GLAZED CRANBERRY SWIRL LOAF
This is one of my favorite recipes to serve during the holidays. Without the filling, it makes a nice soft, chewy bread for any regular day! -Chris Carattini, Chadron, Nebraska

- In a large bowl, combine 1 cup flour, sugar, yeast and salt. In a small saucepan, heat the milk, water and butter to 120°-130°. Add to dry ingredients; beat until moistened. Add the egg. Beat on medium speed for 2 minutes. Add 1 cup flour. Beat until smooth. Stir in enough remaining flour to form a soft dough. , Turn onto a lightly floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. Meanwhile, combine filling ingredients. , Punch dough down. Divide in half. Roll each portion into a 12x9-in. rectangle. Spread filling over each rectangle to within 1/2 in. of edges. Roll up jelly-roll style, starting with a long side; pinch seams to seal. Twist the 2 rolls together; pinch ends to seal. Place in a greased 9x5-in. loaf pan. Cover and let rise until doubled, about 30 minutes. , Bake at 375° for 25-30 minutes or until golden brown. Cool for 10 minutes before removing from pan to a wire rack. Combine glaze ingredients; drizzle over bread.

- In a large bowl, combine 1 cup flour, sugar, yeast and salt. In a saucepan, heat the water, milk and butter to 120°-130°. Add to dry ingredients; beat just until moistened. Stir in enough remaining flour to form a soft dough.
- Turn onto a floured surface; knead until smooth and elastic, about 5-7 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
- For filling, in a small saucepan, combine the cranberries, brown sugar and water. Cook over medium heat until berries pop, about 15 minutes. Remove from the heat; stir in the butter, walnuts and lemon juice. Cool.
- Punch dough down. Turn onto a lightly floured surface; roll into a 20-in. x 10-in. rectangle. Spread filling to within 1/2 inches of edges. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Place in a zigzag pattern in a greased 9-in. x 5-in. loaf pan.
- For topping, in a small bowl, combine flour and sugar; cut in 1 tablespoon butter until crumbly. Melt remaining butter; brush over dough. Sprinkle with topping. Cover and let rise until doubled, about 40 minutes.
- Bake at 350° for 40-45 minutes or until bread sounds hollow when tapped. Carefully remove from pan to a wire rack to cool. Yield: 1 loaf (16 slices).

- Preheat oven to 400°F Greased and flour a 9-inch springform pan.
- Combine flour with baking powder, baking soda and salt.
- Beat butter and sugars together until fluffy, about 3 minutes. Add eggs and vanilla, beat well. At low speed, add flour mixture alternately with buttermilk, until just blended. Spoon batter prepared pan. Top with strawberries and sprinkle with extra turbinado sugar.
- Bake 30 to 40 minutes or until a pick inserted into center comes out clean. Let cool. Release sides of pan. Remove cake and place on a serving plate. Garnish with additional strawberries, if using.

DOROTHY'S CRANBERRY BREAD
This was my Mothers special recipe for Cranberry bread. The best I've ever had and highly recommended! The flavors of cranberries, orange and pineapple compliment each other, and it's nice and moist. This bread continues to be a holiday tradition and family favorite.

Steps:
- Sift together the dry ingredients in a large bowl.
- In a 3/4 measuring cup, add the juice from one orange, vegetable oil and reserved juice from the can of crushed pineapple to equal 3/4 Cup.
- In a small bowl, add liquid with grated orange rind and beaten egg. Stir to combine well, then add to dry ingredients, stirring just enough to dampen dough mixture (do not over beat).
- Fold in chopped nuts, cranberries and crushed pineapple.
- Bake in a large greased loaf pan at 350 degrees for 50 to 60 minutes, or until a knife inserted in the middle comes out clean.
- Makes 1 loaf.
- SUGGESTION: To save time, you can coarsely chop the cranberries in a food processor, if you want. But be careful not to over pulse!
- NOTE: You may want to double the recipe and make 2 loaves. It goes fast!
BETSY'S LEMON-CRANBERRY BREAD
Found in a TOH magazine and clipped out to try! Boy was I ever glad I did. A lemony loaf of bread with the extra zip of dried cranberries. I've made this as a regular sized loaf and also in mini loaf sizes for gifts. I have also used walnuts and almonds in this bread and actually prefer the almonds - but use whatever nut you love. The addition of the lemon glaze just takes this bread over the top. *** Edited 11/19/09 - This recipe makes TWO 9x5x3" pans instead of one. Sorry for my error! If you want just one loaf just halve the recipe and it will work perfectly! ***

- In a mixing bowl, cream the butter, sugar, lemon juice & peel.
- Add the eggs, one at a time, beating well after each addition.
- Combine the flour, baking powder and salt in a separate bowl; then add to creamed mixture alternately with milk.
- Stir in cranberries and nuts.
- Divide batter between TWO greased 9x5x3" bread pans or six greased 5.75x3x2" mini loaf pans.
- Bake at 350F for 1 hour (9x5x3") or 40-45 minutes (5.75x3x2") or until pick inserted in center comes out clean.
- Cool for 10 minutes before removing from pans to wire rack.
- With a toothpick or skewer, poke 12 holes into each loaf.
- Cool bread completely.
- Combine sugar and lemon juice for the glaze and combine until the sugar is dissolved completely. Spoon glaze over loaf. Cool completely before serving.

CHOP SUEY LOAF 1954
This is the yeast risen fruit bread that we bought all the time at A & P stores besides the Spanish Bar. Never a week went buy without it in the house. Sliced up and served with orange coloured ( squeeze the bubble) margarine. That was a job we fought over to do. Now we make out own bread and serve with butter, a much better duo. The mixed fruit in the recipe is the glaced sticky fruits and peel that you buy for Christmas cakes, and glaced cherries.

Steps:
- Scald the milk and mix in the sugar, salt, cinnamon and nutmeg, Add in the shortening and corn syrup until all is melted and combined to dissolve.
- In another cup add the warm water with the sugar and yeast and let stand ten minutes to proof.
- Stir down the foam after ten minutes and add to the other milk mixture in large bowl.
- Blend in the three beaten eggs and the first amount of flour.
- Beat well by hand or with mixer.
- Mix in all the fruits.
- Continue mixing and add in the last of the flour combining well.
- Knead at least ten minutes.
- If you have to add a another half cup of flour do so, as it should be a soft not real sticky dough, just a bit tacky to the touch.
- Shape into a smooth ball and place in greased large bowl, rotating the ball so it greased all over.
- Cover with damp cloth and let rise until double. About two to three hours. In a draft free place.
- Punch down and divide into three loafs.
- Place into three greased 8 x 4 inch loaf pans and again let rise until doubled about one hour to hour and a half.
- Bake at 400 degree oven for about 30 to 35 minutes.
- When done, remove to rack to let cool.
- When cool you may make an icing glaze of powdered sugar, and milk with a touch of lemon juice to dizzle all over the tops, and down sides.
- Cooking time does not include the time to rise the dough.
