CREAMY ROSEMARY POTATOES

Creamy Rosemary Potatoes image

Provided by Ree Drummond : Food Network

Categories     side-dish

Time 1h40m

Yield 9 servings

Number Of Ingredients 11

4 tablespoons (1/2 stick) butter, plus softened butter, for the baking dish
5 to 6 medium russet potatoes
1 teaspoon salt, or to taste
Freshly ground black pepper
4 cloves garlic, finely chopped
1 medium onion, finely diced
One 8-ounce package cream cheese, at room temperature
1 cup half-and-half
2 tablespoons minced fresh rosemary
3 green onions, light green and medium green parts, thinly sliced
1 cup grated Parmesan

Steps:

  • Preheat the oven to 350 degrees F. Rub the bottom of a 9-by-13-inch baking dish with softened butter.
  • Using a mandoline or a very sharp knife, slice the potatoes very thinly. They'll cook better that way. Place the potatoes in the baking dish and sprinkle with 1/2 teaspoon salt and some pepper.
  • In a large skillet over medium-low heat, melt the butter. Add the garlic and onions and cook until translucent, stirring occasionally, about 4 minutes. Cut the bar of cream cheese in half and add the halves to the skillet, stirring constantly. Continue stirring until the mixture is smooth and combined, about 3 minutes. Pour in the half-and-half and stir to combine. Mix in 1/2 teaspoon salt and some pepper. Taste and adjust the seasonings as necessary. Do not undersalt! Add the rosemary and green onions and stir to combine. Finally, mix in 1/2 cup of the grated Parmesan.
  • Pour the cream cheese mixture over the top of the potatoes. Scrape out the skillet to get every last drop. Sprinkle the remaining 1/2 cup grated Parmesan generously over the top and bake until golden brown and bubbly, at least 1 hour. Let stand for 10 minutes before serving.

ROSEMARY POTATO FRITTATA WITH CARAMELIZED ONIONS

Rosemary Potato Frittata With Caramelized Onions image

Must be made in an oven safe skillet; I use cast iron. My husband hates carmelized onions and frittatas in general, so I usually scale it back for one person and use my tiny cast iron skillet.

Provided by threeovens

Categories     Breakfast

Time 40m

Yield 1 pie, 6 serving(s)

Number Of Ingredients 10

2 tablespoons butter
2 large onions, cut into 1/8 inch thick slices
10 large eggs
2 tablespoons balsamic vinegar
1 teaspoon sugar
5 medium red potatoes, unpeeled
2 tablespoons olive oil
2 teaspoons fresh rosemary, chopped
2 ounces gorgonzola, crumbled
salt and pepper

Steps:

  • First boil potatoes in salted water for about 10 minutes; drain.
  • Make the caramalized onions next. Melt butter in a medium skillet over medium heat. Add onions, 1/4 tsp salt, dash pepper and cook, stirring often, until onions are very soft and deep golden brown, about 12 to 15 minutes. Stir in vinegar and sugar and cook until onions are covered in a glaze, about another minutes. Cover and keep warm.
  • Cut the potatoes into 1/2 inch slices, then coarsely chop.
  • Heat oil in a large oven proof skillet over medium heat. Add potatoes, 1/2 teaspoon salt and 1/4 teaspoon and cook, uncovered, until potatoes are lightly browned on all sides about 12 to 15 minutes.
  • Preheat the broiler.
  • In a medium bowl, whisk together eggs, rosemary and about 1/2 teaspoon salt and 1/4 teaspoon pepper until well combined. Pour over potatoes in skillet and turn heat down to medium low. Once set, lift up the frittata at one side and tilt the pan to let uncooked egg get under cooked part. Cook until the top is almost set, about 5 minutes. Sprinkle with gorgonzola cheese, then put the skillet under the broiler until the top is puffed and set, about 1 minute.
  • To serve, spread the caramelized onions on top of the frittata and cut into wedges. Can be served either hot or warm.

  • If the butter is fully frozen, remove from the freezer and let thaw briefly, 5 minutes or so. In a medium bowl, whisk together the flour, Parmesan, and salt. Fill a separate small bowl or cup with ice and add ⅓ cup cold water.
  • Using the largest holes on a box grater, grate the frozen butter into the bowl, then mix with a wooden spoon or your fingers until pea-sized crumbles form. Add ¼ cup of the ice water and stir just until a crumbly dough forms. If a fistful of the dough holds together when squeezed, the dough has enough moisture; if it doesn’t, drizzle more water, one tablespoon at a time, until the dough holds together. Gently gather and knead the dough together into a round, flat disk. If it’s unwieldy, pile the dough in the center of a piece of plastic wrap and use the edges of the plastic wrap to bring the dough together into a mass. Wrap and chill in the refrigerator for at least 1 hour and up to 3 days.
  • Heat the olive oil and butter in a cast-iron skillet or other large skillet over low heat. Spread the sliced onions in an even layer in the pan and let cook slowly, stirring only occasionally, for at least 40 minutes and up to an hour, or until onions turn soft, brown, and jammy. When they are nice and dark, add the balsamic vinegar and cook a little longer, scraping up the fond as it’s loosened by the vinegar. Remove from the pan and set aside. (These can also be made well in advance.)
  • Plug the base pan, heating element and ceramic baking stone attachment into your Smart Oven+ and preheat to 375 degrees. (For an oven without a baking stone attachment, preheat to 425 degrees.) Let the pie dough thaw at room temperature for 5-10 minutes.
