Add turkey burgers and cook 4 to 6 minutes per side, until cooked through. Serve the cheese-stuffed burgers with this meal and refrigerate remaining burgers until ready to use. GRILLED BURGERS WITH BLUE CHEESE SAUCE
These Grilled Burgers with Blue Cheese Sauce are made with ground beef, cooked on the BBQ until juicy and topped with a creamy topping!

- Heat grill to medium high heat.
- Form 2 lbs. of ground beef into 1/3 lb. patties. Once the patties are formed do not overwork them or they may become tough.
- Place the patties on a plate and sprinkle the first side with 1/2 tsp. each of garlic powder and onion powder and 1/4 tsp. kosher salt and pepper. Flip the burgers over and repeat with another 1/2 tsp. each of garlic powder and onion power and 1/4 tsp. salt and pepper.
- Place the burger patties on the direct heat and cook uncovered for 4-5 minutes on the first side. Flip once and cook uncovered for another 4-5 minutes on the second side.
- Move the burgers to the outside of the grill or over a more indirect heat, cover, and cook until the inside reaches desired done-ness. The safe internal temperature for ground beef is 160 degrees Fahrenheit (this may be checked using a meat thermometer).A general cooking guide:3-4 minutes for medium-rare4-5 minutes for medium7-8 minutes for well-done
- Combine 1/3 cup mayo, 1/3 cup sour cream, 2 Tbsp. lemon juice, 2 tsp. Worcestershire sauce, 1/4 tsp. garlic powder, and a pinch of kosher salt and pepper in a small bowl. Stir until completely combined using a fork or small whisk.
- Add 1/2 cup blue cheese crumbles and 1/3 cup fresh or dried chives (optional). Stir until combined.
- To serve: Place the cooked burgers on gluten free bun (or regular bun if not GF) along with veggies of choice (optional) and top with a generous drizzle of blue cheese sauce.

- Combine meat with breadcrumbs, egg, hot sauce, salt & pepper. Mix well, and form into eight patties of the same size.
- Divide the blue cheese into four equal portions. Place a portion of the cheese atop one patty, then top with another patty. Fold the patty's edges together so the cheese is hidden in the center. Seal well so nothing leaks out when cooking. Repeat three more times to make four burgers in total.
- Heat the butter in a skillet of medium-high heat. Cook patties, flipping once, for about 15 minutes.
- Serve inside buns and top with more hot sauce, if desired. Maybe some sliced red onions, tomato and lettuce as well. I served mine in pitas and topped with baby arugula and hot sauce.

- Melt butter in a large skillet over medium-high heat. Add onion; cook for 15 minutes or until well browned; set aside.
- In a large bowl, combine turkey, ricotta, worcestershire sauce, mustard, salt and pepper. Stir until well combined. Form into 4 equal-size patties and flatten.

- Preheat the grill. In a bowl, mix the meat. Form 4 (3-ounce patties) by using a scoop. Push them down and make little indentations in the middle to hold the flavors. Place a teaspoon of garlic paste in the middle of each patty and add a little chunk of blue cheese tucked right on top of the garlic paste. Add a good twist of black pepper. Take another 3 ounce scoop of meat, make it flat in your hand and place right on top of the other half.
- Take your fingers and just seal the 2 patties up and refrigerate until you are ready to grill.
- Meanwhile: Split the pieces of bread, and pull out some of the soft center to make a hole for the burger. Place the bread face down on the grill to toast.
- Place the burger in the bread, and top with your favorite condiments.
- Preheat the oven to 375 degrees F.
- Heat an ovenproof saucepan on the stovetop. When it's hot, add the extra-virgin olive oil. Next, add the cloves and season with salt and pepper. Let the cloves begin to caramelize, then put the pan in the preheated oven.
- Roast cloves in the oven for about 30 minutes or until they are nicely browned. (Starting the garlic on the stove will save at least 20 minutes of roasting time). Let cool.
- When cool enough to handle easily, put the roasted garlic into a small bowl, mash with a fork and add oil from the pan until a paste forms. Store, tightly covered, in the refrigerator, for up to 1 week.

- In a large skillet, saute the onions with cayenne, oregano and basil for about 4-5 minutes, then add in the garlic and saute for another 2 minutes; transfer to a bowl to a small bowl or plate to cool completely.
- In a large bowl mix together the turkey, BBQ sauce, oats, shredded cheese, Parmesan cheese, milk, seasoning salt, pepper, then add in the cooled onion/garlic mixture.
- Add in about 1/3 cup dried bread crumbs.
- Using clean hands mix completely adding in more dry breadcrumbs if the mixture is too moist, add enough to just shape into patties.

- Preheat the oven to 350 degrees F.
- In a large mixing bowl combine the beef, garlic, beaten eggs, and salt and pepper, to taste.
- Divide the meat mixture into 6 round even patties. Press 1-ounce of blue cheese and 1-ounce of the cold butter into the center of the formed patty. Remold the patty so that all the cheese and butter are hidden inside the center. Continue until all the beef patties have been formed. Refrigerate for 10 to 15 minutes.
- Pour the oil into a large skillet over medium-high. When the oil is smoking, add the beef patties and cook on both sides until golden brown. - For the tarragon aioli: In a bowl, whisk together the mayo, garlic puree and tarragon. Taste and season with salt and white pepper as desired.
- For the chicken burgers: Preheat the oven to 350 degrees F. Over medium-high heat, warm a large ovenproof saute pan with the oil. Form the chicken into 4 equal patties, and then form a pocket in the center of each burger. Fill the center with a quarter of the blue cheese, and then fold the edges to seal the cheese in the burgers. Sprinkle the stuffed burgers with the salt and pepper and sear in the pan for 2 to 3 minutes per side.
