16 ounces dried black-eyed peas
1 cup chopped celery
1 cup chopped onion
1 cup chopped carrots or 1 cup chopped bell pepper (may mix)
5 cloves garlic, minced
1 -2 bay leaf
1 lb andouille sausages or 1 lb kielbasa, cut into chunks
1 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper
1 tablespoon cajun spices or 1 tablespoon spice essence
49 1/2 ounces chicken broth (large can)
cayenne pepper sauce or Tabasco sauce, to taste

Steps:

  • Sort peas and soak in plenty of water overnight.
  • Before cooking, drain and rinse.
  • Place all ingredients into crock pot and cook on low for 8-10 hours or until peas are nicely tender.
  • Remove bay leaves before serving.
  • Serve with additional tabasco, if desired.

1 cup chopped yellow onion
1 ½ cups beef broth (low sodium)
1 (8 ounce) can tomato sauce
1 (14.5 ounce) can stewed tomatoes
2 (15.8 ounce) cans black-eyed peas (rinsed and drained)
1 (15.25 ounce) can whole kernel yellow corn (drained)
¼ teaspoon salt (or to taste)
¼ teaspoon black pepper (or to taste)
2 tablespoons chopped fresh parsley (optional garnish)

Steps:

  • Cook sausage and onion over medium high heat in a Dutch oven or soup pot until sausage is browned and no longer pink (about 5 to 6 minutes). Crumble sausage with a wooden spoon as it is cooking. Drain off grease.
  • Add beef broth, tomato sauce, stewed tomatoes with juices, black-eyed peas, corn, salt and pepper. Stir to combine.
  • Bring to a simmer over medium high heat. Reduce heat as needed to maintain a gentle simmer (medium to medium low).

This black-eyed peas recipe is comfort food at its best! A soul food staple, black-eyed peas are cooked with bacon and sausage until perfect and creamy. Eat for New Year's Eve if you want prosperity in the new year, or all year long if you are craving something delicious.

1 teaspoon olive oil
8 ounces thick bacon (diced)
3 ounces smoked sausage (calabresa, kielbasa or andouille) (diced)
1 medium onion (chopped)
4 cloves garlic (minced)
1 pound dried black-eyed peas
1 teaspoon Kosher salt (or to taste)
½ teaspoon freshly ground black pepper (or to taste)
2 bay leaves
5 cups chicken broth (or water)
1 tablespoon tomato paste (optional)
⅓ cup chopped fresh parsley
¼ cup chopped scallions

Steps:

  • Optional: Place the black-eyed peas in a large bowl and add enough cold water to cover them. Soak overnight, then drain and rinse. (see notes)
  • In a large Dutch Oven or heavy bottomed pot, heat the oil, over medium-high heat. Add the bacon and sausage, and cook until lightly browned, about 5 to 8 minutes. Then, stir in the chopped onion and garlic, cooking until softened and fragrant, about 4 to 5 minutes.
  • Stir in the black eyed peas, salt, pepper and bay leaves. Pour in the chicken stock and bring to a boil. Once boiling, lower the heat, cover and simmer for 1 to 1 ½ hours, or until the peas are tender.
  • Remove about ½ cup of black-eyed peas and place in a bowl. Smash with a fork, then return the smashed peas to the pot. Cook on medium until the liquid thickens. Optional: Stir in the tomato paste if you prefer the broth to have a stronger color.
  • At this point, you can add more liquid if you like saucy black-eyed peas or turn the heat up and wait for the liquid to evaporate, if you prefer them to be dryer.
  • Discard the bay leaves and stir in the parsley and scallions. Taste for seasoning and adjust as needed.
  • Serve immediately!

2 teaspoons olive oil
1 large onion, chopped

1 tomato, diced
13 ounces smoked sausage, thinly sliced

Steps:

  • In a large skillet, fry diced bacon until fat is rendered and bacon is slightly crisp. Drain bacon to a paper towel; pour the bacon grease in a bowl to use later.
  • Add 2 tablespoons bacon fat back to the skillet; sauté celery, green peppers, onion and garlic until onions are translucent.
  • Meanwhile, add undrained black-eyed peas, 1 pea can of warm water, salt, cayenne pepper (optional), diced tomato and fried bacon to a Dutch oven or large, deep saucepan.
  • Once the vegetables are tender, add them to the black eyed peas.
  • To the same skillet, add 1 tablespoon reserved bacon grease; fry smoked sausage until lightly browned and crisp.
  • Add the smoked sausage to the peas and stir.
  • Bring the stew to a simmer, and continue to simmer for 40 minutes or until the stew is to your desired thickness.

1 large red onion minced

6 cups chicken broth
1/4 cup tomato paste
2 teaspoons dried oregano
1 bay leaf
1 teaspoon coarse sea salt (or granulated salt)
1 teaspoon crushed red pepper flakes
3 tablespoons brown sugar
1/2 pound turkey kielbasa cut 1" pieces
1/3 cup chopped green bell pepper
1/3 cup coarsely-chopped parsley

Steps:

  • In pressure cooker, saute bacon until crisp. Add onion and garlic and cook until onion is softened, about 3 minutes. Add peas to bacon mixture and stir well. Add broth, tomato paste, oregano, bay leaf, salt, pepper flakes, and brown sugar. Stir until thoroughly mixed. Secure lid. Over high heat, develop steam to high pressure. Reduce heat to maintain pressure and cook 5 minutes. Release pressure according to manufacturer's directions. Remove lid. Add kielbasa, bell pepper, and parsley to pea soup.
