PAPAYA GLAZED SHRIMP WITH RED PEPPER VINAIGRETTE

4 red peppers, diced and juiced
2 tablespoons honey
1 tablespoon hot red pepper flakes
2 tablespoons Thai fish sauce
1 papaya, seeded and diced
2 tablespoons ketchup
2 tablespoons soy sauce
1 cup mango nectar
2 teaspoons hot pepper sauce
12 shrimp, peeled and deveined
6 cloves garlic, sliced
Olive oil
1 (14-ounce) can hearts of palm, drained and cut lengthwise
1 lime, juiced
2 tablespoons cilantro
Salt

Steps:

  • Pour pepper juice into a bowl. Add honey, red pepper flakes, and fish sauce. Cool in the refrigerator for 15 minutes.
  • Meanwhile, in a food processor, combine papaya, ketchup, soy sauce, mango nectar, and hot pepper sauce. Puree.
  • Grill shrimp, continuously basting with the papaya sauce.
  • Saute garlic in olive oil. Add hearts of palm and char (to develop a deep brown color, do not move hearts of palm around). Add lime juice, cilantro and season with salt.
  • Spoon red pepper vinaigrette into the bottom of bowl. Make a raft with the hearts of palm, and arrange shrimp on top.

1 large ripe Mexican mango
1 ripe papaya, about 1 pound
3 tablespoons unsalted butter
3 tablespoons sugar
3 tablespoons dark rum
1/2 cup toasted coconut for garnish

Steps:

  • Peel and seed fruit, and cut into fairly even slices. Melt butter in a large skillet over medium-high heat. Add sugar, and carefully swirl until browned but not clumping. Very carefully add rum, a tablespoon at a time (it will spatter) and cook until evaporated. Gently add fruit, and continue swirling until well coated. Divide among serving plates, and sprinkle heavily with coconut.

¼ pound papaya, cut into chunks
½ cup white rum
1 (750 milliliter) bottle sweet white wine (such as Moscato)
2 cups pineapple juice
1 cup passion fruit juice
1 cup guava juice

Steps:

  • Combine pineapple, mango, and papaya in a large pitcher. Pour rum over the fruit. Add wine, then pineapple juice, passion fruit juice, guava juice. Refrigerate sangria before serving, 8 hours to overnight.

1 1/2 cups papayas, diced
1 cup golden raisin
2 tablespoons lemon juice
1/2 cup rum
4 tablespoons butter
3/4 cup brown sugar
1 cup all-purpose flour
1 cup cake flour
1 1/2 cups granulated sugar
1 teaspoon salt
5 teaspoons baking powder
1/2 cup butter, diced
4 eggs
1/2 cup sour cream
1 tablespoon vanilla extract
1/4 cup vegetable oil
1 lemon, zest of, only
1 cup sweetened flaked coconut
1/2 cup butter, melted
1 cup granulated sugar
1/2 cup rum

Steps:

  • In a bowl, combine the diced papaya, raisins and lemon juice. Add 1/2 cup rum and allow to soak for half an hour.
  • Spray a large 12 cup bundt pan with cooking spray and add 4 tbs melted butter and 3/4 cup brown sugar to the bottom of the pan. With a tablespoon strain 5 heaping tbs of the fruit mixture and add to the sugar mixture in the bottom of the pan.
  • In an electric mixer blend flour, sugar, salt, baking powder and diced butter on low speed. When blended continue mixing and add the 4 eggs one at a time. Follow with the sour cream, vanilla and oil. Add the remaining fruit mixture (including the liquid), the lemon zest and coconut and blend well.
  • Pour the batter into the bundt pan and bake in a preheated oven at 325 degrees for 1 hour. Check for doneness with a wooden pick. Remove from oven and let cool for 10 minutes.
  • For the glaze: In a small pan on the stove, mix butter, granulated sugar and rum and bring just to a boil. Spoon the glaze onto the cake until it is completely absorbed. Cover with plastic wrap and let sit overnight.
  • Before turning out the cake onto a serving platter, warm it in a 325 degree oven for 10 minutes to loosen the sugar mixture at the bottom of the pan. The cake will be very delicate.

1/4 cup freshly squeezed lime juice plus 1 tablespoon (3 limes)
1/4 cup dark rum
3 tablespoons dark-brown sugar
1 tablespoon finely grated, peeled fresh ginger
1 1/2 teaspoons cornstarch
32 medium shrimp, peeled and deveined (tail on)
Coarse salt and ground pepper
1 ripe but firm mango, peeled and sliced lengthwise into 8 slivers, each about 1 inch thick
2 tablespoons vegetable oil, plus more for grates
2 bunches watercress (about 12 ounces), tough stems trimmed

Steps:

  • Make glaze: In a small saucepan, combine 1/4 cup lime juice, rum, sugar, and ginger; bring to a boil over high heat. Reduce heat; simmer, whisking occasionally, until slightly thickened, about 3 minutes. In a small bowl, whisk together cornstarch and 1 tablespoon water; stir into lime-juice mixture. Cook, stirring, until thickened, about 30 seconds. Remove from heat; let cool.
  • Thread shrimp onto 8 skewers, using 4 shrimp per skewer. Season on both sides with salt and pepper. Thread mango slivers onto 4 skewers, using 2 pieces per skewer. Brush shrimp and mango all over with glaze.
  • Heat grill to medium-high; oil grates. Place shrimp and mango skewers on grill; cook, turning once, until blackened in spots and shrimp are opaque throughout, 3 to 4 minutes.
  • In a large bowl, whisk together remaining tablespoon lime juice with the oil; season with salt and pepper. Add watercress; toss to coat.
  • To serve, divide watercress among four plates; top each with 2 shrimp skewers and 1 mango skewer.
