Italian Sausage and Pepper Rotini image

Simple dinners are my specialty! This Italian Sausage and Pepper Rotini is so simple to make and only leaves you with one pot to clean up after dinner.

10 oz rotini
2 tablespoon olive oil
1 pound Italian sausage
3 bell peppers ((diced))
1 onion ((diced))
24 oz marinara sauce

Steps:

  • Start by cooking your rotini according to the package directions. Drain and set aside.
  • In that same pot that is now empty add in 1 tablespoon of olive oil. Cook sausage on each side until brown. Remove and cut into bite size pieces. Set aside.
  • In the same pot add your remaining 1 tablespoon of olive oil and then your peppers and onions. Allow to cook for 2-3 minutes until tender. Place sausage pieces into the pan and cook until all pieces are cooked throughout.
  • Add in pasta and marinara sauce to the pot. Allow to cook for 4-5 minutes until warm throughout.

3 cups rotini pasta, uncooked
1 lb. Italian sausage links, cut into 1/2-inch-thick slices
1 can (14.5 oz.) diced tomatoes, undrained
1 onion, chopped
1/4 cup KRAFT Balsamic Vinaigrette Dressing
3/4 cup KRAFT Shredded Mozzarella Cheese, divided

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, cook sausage in large nonstick skillet on medium-high heat 10 min. or until done, stirring occasionally; drain. Return sausage to skillet. Add tomatoes, onions and dressing; stir. Cook 5 min. or until onions are heated through, stirring occasionally.
  • Drain pasta; place in large bowl. Add sausage mixture and 1/2 cup cheese; mix lightly. Sprinkle with remaining cheese.

1 (16 ounce) box rotini pasta
1 lb bulk hot Italian sausage, crumbled
1 large red bell pepper, cut into thin strips
1 large green bell pepper, cut Into thin strips
1/4 cup onion, chopped
2 tablespoons olive oil
5 roma tomatoes, chopped
3/4 cup beef broth
1/4 cup parmesan cheese, freshly grated
2 tablespoons parsley, fresh, finely chopped
1/4-1/2 teaspoon dry crushed red pepper (optional)

Steps:

  • Prepare pasta according to package directions; drain and set aside.
  • Brown sausage in a large skillet over medium-high heat. Drain off grease and set aside.
  • Saute peppers and onions in 2 tablespoons hot oil over medium-high heat 2 to 3 minutes or until crisp-tender.
  • Stir in tomatoes, broth, and sausage; cook 3 minutes or until tomatoes are tender and mixture thickens slightly. Remove from heat; add cooked pasta to tomato mixture and stir.
  • Sprinkle with cheese and parsley.
  • Serve.

1 cup green bell pepper strips
1 cup mixed red and yellow bell pepper strips
1 onion, cut into thin wedges
2 cans (14.5 oz. each) diced tomatoes, undrained
3/4 cup HEINZ Tomato Ketchup
1 tsp. dried basil leaves
1/2 tsp. dried oregano leaves
3 Tbsp. KRAFT Grated Parmesan Cheese

Steps:

  • Cook pasta as directed on package, omitting salt.
  • Meanwhile, crumble sausage into large nonstick skillet; cook on medium heat until evenly browned, stirring occasionally. Add peppers and onions; cook and stir 5 min. or until crisp-tender. Add all remaining ingredients except cheese; mix well. Cover; simmer on medium-low heat 5 min., stirring occasionally.
  • Drain pasta; place in large bowl. Add sausage mixture; mix lightly. Sprinkle with cheese.

2 tablespoons olive oil
2 red bell peppers, sliced
1 large onion, sliced
Pinch plus 1 teaspoon kosher salt
Pinch plus 1 teaspoon freshly ground black pepper
3 cloves garlic, sliced
1/2 cup pizza sauce
2 pounds (80/20) ground beef
1 pound sweet Italian sausage, casing removed
1/2 teaspoon dried oregano
1/2 teaspoon dried ground sage
6 slices provolone
6 semolina rolls, split and toasted
Torn fresh basil, for topping

Steps:

  • Preheat a grill to medium heat.
  • Pour the olive oil into a large skillet over a medium-high heat. When the oil is hot, add the bell pepper and onion, then sprinkle with a pinch each of salt and pepper. Cook, stirring frequently, until lightly browned and just tender, 8 to 10 minutes. Add the garlic and cook until just softened, about 1 more minute. Stir in the pizza sauce and 1/2 cup water, then simmer until thickened but still saucy, about 5 minutes. Set aside and keep warm.
  • Combine the beef, sausage, oregano, sage and remaining teaspoon each of salt and pepper in a large bowl. Mix with your hands until well combined. Form into six patties, about 1 inch thick and 4 1/2 inches wide.
  • Grill the patties until cooked through, 6 to 7 minutes per side. Top each with a slice of cheese during the last 1 to 2 minutes and cover to melt.
  • Serve the burgers on the rolls and top with the pepper and onion sauce, then add the fresh basil.

BAKED RIGATONI WITH SAUSAGE

1 cup whole milk ricotta cheese
1/2 cup fresh basil leaves, chopped
1/2 teaspoon kosher salt
1/4 teaspoon kosher salt, plus more for the pasta
1 pound rigatoni pasta
1 tablespoon olive oil
1 pound sweet Italian sausage, casings removed
1 large or 2 small heads broccoli, chopped into small florets
1 clove garlic, peeled and chopped
One 25-ounce jar marinara sauce
1 cup freshly grated Parmesan cheese
1 1/2 cups shredded mozzarella cheese

Steps:

  • Preheat the oven to 400 degrees F.
  • For the topping: Add the ricotta, basil, and salt to a small bowl. Stir together with a rubber spatula. Set aside.
  • For the pasta: Bring a large pot of water to boil. Season well with salt and cook the rigatoni for 5 minutes. Drain well, reserving 1/2 cup pasta water.
  • Meanwhile, heat a large braiser or ovenproof skillet over medium-high heat. Add the olive oil and sausage to the pan. Cook, stirring often and breaking apart the meat with the back of a spoon, until beginning to brown, about 7 minutes. Add the broccoli and garlic and cook to marry the flavors, about 3 minutes. Stir in the marinara and 1/4 teaspoon salt until fully combined. Add the pasta to the pan and sprinkle with 1/2 cup of the Parmesan cheese. Toss well to coat. Add the reserved pasta water to thin the sauce slightly.
  • Dollop the ricotta cheese mixture evenly over the top. Nestle the ricotta mixture into the pasta and cover with some of the pasta. Sprinkle with the mozzarella and remaining 1/2 cup Parmesan cheese and bake until golden brown and bubbly, about 20 minutes. Allow to sit for 5 minutes before serving.

12 fresh Italian sausages, hot or sweet (about 1- 3/4 to 2 pounds)
1 large Spanish onion, cut in halved, and cut into 1/4 inch slices
1 tablespoon tomato paste
2 large red peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 large yellow peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
2 poblano peppers, trimmed, seeded, ribs removed, cut into 1/2-inch wide strips
4 large cloves garlic, minced
Kosher salt and freshly ground black pepper
1 tablespoon balsamic vinegar
6 crusty sandwich rolls, toasted

Steps:

  • Heat the oil in a large skillet over medium high heat. Add the sausages and cook until well browned on all sides, about 10 minutes. Remove the sausages from the pan and set aside. Pour off all but 1 tablespoon of oil. Add the onions and cook, stirring, until golden, about 5 minutes. Stir in the tomato paste and cook for 1 minute more. Add the peppers, garlic, and season with salt and pepper to taste. Cook until the peppers are wilted, about 5 minutes. Return the sausages to the pan, cover, and cook over medium heat, stirring frequently, until the sausages are cooked through, about 12 minutes more. Stir in the vinegar. Divide the sausage and peppers evenly amongst the crusty rolls and serve.
