ROTEL SPANISH RICE
Family Spanish rice recipe with Rotel and bacon. Don't leave out the bacon fat and butter, it adds a lot of the flavor to the dish. Use Hot Rotel if you like it really spicy.

Steps:
- Fry bacon in skillet until browned.
- Remove from skillet, crumble, and set aside.
- Do not remove bacon grease from skillet!
- Melt butter in skillet and add onion, pepper and garlic.
- Saute until onions are translucent.
- Add the Rotel, green chiles and chicken broth and simmer approximately 5-10 minutes.
- Add the rice, cover and simmer approximately 20 minutes.
- Crumble bacon on top and serve.

AUTHENTIC SPANISH RICE - AN OLD FASHIONED SPANISH RICE RECIPE
Authentic Spanish Rice may be traditional but it's also simple with just a handful of ingredients including long-grain white rice, water, chicken broth, tomato sauce and Rotel canned tomatoes. With a lot of stirring and a little patience, you too will master this easy side dish.

Steps:
- Melt lard in a large skillet; add rice and cook, stirring constantly until lightly browned. Do not burn.
- Once browned, add water and bring to a boil.
- Once the water has mostly absorbed, add broth and cover over low heat.
- Let simmer and cook for approximately 20 minutes. Stir often so that a crust doesn't form. If it does, do not scrape it.
- Once the rice is fluffy, add drained Rotel (keep the juice) and tomato sauce. Stir.
- If the rice isn't perfectly fluffy, add the reserved Rotel liquids, turn off heat and cover until the rice steams to perfection.

Steps:
- Drain Rotel, reserving liquid.
- Add vegetable broth or water to Rotel juice to make 3 cups of liquid.
- Combine rice, Rotel and liquid in large saucepan. Cover and bring to a boil. Reduce heat to the lowest setting and simmer 20 minutes. (Don't open the lid!).
- Fluff rice with fork before serving.

RO*TEL CHICKEN AND RICE
Steps:
- Cut chicken breasts into 1 inch squares. Heat olive oil in a non stick skillet, add chicken and minced garlic. Cook for about 5-7 minutes stirring chicken occasionally.
- While chicken is cooking go ahead and cook rice according to package directions. Next add mushrooms and Ro*Tel to chicken. Do not drain Ro*Tel, do not drain mushrooms.
- Cover and let simmer until chicken is tender, about 10 minutes. When chicken mixture is done, turn off heat and sprinkle with cheese. This mixture will be juicy, just serve over rice!!

- Melt Velveta with Rotel, stirring occasionally.
- Preheat oven to 350 degrees.
- Boil chicken breasts until done.
- While chicken is boiling, mix cream of mushroom soup , cream of chicken soup, and Minute rice with Velveta and Rotel.
- Dice chicken, add to cheese mixture, and bake for 20 minutes.
