1/2 cup water
5 Tablespoons cornstarch ((or arrowroot))
1 (13 ounce) can unsweetened coconut milk ((full-fat ONLY))
1/4 cup sugar ((you can use more to taste if you like it sweet))

Steps:

  • Combine cornstarch and water in a small bowl. Stir until cornstarch is dissolved then set aside.
  • In a medium-sized sauce pan over medium heat, combine coconut milk and sugar.
  • Whisk constantly until mixture begins to simmer.
  • While continuing to whisk, SLOWLY pour in the water/cornstarch mixture until it thickens.
  • Reduce heat to low and continue to whisk until you have a thick, pudding-like consistency (this is important, it needs to be thickened while it is heating or it won't set up).
  • Pour into a greased 8"x8" baking dish* or square containers (I actually like to use my smaller glass Tupperware containers becasue the sides are more straight, making for more consistent squares).
  • Allow to cool to room temperature (about 10-15 minutes) then cover and refrigerate for 2+ hours.
  • When ready to serve, cut into 2" squares and serve cold.
  • *Note: If serving as a custard or pudding, pour into individual serving ramekins or bowls and chill.

Haupia, also known as Hawaiian coconut pudding, is a sweet, cool, refreshing treat. This easy recipe only uses 4 ingredients and is perfect for the home cook to share with family and friends.

1/2 cup water
5 tablespoons cornstarch
¼ cup granulated sugar
1 can (13 oz) coconut milk

Steps:

  • Lightly grease an 8x8 pan with non stick cooking spray and set aside.
  • In a medium mixing bowl add water, cornstarch, and sugar. Whisk until well combined. Set aside.
  • Add coconut milk to a medium sized pan over medium high heat and heat until the liquid just starts to bubble. Stirring frequently so the milk does not burn.
  • Then add the cornstarch mixture to the pan and continue to stir. Heat until the mixture starts to thicken and resembles pudding. Remove from heat.
  • Pour the haupia into the prepared 8x8 pan and allow to cool. Then place pan in the refrigerator until set, about 2 hours or you can leave it overnight.
  • Cut into squares and ENJOY!

This is a treat that you only get at luau's in Hawaii. I found the recipe and now I make this for my family and they love it! It is just like finger jello only with coconut milk.

2 c coconut milk
1 1/2 c water
1/2 c sugar
2 Tbsp sugar
1/2 c cornstarch
pinch of salt

Steps:

  • 1. Combine ingredients in saucepan and cook over low heat stirring frequently.
  • 2. Cook until the mixture thickens and come to a full boil.
  • 3. Pour into an 8 inch square pan.
  • 4. Chill until firm.
  • 5. Cut into 9 squares. Sprinkle with coconut if desired when serving.

4 1/2 cups whole milk
1 cup sugar
1/3 cup cornstarch
Kosher salt
5 large egg yolks, beaten
2 teaspoons vanilla extract
4 ripe bananas, sliced into 1/4-inch rounds
3 ounces vanilla wafer cookies, lightly crushed (about 24)

Steps:

  • Heat 4 cups of the milk in a large saucepan over medium heat until steaming.
  • Whisk the sugar, cornstarch and 1/2 teaspoon salt in a large bowl. Whisk in the egg yolks and the remaining 1/2 cup milk.
  • Whisk half of the hot milk into the egg mixture until smooth, then gradually whisk the egg-milk mixture into the pan. Cook over medium heat, whisking constantly, until the mixture boils. Continue to whisk until it has thickened to a puddinglike consistency, 3 to 4 minutes. Remove from the heat and stir in the vanilla extract.
  • Cool slightly, stirring a few times to prevent a skin from forming. Place a piece of plastic wrap directly on top of the pudding and refrigerate until completely cooled and thickened, about 4 hours.
  • One hour before serving, whisk the pudding vigorously until smooth and creamy. Gently fold in 3/4 of the sliced bananas. Cover with plastic wrap and refrigerate for 1 hour. Fold in the vanilla wafers, spoon the pudding into six to eight individual cups and top with the remaining banana slices.

  • Add coconut milk and sugar to a large saucepot and stir over medium heat until sugar and salt is dissolved. Pulse pineapple in a food processor until coarsely chopped. Add the pineapple to the pot and cook, stirring often until the pineapple is integrated into the mixture. Make a slurry in a separate small bowl by gradually whisking 1/2 cup water into the cornstarch. Whisk slurry into mixture in pot and allow to reduce and thicken until it is the consistency of yogurt. Steps:

  • In a large pot bring the coconut milk, water, sugar and butter to a boil. In a bowl whisk together cornstarch and water. When the coconut milk mixture comes to a boil, whisk in the starch mixture. Whisk until smooth; cook on low heat until it boils. Pour immediately into a 2-inch hotel pan. Chill overnight. 1 (14 ounce) can light unsweetened coconut milk
2 tablespoons coarsely chopped crystallized ginger

3 firm-ripe bananas

Steps:

  • In a small bowl, soften tapioca in warm water to cover 1 hour.
  • While tapioca is soaking, in a small saucepan, cook coconut milk, ginger and sugar over moderate heat, stirring, until sugar is dissolved.
  • Remove pan from heat and let mixture stand 10 minutes.
  • Drain tapioca.
  • Peel bananas and quarter lengthwise.
  • Cut quarters into ½ inch pieces.
  • Heat coconut milk mixture over low heat and gently stir in tapioca and bananas.
  • Cook pudding, stirring (be careful not to break up bananas), until thickened slightly and bananas are heated through, about 5 minutes, and cool.
  • Divide pudding among six ramekins and chill, covered, until cold.
  • Garnish puddings with crystallized ginger.

2 (14 1/2 ounce) cans light coconut milk
3/4 cup sugar
1/2 cup cornstarch
1 1/2 cups water
1 teaspoon vanilla extract
1/2 cup sweetened flaked coconut (optional)
1 cup pineapple, diced (optional)

Steps:

  • Lightly spray an 8x8-inch baking pan with cooking spray.
  • In a large saucepan, bring coconut milk to a gentle boil.
  • In a small mixing bowl, whisk sugar, cornstarch, water, and vanilla until smooth and lump free.
  • Whisk cornstarch mixture into hot coconut milk. Cook pudding pver medium heat, stirring very frequently with a silicone spatular or a wooden spoon for about 20 min, until pudding has thickened enough to pull away from sides of pan when it's being stirred. Remove pan from heat and scrape pudding into prepared baking pan. Let cool at room temperature for 10-15 min, then refrigerate until thoroughly chilled, at least 2 hours.
  • If desired, toast sweetened flaked coconut in a small skillet set over med-high heat. Stir frequently and remove from heat when golden brown and fragrant, 2-5 minutes. Set aside until ready to serve dessert.
  • To serve, cut chilled haupia into 12 squares using a sharp knife. Lift individual squares onto dessert plates. If desired, top each square with diced pineaple and toasted coconut.
