefruits
2 tablespoons olive oil
kosher salt
ground pepper
1/2 cup unsalted butter
3 tablespoons capers, rinsed
2 tablespoons parsley, chopped
1 tablespoon lemon juice, fresh

Steps:

  • Finely grate the zest of 1 grapefruit; set aside.
  • Cut a thick slice off the top and bottom of each grapefruit to expose the flesh. Stand the fruit upright on a cutting board and cutting from top down to the bottom, remove both the skin and pith.
  • Holding the fruit over a bowl, cut along either side of each segment to the centre to free it from the membranes. Squeeze the juice from the spent membranes. Strain the juice and set the segments aside.
  • Preheat the oven to 450
  • Brush both sides of the fish steak with the oil and season with salt and pepper. Bake 12 minutes per inch of thickness, or until fish tests done.
  • While the fish is cooking, heat the butter in a small saucepan over medium heat. When it begins to colour, add the capers, 1/4 cup grapefruit juice, zest and segments, stir to heat through and break down the grapefruit.
  • Add the parsley and lemon juice, then season with salt and pepper.
  • Serve the fish with the grapefruit sauce overtop.

1/3 cup dry white wine
2 tablespoons cider vinegar
2 tablespoons shallots
1 sprig thyme, finely chopped
1 bay leaf
1/3 cup creme fraiche
5/8 cup unsalted butter, cold cut into 10 pieces
2 tablespoons chives, chopped fresh
fresh lemon juice
36 ounces halibut fillets (each about 3/4 to 1 inch thick)
2 tablespoons vegetable oil
2 tablespoons unsalted butter
1/4 cup fine fresh breadcrumb
2/3 cup almonds, finely chopped blanched
1 large egg, beaten lightly

Steps:

  • For beurre blanc: In a small heavy saucepan boil wine, vinegar, shallot, thyme, bay leaf and pepper to taste until liquid is evaporated.
  • Add crème fraîche and boil until reduced by half.
  • Reduce heat to low and whisk in butter, 1 piece at a time, lifting pan off heat occasionally to cool mixture and adding each new piece before previous one has melted completely. (Do not allow sauce to simmer; it should not get hot enough to separate.)
  • Strain sauce through a fine sieve into a heatproof bowl and add chives, lemon juice, and salt and pepper to taste.
  • Keep beurre blanc warm by setting bowl in a larger pan of very warm water.
  • For the halibut: Preheat broiler.
  • Pat halibut fillets dry and season with salt and pepper.
  • In a large non-stick skillet heat oil and 1 tablespoon butter over moderately high heat until foam subsides and sauté fillets in 2 batches 2 to 3 minutes on each side, or until golden and just cooked through.
  • Transfer fillets as cooked with a slotted spatula to a baking sheet and cool 5 minutes.
  • In a small bowl with a fork stir together breadcrumbs, almonds and remaining tablespoon butter.
  • Brush tops of fillets with egg and spread with almond mixture.
  • Broil fillets about 3 inches from heat 1 to 2 minutes, or until browned.
  • Arrange a fillet on each of 6 plates and spoon beurre blanc around it.

1/4 cup minced shallot
four 6- to 8-ounce white fish fillets such as red snapper or scrod
1/4 cup plus 2 tablespoons dry white wine
1/4 cup plus 2 tablespoons bottled clam juice
2/3 cup fresh grapefruit juice
1/4 cup heavy cream
3/4 stick (6 tablespoons) cold unsalted butter, cut into bits
2 teaspoons minced fresh tarragon leaves or 1/4 teaspoon crumbled dried, or to taste
fresh grapefruit sections as an accompaniment

Steps:

  • Sprinkle the shallot into a buttered shallow baking dish just large enough to hold the fish fillets in one layer, on the shallot arrange the fillets, skin sides down, and pour the wine and the clam juice over them. Sprinkle the fillets with salt and pepper to taste and bake them, covered with a buttered piece of wax paper, in the middle of a preheated 425°F. oven for 10 to 12 minutes, or until they are just cooked through. Transfer the fillets with a slotted spatula to a platter and keep them warm, covered.
  • Strain the cooking liquid through a fine sieve into a small saucepan, add the grapefruit juice, and boil the mixture until it is reduced to about 2/3 cup. Add the cream and boil the mixture until it is reduced by half. Reduce the heat to low and whisk in the butter, 1 bit at a time, lifting the pan from the heat occasionally to let the mixture cool and adding each new bit of butter before the previous one has melted completely. (The sauce should not get hot enough to liquefy. It should be the consistency of thin hollandaise.) Whisk in the tarragon and salt and pepper to taste. With the slotted spatula transfer each fillet, skin side down, to a plate. Pour one fourth of the sauce over each fillet and arrange some of the grapefruit sections around each plate.

Please feel free to substitute any mild tasting white fish of your choice. A non-stick pan works best for sautèing the fish. To say that grapefruit is my favorite fruit would be an understatement, although I would like to test this recipe next time with yellow-fleshed grapefruit. My brother mentioned this combination might taste good on shark and I think he's on to something. Serving suggestion: pan-grilled asparagus, roasted potatoes and a glass of Eola Hills pinot gris. Yesiree! Source unknown. Note: I was planning to use fresh tarragon as indicated in the recipe but sadly the tarragon in my herb garden wilted from the last big freeze. Parsley stepped in and saved the day. Thank you fresh Italian parsley!

1/3 cup unbleached white flour
3/4 teaspoon salt (to taste)
ground black pepper, to taste
1 lb flounder or 1 lb sole fillet
1 tablespoon extra virgin olive oil
2 medium shallots, finely chopped

1 cup red grapefruit juice, freshly squeezed
1 tablespoon Dijon mustard
1 tablespoon butter
3 tablespoons finely chopped fresh tarragon (fresh!)

Steps:

  • In a shallow dish or pie plate, whisk together the flour, salt and pepper. One at a time, dredge the fish fillets in the flour mixture.
  • In a large nonstick skillet over medium-high, heat the oil.
  • Add the fish and cook until lightly browned and just opaque at the center, about 2 to 5 minutes per side. Transfer to a plate and loosely tent with foil.
  • Add the shallot to the pan and cook over medium-high, stirring often, until softened and beginning to brown, about 3 minutes.
  • Add the wine and bring to a simmer, scraping up any browned bits. Cook until most of the wine has evaporated, about 2 to 3 minutes.
  • Add the grapefruit juice and mustard, then bring to a boil. Reduce heat to low and simmer until the sauce is reduced and slightly thickened, about 5 minutes. Stir in the butter and tarragon. Transfer the fish to serving plates and top with the pan sauce.

1 large shallot, minced (I thinly sliced the shallots instead)
1/2 cup white wine (we sampled a quite lovely Oregon pinot gris)
1 cup heavy cream
4 large sorrel
3 tablespoons cold unsalted butter, cut into 1/2-inch cubes
4 halibut fillets, preferably center-cut (approximately 6 ounces each)
olive oil
salt & freshly ground black pepper (used a coarse French grey sea salt)

Steps:

  • Preheat the oven to 425 degrees.
  • How to make the SORREL BEURRE BLANC: Combine the minced shallot and white wine in a small non-reactive saucepan. Cook over medium heat until the liquid is reduced to about a few teaspoons. Be careful not to burn, reducing heat to low if necessary.
  • Add the cream and reduce further until quite thick.
  • While the cream mixture is reducing, remove the ribs from the sorrel leaves and cut them into a chiffonade. Chiffonade: roll leaves then cut cross-wise into thin ribbons.
  • Remove the cream mixture from the heat. Stir the sorrel into the reduced cream, add the cold butter, and blend until smooth using a hand-held blender, a blender or a food processor. ( I simply whisked the mixture well and skipped blending.).
  • Place the sauce pan in warm water or on a warm spot on the stove while you prepare the halibut.
  • HALIBUT: Drizzle the halibut filets with a little olive oil to coat them, then salt and pepper generously.
  • Place on a baking sheet and roast in the oven for 8 to 10 minutes, depending on the size of the filets and your personal preference.
  • Transfer the halibut filets to dinner plates and spoon the sorrel beurre blanc over the top.
  • Delicious served alongside fingerlings or chive mashed potatoes, roasted asparagus, fiddlehead ferns (see recipe #374970 for example) or steamed indigo carrots, as a suggestion.
