1 pork tenderloin (1-1 1/2 pounds)
1/4 cup olive oil
2 tablespoons brown sugar
5 cloves crushed garlic
1 tablespoon lemon juice
1 tablespoon soy sauce
1 tablespoon white wine vinegar
1 teaspoon ground mustard
1/2 teaspoon salt
1/2 teaspoon black pepper

Steps:

  • Place pork tenderloin into a resealable plastic bag.
  • In a small mixing bowl whisk together olive oil, brown sugar, garlic, lemon juice, soy sauce, white wine vinegar, ground mustard, salt, and pepper.
  • Pour mixture over the pork tenderloin in the plastic bag. Seal and place in the refrigerator for 4 hours to overnight.
  • To cook, heat an oven-safe heavy skillet over high heat. Preheat an oven to 400 degrees.
  • Sear the pork tenderloin for 2 minutes on each side. Transfer skillet immediately to the oven and cook until the internal temperature reaches 145 degrees, about 15 minutes.
  • Let rest 5 to 10 minutes before serving.

¼ cup soy sauce
1 clove garlic, minced
3 tablespoons dijon honey mustard
salt and ground black pepper to taste
2 pounds pork tenderloin

Steps:

  • Whisk together the olive oil, soy sauce, garlic, mustard, salt, and pepper in a bowl. Place the pork loin in a large resealable plastic bag and pour in the marinade. Marinate in the refrigerator at least 1 hour before cooking.
  • Preheat an oven to 350 degrees F (175 degrees C).
  • Transfer the pork loin to a baking dish; pour marinade over the pork.
  • Cook in the preheated oven until the pork is no longer pink in the center, 45 to 60 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

2 tablespoons olive oil or 2 tablespoons vegetable oil
2 (1 lb) pork tenderloin, silver skin removed, and sliced crosswise into 1 inch pieces
coarse salt
fresh ground black pepper
1/2 cup port wine
1 cup chicken stock
2 tablespoons unsalted butter
1 teaspoon red wine vinegar, plus more to taste if desired

Steps:

  • Heat oil in a medium, heavy-bottomed skillet over high heat.
  • Pat pork dry, and season with salt and pepper.
  • Cook pork in oil until brown, about 4 minutes or until cooked to desired doneness.
  • Transfer to a warm platter; set aside.
  • Remove skillet from heat.
  • Discard fat, and add port; return skillet to heat.
  • Deglaze pan, scraping with a wooden spoon to loosen the browned bits from the bottom.
  • Continue cooking until sauce is reduced to about 2 tablespoons.
  • Add stock, and cook until sauce is lightly syrupy, about 4 minutes.
  • Whisk in butter, a little at a time, gently shaking pan while whisking.
  • Stir in vinegar.
  • Taste, and adjust for seasoning.
  • Spoon sauce over pork, and serve immediately.

RUBY PORT AND RHUBARB MARINADE FOR PORK

1 lb. rhubarb, peeled and cut into 1 inch pieces
2 cups ruby port
1 cup sugar
1 stick cinnamon
2 tablespoons minced ginger
4 pieces. star anise
2 tablespoons coriander seed
Zest of 1 orange
Salt and pepper
1/2 cup extra virgin olive oil

Steps:

  • Place rhubarb in a medium saucepan or low heat. Add remaining ingredients except the olive oil. Simmer on low 45 minutes or until rhubarb has completely pureed itself. Pass through a medium sieve, cool, whisk in olive oil. Brush marinade on pork chops or tenderloin just before cooking.

GRILLED PORK TENDERLOIN WITH WILD BERRY PORT SAUCE

2 cup ruby port
2 sprig fresh thyme
1 shallot sliced thin
2 tsp finely chopped fresh peeled ginger
Zest of 1 large orange
2 cup mixed berries (strawberry, blueberry, raspberry etc.) what ever is market fresh
Salt and pepper to taste
2 whole Pork tenderloins trimmed and silver skin remove
Salt and pepper to taste
2 Tbsp fresh rosemary chopped
2 Tbsp olive oil

Steps:

  • To prepare the sauce, combine the port, thyme, shallot, ginger and orange zest in a medium sized saucepan.
  • Set the pan over medium heat bring to a boil then reduce to low heat and simmer.
  • Simmer until reduced by half. Strain the liquid using a fine mesh strainer.
  • Add the berries to the hot liquid and stir to release juices in the sauce without killing the tender berries.
  • Season to taste with salt and pepper and reserve sauce for later.
  • Preheat barbeque: 2 burners set to medium high (375F) (190C), and 2 other burners set to low setting (275F) (135C). Brush grill with oil to prevent sticking.
  • Season the pork with salt and pepper, sprinkle evenly with rosemary and drizzle with olive oil.
  • Place the pork tenderloins directly on the grill over the medium high heat burners.
  • Cook for 3-4 minutes or until nice golden char marks are achieved.
  • Flip the tenderloin and continue to cook the pork until both sides are nicely charred. Roll tenderloin on its sides to get equal charring all over the loin and to provide more flavors.
  • Once the tenderloin is nicely charred, place the pork over low heat, close lid and cook a further 5 - 8 minutes, or until an instant read thermometer inserted in the thickest part reads (150F) (65C). Half way through cooking, turn the tenderloins.
  • Remove pork from the grill, loosely tent with foil and let rest for 15 minutes before serving.
  • Slice and serve with a spoonful of the wild berry sauce.

Steps:

  • Combine ingredients and marinate in a one gallon freezer bag overnight. Heat 2 T. of peanut oil to medium-high heat in a cast iron skillet and sear all sides of the tenderloin. Transfer the skillet to a 425 degree oven for 20 minutes (or until 145 degrees internal temperature). Remove from the oven, tent with foil for 15 minutes, and serve.

1 lemon, zest grated
3/4 cup freshly squeezed lemon juice (4 to 6 lemons)
Good olive oil
2 tablespoons minced garlic (6 cloves)
1 1/2 tablespoons minced fresh rosemary leaves
1 tablespoon chopped fresh thyme leaves
2 teaspoons Dijon mustard
Kosher salt
3 pork tenderloins (about 1 pound each)
Freshly ground black pepper

Steps:

  • Combine the lemon zest, lemon juice, 1/2 cup olive oil, garlic, rosemary, thyme, mustard, and 2 teaspoons salt in a sturdy 1-gallon resealable plastic bag. Add the pork tenderloins and turn to coat with the marinade. Squeeze out the air and seal the bag. Marinate the pork in the refrigerator for at least 3 hours but preferably overnight.
  • Preheat the oven to 400 degrees F.
  • Remove the tenderloins from the marinade and discard the marinade but leave the herbs that cling to the meat. Sprinkle the tenderloins generously with salt and pepper. Heat 3 tablespoons olive oil in a large oven-proof saute pan over medium-high heat. Sear the pork tenderloins on all sides until golden brown. Place the saute pan in the oven and roast the tenderloins for 10 to 15 minutes or until the meat registers 137 degrees F at the thickest part. Transfer the tenderloins to a platter and cover tightly with aluminum foil. Allow to rest for 10 minutes. Carve in 1/2-inch-thick diagonal slices. The thickest part of the tenderloin will be quite pink (it's just fine!) and the thinnest part will be well done. Season with salt and pepper and serve warm, or at room temperature with the juices that collect in the platter.

¼ cup oyster sauce

¼ teaspoon onion powder
¼ teaspoon cayenne pepper
¼ teaspoon ground cinnamon
2 (12 ounce) pork tenderloins

Steps:

  • Whisk honey, soy sauce, oyster sauce, brown sugar, ginger, ketchup, garlic, parsley, onion powder, cayenne pepper, and cinnamon in a bowl; pour into a resealable plastic bag. Add pork, coat with marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for up to 24 hours.
  • Preheat grill for medium heat and lightly oil the grate. Remove pork from the marinade, and shake off excess. Discard the remaining marinade.

RUBY PORT SAUCE

Yield makes 2 cups

Number Of Ingredients 6

3 tablespoons butter, divided
2 shallots, finely chopped
2 cloves garlic, minced
1 1/4 cups ruby port
4 cups beef stock, homemade or low-sodium
Kosher salt and freshly ground black pepper

Steps:

  • Melt 2 tablespoons of the butter in a medium saucepan set over medium heat. Once the butter foams, toss in the shallots and garlic, and sauté until soft and tender, about 3 or 4 minutes. Pour the port and beef stock into the saucepan, and bring to a simmer. Let reduce for about 20 minutes, or until you have about 2 cups of brothlike sauce. Whisk in the remaining tablespoon of butter for a touch of added thickness and gloss. Season to taste with salt and pepper.
