8 oz sour cream
1 cup mayo
4 green onions- chopped
2 cans of corn - drained
2 cups shredded Cheddar Cheese
16 oz can Rotel (hot or lime jalapeno)

Steps:

  • Drain both cans of corn so there isn't extra water in your dip.
  • Empty chopped green onions, drained corn, and Rotel tomatoes in a bowl.
  • Combine sour cream and mayo, and mix into your corn, onions and tomatoes well.
  • It is best to use a spatula to make sure the mayo and sour cream get very combined in the dip.
  • Add 2 cups of shredded cheese, but if you like extra cheese, its fine to add up to 1 cup shredded cheese more. (Most people like to use Cheddar in dips, but you can change the flavors by adding Monterrey Jack or Taco Cheeses)
  • Refrigerate your Fiesta Corn Dip for up to 4 hours prior to serving to allow the wet ingredients to solidify back together.
  • If you mix and serve immediately without getting cold, the dip may still be a little soupy.
  • If you DO need to mix and serve immediately, simply add some more cheese to counter balance and make a little thicker.
  • Cover corn dip and enjoy for up to 3 days, making sure you stir well prior to serving at later times.

Steps:

  • Heat oven to 350°F.
  • Brown meat in large skillet; drain. Return meat to skillet; stir in corn and VELVEETA.
  • Spoon 1/3 of the meat mixture into 8-inch square baking dish sprayed with cooking spray; cover with 6 tortilla halves and 1/4 cup tomatoes. Repeat layers. Top with remaining meat mixture and tomatoes; cover.

4 medium ears fresh corn, stripped and cut off the cob (about 3 cups kernels)*
5 slices bacon, divided
1/2 cup chopped Vidalia onion
1/4 cup chopped green bell pepper
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1/2 teaspoon dried basil
1 teaspoon dried parsley, plus extra for garnish
1/4 teaspoon dried thyme
1 teaspoon kosher salt, or to taste
1/4 teaspoon freshly cracked black pepper, or to taste
1/4 teaspoon Creole or Cajun seasoning, or to taste, optional
1 (10.5 ounce) can diced tomatoes with green chilies (like Rotel), undrained
1/2 cup sour cream

Steps:

  • Preheat oven to 350 degrees F.
  • Strip the corn and milk the cobs; set the corn and pulp aside.
  • Cook two slices of the bacon into a cast iron or other oven safe skillet and brown until crisp; remove to a paper towel and set aside to cool.
  • Slice remaining bacon into skillet and cook until fat is rendered but bacon is not fully crisp.
  • Add the onion and bell pepper and cook until softened.
  • Add the butter and flour, cook and stir for 3 minutes.
  • Add corn and pulp. Stir in seasonings, then add tomatoes and cook until heated through; remove from heat.
  • Stir in the sour cream, taste and adjust seasonings as needed.
  • Bake uncovered for 30 minutes or until bubbly.
  • Chop the two slices of reserved, cooked bacon and garnish the casserole with the bacon and reserved parsley.

This stupid easy Creamed Corn Casserole recipe is made with a store bought Jiffy cornbread mix, and that's not an apology. It is SO good! If you grew up with this Thanksgiving side dish you know what I'm talking about. It is creamy, corny, custardy, and sweet. It's the perfect compliment to a holiday meal, but I also love serving it with a bowl of chili!

1/2 cup butter ((1 stick))
1 (15-oz) can whole kernel corn (drained)
1 (15-oz) can creamed corn (not drained)
1 cup sour cream
3 tablespoons granulated sugar
1/2 teaspoon kosher salt
1 (8-oz) box Jiffy cornbread mix

Steps:

  • Preheat your oven to 350 degrees F.
  • In a 8x8 or 9x9 inch glass pan, add 1/2 cup butter. Put it in the microwave and melt it right in the pan. (If you only have a metal pan, melt it in a bowl and then transfer to the pan.*) Use a spatula or pastry brush to spread the butter up the sides of the pan, so that it doesn't stick while baking.
  • Open the can of whole corn kernels and drain. I usually just press the lid down on the corn holding it upside down over the sink. Add the drained corn to the butter in the pan.
  • Open the can of creamed corn and dump the whole thing into the pan.
  • Add 1 cup sour cream.
  • Add 3 tablespoons sugar and 1/2 teaspoon kosher salt (add 1/4 teaspoon if using table salt).
  • Add an 8 ounce box of Jiffy cornbread mix.
  • Use a spatula to stir it all together until well combined. Scrape down the edges.
  • Bake at 350 for about 35-40 minutes. The edges should be turning golden brown and pulling away from the sides. When you shake the pan, the center should not be jiggling more than the edges. You can also use the toothpick test, when a toothpick inserted in the center comes out with no wet batter, it's done.
  • Let cool on a wire rack for a couple minutes before serving warm!

2 tsp garlic powder

15.25 oz canned whole kernel sweet corn, drained
10 oz Rotel diced tomatoes and green chilies, drained
2 cups shredded Mexican cheese blend
1 cup chopped green onions
1 tbsp grated yellow onion

Steps:

  • Dump the softened cream cheese, sour cream and mayo into a large mixing bowl.
  • Add the salt, pepper, garlic powder, onion powder, smoked paprika and granulated sugar to the bowl.
  • Use an electric mixer to whip all of the ingredients together until smooth.
  • Add the corn and Rotel to the bowl.
  • Stir well.
  • Add the shredded cheese, chopped green onions and grated yellow onion to the bowl.
  • Stir well again.
  • Cover the bowl and place it in the refrigerator for at least 2 hours before serving.
  • Serve with chips and/or crackers for dipping.
  • Enjoy!
