GARLIC AND ROSEMARY PASTA

500 g penne pasta
6 crushed garlic cloves
5 tablespoons olive oil
3 fresh rosemary sprigs, chopped
1 tablespoon butter
salt and pepper

Steps:

  • Cook the pasta as per packet instructions (if dried usually 8 - 11 minutes).
  • While the pasta is cooking, get a large frying pan, heat the olive oil, add the garlic and finely chopped rosemary, season with a little salt and pepper and fry for 2-3 minutes over a medium heat until the garlic is slightly golden in colour.
  • Drain the pasta and add it to the frying pan, mix the pasta, garlic and rosemary well until all pasta is well coated.
  • Add a tablespoon of butter, quick stir again, serve immediately.

4 navel oranges
1 small red onion
1 teaspoon minced fresh rosemary or 1/2 teaspoon dried
Salt and freshly ground black pepper to taste
2 tablespoons extra-virgin olive oil
Fresh rosemary sprigs, optional

Steps:

  • Peel the oranges, and section them as you would a grapefruit, or slice them thinly. Peel the onion, and slice thinly. Toss both with the rosemary, a small amount of salt and pepper, and the olive oil.
  • Serve immediately, garnished with rosemary sprigs if you have them, or refrigerate for up to 2 hours. Bring to room temperature before serving.

This rustic red onion & rosemary focaccia makes a great partner to salads and antipasti

1batch white bread dough (see 'Goes well with' recipe below)
5 tbsp olive oil
2 large red onions , sliced
handful rosemary sprigs
1 tsp sea salt flakes

Steps:

  • Make the basic dough, adding 2 tbsp olive oil and only a pinch of salt. While the dough is rising, cook onions in 1 tbsp olive oil for 5 mins until soft, then set aside.
  • When the dough has risen, knock it back and stretch it to fit an oiled Swiss roll tin about 25 x 35cm. Leave the dough to prove for about 20 mins.
  • Heat oven to 200C/fan 180C/gas 6. Spread the onions over the dough and scatter with the rosemary. Press your fingers into the dough to make dimples, drizzle the remaining oil over and scatter over the salt, then bake for 30 mins until golden. Leave to cool, then serve cut or torn into squares.

OSSO BUCO WITH ORANGE AND ROSEMARY

4 veal shanks
Flour for dredging
2 tablespoons olive oil
2 cloves garlic, minced
2 tablespoons orange peel, cut in julienne
4 carrots, sliced
10 cippollini onions, peeled (or one medium onion sliced)
1/2 teaspoon ground coriander
2 teaspoons fresh rosemary leaves (or 1 teaspoon dried)
1 cup dry white wine
1 cup canned Italian plum tomatoes, chopped
2 cups strong veal or chicken stock, preferably home made
Coarse salt and freshly ground pepper to taste

Steps:

  • Wipe veal shanks dry with paper towels and dredge lightly in flour. Heat olive oil in heavy skillet large enough to hold shanks in one layer. Brown on all sides and remove them.
  • Add garlic, orange peel, carrots, onions, coriander and rosemary to skillet. Saute, stirring frequently, until lightly browned. Deglaze with wine.
  • Return the shanks to the pan with tomatoes and chicken stock. Season with salt and pepper, then cover and simmer gently for an hour to an hour and a half. Serve with the risotta Milanese.

1 1/2 pounds thinly sliced onions (6 cups)
1 1/2 tablespoons olive oil
1 1/2 pounds thinly sliced green peppers
1 tablespoon fresh rosemary leaves or 1 teaspoon dried
2 teaspoons balsamic vinegar
Salt and freshly ground black pepper to taste

Steps:

  • Saute onions in hot oil in nonstick pan over medium-high heat until soft and golden, about 10 minutes. Add peppers and rosemary. Cook until peppers soften and start to brown, 15 to 20 minutes.
  • Add vinegar, salt and pepper, reduce heat to low and cover pan. Continue cooking until vegetables are very soft, about 10 minutes longer.

1 1/2 lbs baking potatoes, peeled and quartered lengthwise
1 large sweet red pepper, halved,stemmed,seeded and cut into 8 wedges
1 large sweet green pepper, halved,stemmed,seeded and cut into 8 wedges
4 small onions, halved and quartered lengthwise
4 cloves garlic
3 tablespoons olive oil
1 tablespoon fresh rosemary or 1 teaspoon dried rosemary, crumbled
1 1/4 teaspoons salt
1/4 teaspoon freshly ground black pepper
fresh rosemary, for garnish

Steps:

  • Preheat the oven to 400 degrees.
  • Arrange the potatoes and the red and green peppers alternately in a spoke pattern in a shallow, 12-inch round baking dish.
  • Pile the onions in the center.
  • Scatter the garlic over the top.
  • Drizzle with oil, and sprinkle with rosemary, salt and black pepper.
  • Bake in the preheated oven until the vegetables are lightly golden and tender, or about 45 minutes.
  • Garnish with fresh rosemary sprigs.
