GRANDMA MARONIS MEATBALLS 100 YEAR OLD RECIPE

Steps:
- Preheat oven to 350 degrees F. Spray a baking sheet with olive oil cooking spray.
- Mix all ingredients thoroughly in large bowl. If mixture seems a little loose add more bread crumbs.
- Roll meatballs loosely about the size of a golf ball and place on baking sheet. Place into preheated oven for approximately 35 to 40 minutes. Enjoy!
CHEF ROCCO DISPIRITO'S MAMA'S MEATBALLS
While watching the cooking segment of the October 19th episode of The Tony Danza Show, Chef Rocco's Dispirito's mama prepared her infamous meatballs. I have not tried them, but I have a friend that did the following night and said she will never make another meatball recipe again.

Steps:
- Place the chicken stock, onion, garlic, and parsley in a blender or food processor and puree.
- In a large bowl, combine the pureed stock mix, meat, bread crumbs, egg, Parmigiano-Reggiano cheese, red pepper flakes, and salt.
- Combine with hands until mixture is uniform, do not overmix.
- Put a little olive oil on your hands and form mixture into balls a little larger than golf balls.
- Pour about 1/2 inch of extra virgin olive oil in straight sided, 10-inch-wide saute pan and heat over medium-high flame.
- Add the meatballs to the pan, working in batches if necessary, and brown meatballs, turning once.
- This should take about 10-15 minutes.
- While meatballs are browning, heat the marinara sauce in a large pot.
- Transfer the meatballs to the pot with the marinara sauce and simmer for one hour.
- Serve alone or over your favorite pasta.

- Preheat the oven to 350 degrees F.
- Heat a saute pan to medium heat. Add the oil and saute the onions, garlic and oregano until the onions are slightly caramelized. Set aside to cool.
- In large bowl, mix the chilled tomato sauce with the bread. Add the ground beef, sausage, Parmesan, parsley, provolone, tomato paste, ham, mortadella, salami, raw eggs, hard-boiled eggs and the onion mixture and mix well.
- Form 3-ounce meatballs and place them on a nonstick baking sheet, or a baking sheet lined with parchment paper or a baking mat. Bake until the meatballs are cooked through, 18 to 20 minutes.
ROSIE'S MEAT BALLS
Steps:
- Meatballs 1. Mix all ingredients in large bowl with hands (only real way to do it!) 2. Make balls in desired size 3. Bake at 400 degrees for ~15 minutes, until medium doneness (will cook more in sauce). Sauce: 1. Dice or use food processor to cut onion and carrot. Place in large pot with ¼ cup olive oil until the onion and carrot are soft. 2. Add in thyme and oregano and cook with onion and carrot for additional 2-3 minutes 3. Add in canned tomatoes 4. Add sugar, spices, and parm cheese 5. Bring to boil for 5 minutes 6. Add meatballs 7. Let simmer for at least 2 hours 8. Taste to judge salt/pepper/sugar to taste
ROSIE'S SWEET AND SOUR MEATBALLS
This is an unusual way of achieving sweet and sour meatballs. I got this recipe from my ex-mother in law. she was great and so was her recipe.

Steps:
- In a large bowl, mix together ground chuck, eggs, oatmeal and packet of onion soup until well blended.
- Form into 1 inch meatballs and brown in large skillet until well browned, remove meatballs from skillet with a slotted spoon.
- You can also brown meatballs in a 350 degree F for at least 20 minutes.
- In a crockpot, layer meatballs and cabbage, end with cabbage.
- Pour chili sauce evenly over the meatballs and cabbage, do not mix.
- Then add water evenly over meatballs and chili sauce mixture.
- cook on low for at least 8 hours.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan.
- In a large bowl cream together the brown sugar, margarine, and raisin paste. Sift together the flour, rolled oats, and baking soda; stir into the creamed mixture. The mixture should be crumbly. In a smaller bowl, mix together the rest of the raisin paste, the chopped raisins, raisin juice concentrate, water, and sugar.
- Pat down 1/2 of the crumbly oat mixture into the prepared baking pan. Spread the raisin filling evenly onto the oat crust. Top with the remaining oat mixture, and bake in the preheated oven for 45 minutes, until the top crust begins to brown. Let cool and cut into squares.
