Rose-hip-hibiscus tea bags impart an aromatic quality to these tiny gelee cubes.

Number Of Ingredients 6

2 1/4 cups cold water
4 rose hip-hibiscus tea bags
8 large basil leaves, torn (1/4 cup)
14 large mint leaves, torn (1/4 cup)
Scant 2 1/4 teaspoons unflavored gelatin (one 1/4-ounce envelope)
1/2 cup sugar

Steps:

  • Bring 2 cups water to a boil. Add tea bags and herbs. Remove from heat and let stand for 10 minutes. Strain through a fine sieve; discard solids.
  • Sprinkle gelatin over remaining 1/4 cup water, and let stand until softened, about 5 minutes. Bring 1/2 cup tea mixture to a simmer in a small saucepan over medium heat. Add sugar, then softened gelatin, stirring, until dissolved. Strain through sieve into remaining tea mixture.
  • Pour mixture into a 5-by-9-inch loaf pan. Refrigerate until set, 4 hours or up to overnight. Cut into 1-inch cubes and carefully lift out.

8 cups 3/4-inch seedless watermelon cubes (from 1/2 small watermelon, rind removed), plus more for garnish
Scant 2 1/4 teaspoons unflavored gelatin (one 1/4-ounce envelope)
1/4 cup cold water
1/4 teaspoon coarse salt
1 1/2 teaspoons fresh lemon juice
Rose Hip-Hibiscus "Ice Cubes"(optional)
Mint or basil sprigs, for garnish

Steps:

  • Puree watermelon cubes in a blender or food processor until smooth. Press through a fine sieve into a large bowl and discard solids. Measure 3 cups strained juice.
  • Prepare an ice-water bath. Sprinkle gelatin over cold water, and let stand until softened, about 5 minutes. Bring 1/2 cup watermelon juice and salt to a simmer in a small saucepan over medium-high heat. Add softened gelatin, stirring to dissolve. Strain into a bowl set in ice water bath. Stir in remaining 2 1/2 cups watermelon juice and the lemon juice.
  • Let stand, stirring often, until just beginning to gel, 15 to 20 minutes. Divide among 4 glasses. Garnish with watermelon cubes. Refrigerate until set, at least 2 hours or up to overnight. Top with rose hip-hibiscus "ice cubes" if desired, and garnish with mint or basil sprigs.

4 tea bags black tea
2 tea bags rose hip tea (or hibiscus tea, red tea bags)
2 cups (480ml) cold water
1/8 cup (30g) granulated sugar (use up to 1/2 cup sugar)
2 lemons (only juice)
ice cubes

Steps:

  • Steep the tea bags for 5 minutes in boiling water and discard them afterward. Pour it into a 1-liter glass bottle or large jug.
  • Add the cold water, juice of two lemons, and granulated sugar. Stir until dissolved.
  • Leave it for one hour on your countertop to cool down. Store if for 2-3 hours in your fridge until properly chilled.
  • Serve over ice.
