2 tablespoons vegetable oil
1 pound lean ground pork
2 cloves garlic, minced
1 onion, sliced
1/2 lb green beans, julienned
2 carrots, julienned
1 tablespoon soy sauce (optional)
1 cup bean sprouts (optional)
15 lumpia wrappers, square or round
Salt to taste
Serving suggestion: Sweet and Sour or Vinegar and Garlic Dipping Sauce, recipes follow
1/4 cup white vinegar
1/4 cup soy sauce
1/4 cup ketchup
1/2 cup water
2 tablespoons sugar
salt to taste
1 tablespoon cornstarch dissolved in 2 tablespoons water
1/2 cup white vinegar
3 garlic cloves, crushed
Salt and cracked black pepper to taste

Steps:

  • Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste.
  • To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use.
  • Deep fry at 350 degrees until golden brown, about 3-5 minutes on each side. Drain on paper towels. Serve with Sweet and Sour or Vinegar and Garlic Dipping Sauce.
  • In a small pan combine vinegar, soy sauce, ketchup, water, sugar and salt, and boil for 2 minutes. Thicken with cornstarch mixture.
  • Mix together all ingredients.

1 lb ground pork
1 cup uncooked shrimp, finely chopped
1/4 cup onion, finely minced
1/2-3/4 cup finely chopped carrot
2 whole eggs, beaten
2 -4 tablespoons soy sauce
1 1/2 teaspoons garlic powder
1/4 teaspoon Accent seasoning (optional)
3 dashes sesame oil
1 1/4 teaspoons salt, adjust according to your taste
1 teaspoon black pepper
25 lumpia skins, thawed
1/4 cup cornstarch
1/4 cup water
4 cups vegetable oil, for deep frying

Steps:

  • In a large bowl, combine all ingredients; except the cornstarch and water. Mix until well blended and everything is evenly distributed. On each lumpia wrapper, place some of the filling and wrap into thin rolls. Seal the lumpias using the mixture of cornstarch and water. Set aside, seam side down, and continue rolling the rest. Be sure to cover the unrolled wrappers as they tend to dry out.
  • At this stage, you can wrap the lumpias tightly and place in freezer for future use.
  • If cooking right away, heat the oil. Fry each roll until golden and crisp on all sides. Drain on paper towels. Transfer to a serving platter. Serve with your favorite sauce.
  • TIP: When draining lumpias on paper towel, DO NOT lay them down, drain them standing lenthwise and not on top of each other. This helps them to stay crisp and not soggy.

50 pieces lumpia wrapper
3 cups cooking oil
1 1/2 lbs ground pork
2 pieces onion (minced)
2 pieces carrots (minced)
1 1/2 teaspoons garlic powder
1/2 teaspoon ground black pepper
1/2 cup parsley (chopped)
1 1/2 teaspoons salt
1 tablespoon sesame oil
2 eggs

Steps:

  • Combine all filling ingredients in a bowl. Mix well.
  • Scoop around 1 to 1 1/2 tablespoons of filling and place over a piece of lumpia wrapper. Spread the filling and then fold both sides of the wrapper. Fold the bottom. Brush beaten egg mixture on the top end of the wrapper. Roll-up until completely wrapped. Perform the same step until all mixture are consumed.
  • Heat oil in a cooking pot. Deep fry lumpia in medium heat until it floats.
  • Remove from the pot. Let excess oil drip. Serve. Share and enjoy

1 tablespoon vegetable oil
1 medium yellow onion, minced
2 cloves garlic, minced
1 medium carrot, minced
1 teaspoon fresh ginger, grated
1 lb ground pork
12 oz water chestnuts, 1 can, minced
1 teaspoon salt
1 teaspoon pepper
2 teaspoons soy sauce
¼ cup green onion, minced
2 tablespoons fresh cilantro, minced, plus more for garnish
1 ½ cups canola oil, for frying
25 lumpia wrappers, or spring roll wrappers
1 egg, beaten
sweet chili sauce, for serving

Steps:

  • Make the filling: Heat the oil in a medium pan over medium-high heat.
  • Add the onion, garlic, ginger, and carrot. Cook for 4 minutes, or until the onion is slightly translucent.
  • Add the ground pork and cook for about 6 minutes, or until cooked through.
  • Add the water chestnuts, salt, pepper, and soy sauce. Stir for 2 minutes, then mix in the green onion and cilantro. Remove the pan from the heat and let cool.
  • Heat about an inch (2 cm) of canola oil in a deep, medium frying pan until it reaches 300°F (150°C).
  • Lay out one lumpia wrapper in a diamond shape and spoon 2 tablespoons of filling at the bottom of the wrapper, leaving about an inch and a half (3 cm) of space from the bottom point.
  • Fold the bottom point over the filling, then fold in the edges to create an envelope shape. Roll the wrapper toward the top point. Brush the top point with egg wash and finish the roll to seal the end.
  • Carefully place four to five lumpia at a time in the hot oil. Frying on each side for 1-2 minutes, or until golden brown. Note: If the lumpia are cooking too fast or burning, reduce the heat.
  • Remove the lumpia from the oil and drain on a wire rack or paper towels.
  • Sprinkle with a garnish of cilantro and serve with sweet chili dipping sauce. Optional: Cut lumpia in half.

1 lb pork (ground)
1 lb shrimp (finely chopped)
1 cup water chestnut (chopped)
1 cup green onion (finely chopped)
2 teaspoons salt
2 teaspoons black pepper
2 eggs
2 tablespoons soy sauce
2 (8 ounce) packages lumpia skins
1 cup cooking oil

Steps:

  • Combine first eight ingredients and let stand in refrigerator for 30 minutes.
  • Place a wrapper on a large plate. Spread 2 tablespoons of the meat mixture in a thick line on the wrapper edge closest to you.
  • Starting with this edge, roll it over the meat mixture once. Fold the two edges to the right and left of the mixture toward each other until they're snug against the roll of meat.
  • Continue to roll the wrapper until it becomes a tight cylinder. Seal the edge of the wrapper to the roll with a little water.
  • Repeat with remaining wrappers.
  • This makes a lot, so freeze what you don't want to fry up right now. Layer in a freezer bag, and separate each layer with parchment paper.
  • Deep fry as many as you need in hot oil and drain on paper towel.
  • Serve with sweet and sour or dipping sauce.

3 cloves garlic, minced
1 cup chopped onions
2 tablespoons vegetable oil
½ teaspoon ground black pepper
1 tablespoon soy sauce
1 cup water
½ cup diced carrots
½ cup green beans, French cut
½ cup diced celery
1 (10 ounce) can bamboo shoots, julienned
1 (8 ounce) can water chestnuts, drained and julienned
½ cup jicama, peeled and julienned
½ cup bean sprouts
1 (16 ounce) package egg roll wrappers
1 quart vegetable oil for frying

Steps:

  • In a wok or skillet, saute the garlic and onions in hot oil until the onions are translucent. Add the pepper and soy sauce and saute further.
  • Drain the excess oil, add the water and bring to a boil. Add the carrots and simmer for 5 minutes. Add the green beans, celery, bamboo shoots, water chestnuts, and jicama. Simmer for another 5 minutes. Remove the pan from heat and add the bean sprouts. Cool to room temperature.
  • Place three heaping tablespoons of the filling diagonally near one corner of each wrapper, leaving a 1 1/2 inch space at both ends. Fold the side along the length of the filling over the filling, tuck in both ends, and roll neatly. Keep the roll tight as you assemble. Moisten the other side of the wrapper with water to seal the edge. Cover the rolls with plastic wrap to retain moisture.
  • Heat a wok over medium heat, add oil to 1/2 inch depth, and heat for 5 minutes. Place 3 or 4 egg rolls in the oil, gently. Fry the rolls until all sides are golden brown. Drain on paper towels. Serve immediately

If you plan to freeze these do not use wonton wrappers as they will stick together. My wrappers also suggest using an egg white mixed with 1 tablespoon of flour to seal the wrappers.
