If you like pumpkin, you'll love these. They are more like a muffin than a traditional scone. I've altered the recipe to make them healthier.

2 cups all-purpose flour
2 cups whole wheat flour
4 teaspoons baking powder
1 ¼ teaspoons baking soda
½ teaspoon ground ginger
½ teaspoon allspice
3 teaspoons ground cinnamon
¼ teaspoon ground cloves
1 teaspoon salt
¼ cup butter, softened
½ cup applesauce
2 ¼ cups sugar
2 eggs, beaten
1 (15 ounce) can pumpkin
1 cup finely chopped pecans
2 cups golden raisins
3 tablespoons sugar
2 teaspoons ground cinnamon

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Lightly grease 2 baking sheets.
  • In a large bowl, stir together all-purpose and whole wheat flours, baking powder, and baking soda. Mix in ginger, allspice, cinnamon, cloves, and salt. Set aside.
  • In a separate large bowl, cream butter until fluffy. Mix in applesauce, then slowly stir in 2 1/4 cups sugar until well blended. Mix in the eggs and pumpkin. Gradually mix the dry ingredients into the wet ingredients. Then stir in pecans and raisins.
  • Drop by heaping tablespoonfuls onto cookie sheets, leaving 2 inches between scones. Flatten scones with the back of the spoon.
  • In a small bowl, stir together 3 tablespoons of sugar and cinnamon, and sprinkle on top of scones.
  • Bake in a preheated oven until golden brown, about 12 to 14 minutes. Remove, and let cool on cookie sheets 5 minutes before removing to wire racks to cool.

1 teaspoon ground cinnamon

1/2 cup canned pumpkin puree
1/3 cup vegetable oil
1 tablespoon pure maple syrup
1 teaspoon vanilla extract
1/2 cup raisins

Steps:

  • Position a rack in the center of the oven and preheat to 350 degrees F. Line 2 heavy large baking sheets with parchment paper.
  • In a medium bowl, combine the flour, oats, cinnamon, baking soda, salt and allspice. Stir to blend well. In a large bowl, combine the sugar, pumpkin puree, oil, syrup and vanilla; whisk to blend. Using a flexible rubber spatula, gradually stir the dry ingredients into the pumpkin mixture. Stir in the raisins.
  • For each cookie, drop 1 generous tablespoon of batter onto the prepared baking sheet, spacing the mounds about 1 inch apart (or use a mini ice cream scoop). Using moistened fingertips, flatten each to a 2-inch-diameter round. Sprinkle each cookie with a bit more raw sugar.
  • Bake the cookies until brown and a bit firm to the touch, 17 to 20 minutes. Using a metal spatula, transfer the cookies to a rack and cool completely.

4 cups plus 1 tablespoon flour
2 tablespoons sugar, plus extra for sprinkling
2 tablespoons baking powder
2 teaspoons kosher salt
3/4 pound cold unsalted butter, diced
4 eggs, lightly beaten
1 cup cold heavy cream
3/4 cup raisins
1 extra-large egg beaten with 2 tablespoons milk or water, for egg wash

Steps:

  • Preheat the oven to 400 degrees F.
  • Combine 4 cups flour, 2 tablespoons sugar, the baking powder, and salt in an electric mixer fitted with a paddle attachment. Blend in the cold butter at the lowest speed and mix until the butter is in pea-sized pieces. Combine the eggs and heavy cream and quickly add to the flour/butter mixture. Combine until just blended. Combine the raisins and 1 tablespoon flour and then add to the dough and mix quickly. The dough may be a bit sticky.
  • Dump the dough out onto a floured surface and be sure it is well combined. Flour your hands and a rolling pin and roll the dough out to 3/4-inch to 1-inch thick. You will see lumps of butter in the dough. Cut into squares with a 4-inch cutter and then cut in half diagonally to make triangles. Place on a cookie sheet lined with parchment paper.
  • Brush the scones with the egg wash and sprinkle with sugar. Bake for 20 to 25 minutes until the outsides are crisp and the insides are done.

1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1 cup solid pack pumpkin puree

1 teaspoon ground cinnamon
½ cup chopped walnuts
1 cup raisins
1 cup confectioners' sugar
2 tablespoons warm water

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
  • In a medium bowl, cream the shortening and sugar until smooth. Add the egg, and vanilla; mix until fluffy. Stir in the pumpkin. Sift together the flour, baking soda, salt, pumpkin pie spice, and cinnamon; stir into the pumpkin mixture. Finally, stir in the raisins and walnuts.
  • Drop cookie dough by heaping spoonfuls onto the prepared cookie sheets. Bake for 10 to 12 minutes in the preheated oven, cookies should be light brown around the edges. Brush with the spice glaze, and transfer to racks to cool.
  • To make the spice glaze, mix confectioners' sugar with 2 tablespoons of warm water until there are no more lumps. Stir in the 1/2 teaspoon of cinnamon. If the glaze is too thick, add a little more water.

I'm not sure if quick-cooking oats would work; try them at your own risk! If you have Penzeys® Baking Spice, I like to add 1 teaspoon of that and also use a pinch in the icing.

1 tablespoon baking powder

Steps:

  • Preheat an oven to 425 degrees F (220 degrees C).

Cut the cold butter into the mixture with a pastry blender or fork until the mixture resembles coarse crumbs the size of peas or smaller. 2 cups pumpkin or 1 (15 ounce) can pumpkin

1/2 teaspoon ground cloves
1/2 teaspoon salt
1/2 cup chopped walnuts (optional)
1/2 cup raisins
1/3 cup margarine, softened
1 (3 ounce) package cream cheese, softened
2 cups powdered sugar
1 teaspoon vanilla
1 tablespoon milk

Steps:

  • Preheat oven to 350 degrees.
  • Set aside nuts and raisins, then combine the rest of the ingredients in a large mixing bowl.
  • Beat at a low speed until mixture is moist, then beat for an additional 2 minutes at medium speed.
  • Stir in nuts and raisins with a spoon.
  • Pour mixture into a greased 15x10x1 baking pan.
  • Bake for 25-30 minutes or until done.
  • Let cool.
  • To make frosting combine all the frosting ingredients into a bowl and mix until well blended and smooth.

These scones are a good choice for breakfast, brunch or tea. They contain very little sugar because the sweetness comes from the raisins. Walnuts and lemon rind provide crunchiness and tang. These scones are wonderful served warm and spread with butter and honey or jam.

2 cups all-purpose flour
2 tablespoons white sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 tablespoon grated lemon zest
1/2 cup butter, cubed
3/4 cup chopped walnuts
1/2 cup raisins
3/4 cup buttermilk
2 tablespoons buttermilk
2 tablespoons white sugar
2 tablespoons chopped walnuts

Steps:

  • In a large bowl combine flour, sugar, baking powder, baking soda, salt and lemon peel.
  • With a pastry blender or 2 knives, cut in butter until mixture resembles coarse meal. Mix in all but 2 tablespoons of the nuts and the raisins.
  • Mix in buttermilk with fork.
  • Gather the dough into a ball and knead for about 2 minutes on lightly floured board.
  • Roll or pat out 3/4 inch thick.
  • With a chef's knife cut into 3 inch triangles. Place, spaced 1-inch apart, on a greased baking sheet.
  • Brush tops with remaining 1 tablespoon buttermilk; sprinkle with the remaining sugar and the nuts.
  • Bake in center of 425 degree F oven about 15 minutes or until nicely browned.
  • Serve warm with butter or jam.

2-1/2 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
3 cups sugar
1 cup canola oil
4 large eggs, beaten
3/4 cup buttermilk
1 teaspoon vanilla extract
1 teaspoon butter flavoring
1 can (15 ounces) solid-pack pumpkin
1 cup raisins
1 cup chopped pecans

Steps:

  • In a large bowl, sift together flour, soda, salt, cinnamon and nutmeg. Add sugar, oil, eggs and buttermilk. Mix well. Stir in flavorings, pumpkin, raisins and pecans. Pour into two greased 9x5-in. loaf pans. Bake at 350° for 60-65 minutes or until bread tests done. Let stand 10 minutes before removing from pans. Cool on a wire rack.

  • Add 2½ cups flour, ⅓ cup packed brown sugar, 1 tbsp. baking powder, 1½ tsp. pumpkin spice, ½ tsp. cinnamon and ½ tsp. kosher salt to a bowl and whisk together. It helps to strain your mixture through a mesh strainer to break up any clumpy brown sugar. Simply break it up and push it through the strainer with a spoon.
  • In a separate bowl or measuring up, mix ¼ cup heavy cream, ½ cup pumpkin puree, 1 tsp. vanilla extract and 1 beaten egg. Set aside. You’ll be adding this to your flour mixture once you’ve completed the next step.
