ALMOST-FAMOUS ROSEMARY BREAD

Yield 4 small loaves

Steps:
- Stir the yeast, sugar and 1/4 cup warm water in a large bowl (or in the bowl of a stand mixer). Let sit until foamy, about 5 minutes.
- Add 1 tablespoon olive oil, the flour, 1 1/2 tablespoons rosemary, the fine salt and 3/4 cup warm water; stir with a wooden spoon (or with the dough hook if using a mixer) until a dough forms.
- Turn the dough out onto a lightly floured surface and knead, dusting lightly with flour if necessary, until smooth and elastic, about 10 minutes. (Or knead with the dough hook on medium-high speed, adding a little flour if the dough sticks to the bowl, about 8 minutes.)
- Brush a large bowl with olive oil. Add the dough, cover with plastic wrap and let stand at room temperature until more than doubled, about 2 hours.
- Brush 2 baking sheets with olive oil. Generously flour a work surface; turn the dough out onto the flour and divide into 4 pieces. Working with one piece at a time, sprinkle some flour on the dough, then fold the top and bottom portions into the middle. Fold in the sides to make a free-form square. Use a spatula to turn the dough over, then tuck the corners under to form a ball. Place seam-side down on a prepared baking sheet. Repeat with the remaining dough, putting 2 balls on each baking sheet. Let stand, uncovered, until more than doubled, about 2 hours.
- Preheat the oven to 400 degrees F. Bake the loaves 10 minutes; brush with the remaining 1 tablespoon olive oil and sprinkle with the kosher salt and the remaining 1/2 tablespoon rosemary. Continue baking until golden brown, about 10 more minutes. Transfer to a rack to cool. Serve with olive oil seasoned with pepper.
ROSEMARY FRENCH BREAD
This is a wonderful recipe for the bread machine. It's crusty on the outside and so soft on the inside it's incredible! One loaf doesn't last the whole day in my house! Note: This makes a 1.5 lb. loaf.

ROSEMARY BREAD
Serving rosemary bread with rosemary-flecked olive oil rather than butter is a nod to the Mediterranean diet, in which olive oil is the primary fat.

Steps:
- Stir together yeast and the warm water in the bowl of an electric mixer. Let stand until foamy, about 7 minutes.
- Add 3/4 cup water, the olive oil, sugar, salt, chopped rosemary, 1 1/2 cups all-purpose flour, and the whole-wheat flour to bowl. Fit mixer with the dough hook; mix on low speed until dough comes together, about 1 minute. Raise speed to medium-high; mix until dough is smooth and elastic, 8 to 10 minutes.
- Lightly oil a large bowl. Shape dough into a ball, and transfer to oiled bowl. Loosely cover with plastic wrap. Let dough rise in a warm, draft-free spot until doubled in bulk, about 1 hour.
- Punch down the dough; let rest, covered, 15 minutes. Turn out dough onto a lightly floured surface, and divide in half.
- Roll one piece into an 11-inch-long loaf. Gently twist dough to create contours, then tuck ends underneath. Transfer to a baking sheet. Press half the rosemary leaves into loaf. Repeat with remaining piece of dough.
- Loosely cover baking sheet with plastic wrap, and let loaves rise slightly in a warm, draft-free spot 30 minutes. Meanwhile, preheat oven to 400 degrees.
- Dust loaves with remaining teaspoon all-purpose flour. Bake until golden, about 30 minutes. Let cool completely on a wire rack before slicing.

Steps:
- In a large bowl, combine 2 cups flour, yeast and salt. Stir in 2 cups warm water, and beat until well blended using a stand mixer with a dough hook attachment. Using a wooden spoon, stir in as much of the remaining flour as you can.
- On a lightly floured surface, knead in enough flour to make a stiff dough that is smooth and elastic. Knead for about 8 to 10 minutes total. Shape into a ball. Place dough in a greased bowl, and turn once. Cover, and let rise in a warm place until doubled.
- Punch dough down, and divide in half. Turn out onto a lightly floured surface. Cover, and let rest for 10 minutes. Roll each half into large rectangle. Roll up, starting from a long side. Moisten edge with water and seal. Taper ends.
- Grease a large baking sheet. Sprinkle with cornmeal. Place loaves, seam side down, on the prepared baking sheet. Lightly beat the egg white with 1 tablespoon of water, and brush on. Cover with a damp cloth. Let rise until nearly doubled, 35 to 40 minutes.
- With a very sharp knife, make 3 or 4 diagonal cuts about 1/4 inch deep across top of each loaf. Bake in a preheated 375 degrees F (190 degrees C) oven for 20 minutes. Brush again with egg white mixture. Bake for an additional 15 to 20 minutes, or until bread tests done. If necessary, cover loosely with foil to prevent over browning. Remove from baking sheet, and cool on a wire rack.

ROSEMARY AND APRICOT FRENCH LOAF
This is a sweet bread that seems quite fancy and is actually not much more work than a simple French loaf. I went to an Irish bakery once and they had apricot bread. In my imagination, this is the recipe I was thinking of so I made this up when the Irish bakery didn't read my mind.

Steps:
- Place water, olive oil, and salt into one side of a bread machine. Place 1/3 of the apricots on top of this fluid mixture with 2 cups of flour. Place more apricots in the middle of the flour, pour remaining flour on top, followed by remaining apricots. This will help weaker bread machines integrate the apricots.
- Run French loaf cycle for a 2-pound loaf. Remove from the machine after the cycle is done, about 3 1/2 hours.

ROSEMARY BREAD

Steps:
- By Hand: Stir the yeast into the water in a large mixing bowl; let stand until creamy, about 10 minutes. Stir in the milk and oil. Combine the rosemary, salt, and flour and stir into the yeast mixture in 3 or 4 additions. Stir until the dough comes together. Knead on a floured surface until velvety, elastic, and smooth, 8 to 10 minutes. It should be somewhat moist and blistered.
- By Mixer: This recipe is slightly large for the mixer, so that you'll have to stop and push the dough down frequently while the mixer is kneading it. Stir the yeast into the water in a mixer bowl; let stand until creamy, about 10 minutes. Stir in the milk and oil with the paddle. Combine the rosemary, salt, and flour and add to the yeast mixture. Mix until the flour is absorbed, 1 to 2 minutes. Change to the dough hook and knead on medium speed until velvety, elastic, smooth, and somewhat moist, about 3 minutes. Finish kneading briefly by hand on a lightly floured surface.
- First Rise: Place the dough in an oiled bowl, cover tightly with plastic wrap, and let rise until doubled, about 1 1/2 hours.
- Shaping and Second Rise: Gently punch the dough down on a lightly floured surface, but don't knead it. Cut the dough in half and shape each half into a round ball. Place the loaves on a lightly floured peel or lightly oiled baking sheet, cover with a towel, and let rise 45 to 55 minutes (but not until truly doubled).
- Heat oven to 450 degrees F. If you are using a baking stone, turn the oven on 30 minutes before baking and sprinkle the stone with cornmeal just before sliding the loaves onto it. Just before you put the loaves in the oven, slash the top of each loaf in an asterisk with a razor blade and sprinkle half the sea salt into the cuts of each loaf. Bake 10 minutes, spraying 3 times with water. Reduce the heat to 400 degrees F and bake 30 to 35 minutes longer. Cool completely on racks.
ROSEMARY ONION FRENCH BREAD
This bread recipe is by far the easiest I have ever seen or tried. I don't have a stand mixer or bread machine, so I don't even attempt recipes that call for a lot of kneading. If you don't care for rosemary or onion, substitute ANY dried herb or seasoning, even Ranch dressing mix works! The actual mixing takes less than 10 minutes, and before you know it your whole house smells wonderful.

Steps:
- In a large mixing bowl, whisk together the yeast, sugar, salt, and water until yeast is dissolved.
- Sift in the flour and onion powder. Add in the dried rosemary, crumbling it between your fingers to ensure pieces are fairly small.
- Stir together as much as you can with a wooden spoon. The dough will look sort of stringy.
- Knead in the bowl until the dough is fully incorporated (about 10-15 kneads will do the job).
- Coat the dough with oil, cover with a damp dishtowel, and let rise on a warm spot on your counter until at least doubled in size. (I usually let it rise until it mounds the dishtowel about an inch above the rim of the bowl, about 90 minutes.).
- Fill a shallow pan with water and place in the oven while preheating to 450 degrees. The water helps create a chewy, crunchy crust.
- Punch down the dough and shape into one large loaf, two baguette-style loaves, or 8-10 dinner rolls.
- Sprinkle a cookie sheet with cornmeal, then place the loaves on the cornmeal. Cut slashes, criss-crosses, etc. into the top of the loaves (about 1/2 inch deep). Sprinkle with a little extra flour, and bake for about 30-40 minutes. The loaves should be a deep golden brown with a very rustic look.

CRISP ROSEMARY-PARMESAN GARLIC BREAD
Steps:
- Blend butter and rosemary in processor. Gradually add oil and process until incorporated. Mix in Parmesan cheese. (Can be made 1 day ahead. Cover and refrigerate. Bring to room temperature before continuing.) Mix in garlic.Prepare barbecue (medium-high heat) or preheat oven to 400°F. Spread cheese mixture over cut sides of bread.
- If grilling, wrap each piece of bread loosely in foil. Grill in foil until bread is crusty and golden, about 8 minutes. If baking, place bread cut side up on baking sheet. Bake until bread is crisp and golden around edges, about 10 minutes. Serve bread warm.

Steps:
- Add to bread machine according to owner's manual (my machine does liquids first); program for DOUGH or MANUAL.
- At the end of the cycle, place on lightly floured surface, rolling into a large rectangle; start at the longest end and roll up tightly, pressing seams and tapering each end, tucking under.
- Place loaf on a greased baking sheet or stone; cover and let rise for one hour until doubled.
- Near end of rising time, preheat oven to 400 degrees.
- Mix glaze ingredients in a small bowl; brush over loaf generously; snip three diagonal slashes over the top (optional).
- Bake for 20-25 minutes, top will be golden brown.
- VARIATIONS: After rolling dough into a rectangle, (1) sprinkle with grated cheese [cheddar is delicious], or (2) generously brush with melted butter & sprinkle some aromatic herbs, or (3) spoon leftover marinara sauce close to the edges, -- then roll up tightly and pinch edges; continue as described in Step #3.
- VARIATION #2: Mince one small onion (about 1/4 cup) and add to wet ingredients.
- CREATIVE SUGGESTION: Shape into a round loaf instead of the usual long loaf.
- BABY FRENCH BREAD LOAFLETS: Divide dough ball into 12 balls, tapering to make mini-loaves; bake 15-20 minutes--watch carefully!
- FRENCH TWIST: Divide dough into 3 pieces, rolled into 14-16" ropes. Lay them on pan and braid in usual fashion, tuck ends under, stretch out a bit if need be; brush with 2 T. melted butter; cover & rise for about 30 minutes; brush with glaze, bake 20-25 minutes--watch carefully.

Steps:
- In a large bowl, dissolve the yeast in the water. Set aside until it bubbles, then stir in the salt.
- Stir in the flour, a cup at a time, until the mixture is firm enough to handle (you will need about 3 cups). Turn the dough out on a work surface spread with 1/2 cup of the remaining flour and knead about 10 minutes, incorporating the flour on the board. Add the remaining flour while kneading. Form the dough into a ball.
- Heat the oil in a skillet and briefly sautee the rosemary. Do not let it turn brown.
- Let the rosemary and oil cool briefly. Make a hole in the center of the dough and add the rosemary, oil and raisins. Work them into the dough.
- Divide the dough into 2 equal parts. Roll each into a ball, slightly flatten the top and cut a shallow cross into the top.
- Place the loaves on a lightly oiled baking sheet. Cover with a towel and set aside to rise about 30 minutes. Preheat oven to 350 degrees.
- Bake the bread for 30 minutes, until nicely browned. Allow to cool 2 to 3 hours before serving.

- Using a large mixing bowl for a stand mixer, combine 2 cups flour with the yeast, salt, and rosemary. Stir in 2 cups of warm water, and beat the ingredients with a dough hook attachment until well blended. Then gradually stir in the remaining flour about 1/2 a cup at a time. NOTE: You may not need all 6 cups of flour. Add your flour in gradually. When it is fully combined and pulling away from the sides of the bowl yet still sticky to touch, there is no need to add more flour. It's different for us every time based on the humidity in the environment at that time.
- Lightly sprinkle flour on a flat surface, and knead the dough for about 10 minutes to create a dough that is stiff, yet smooth and elastic in texture. Shape the dough into a ball with your hands and then transfer to a greased bowl. Turn it over in the bowl, cover with plastic wrap, and place it in a warm spot of the kitchen to rise until it has doubled in size.
- Punch the dough down in the bowl with your fists, and then separate it into two portions. Place the two balls of dough onto a lightly floured smooth and dry surface. Cover each with plastic wrap and allow it to rest for at least 10 minutes.
- Roll each portion of dough into a large rectangle and then begin to roll from one of the long ends to the other long end. Use water and your fingertips to moisten the edge and seal it to the rolled loaf. Taper each end.
