CRUNCHY VEGGIE RANCH EGG SALAD



Crunchy Veggie Ranch Egg Salad image

6 hard-boiled eggs
2 green onions, chopped, greens only
1/2 small red pepper, finely chopped
1 carrot, peeled and finely chopped
1 large celery stalk, finely chopped
1/2 cup peas, cooked and cooled
2 tablespoons sweet pickle relish
1/3 cup Hidden Valley® Original Ranch® Dressing
Salt and pepper

Steps:

  • Place chopped eggs in a medium bowl, and mash gently with a fork until pieces are small and uniform. Add green onions, carrot, celery and peas and toss with a spoon. Top with relish and Hidden Valley® Original Ranch® Dressing and stir. Season with salt and pepper to taste. For school lunch: pack in small reusable container with a side of whole grain crackers or melba toasts for dipping, spreading, or scooping. Or make it into a sandwich with whole grain bread.

Roasted Vegetables image

The key to roasting all kinds of vegetables is to know the right temperature for cooking them. Dense, low-moisture vegetables (like the roots and squashes in this recipe) need lower heat and more time in the oven than vegetables with more moisture, like eggplant or zucchini. Then simply toss your vegetables with oil and season with salt and pepper before roasting. Top your roasted vegetable with a couple of fried eggs or a dollop of yogurt, or both, and you have a meal.

2 to 3 pounds root or dense vegetable, peeled if you like and cut into 1-inch chunks or wedges (carrots, beets, potatoes, sweet potatoes, turnips, radishes, rutabaga, winter squashes)
Oil (olive, coconut or grapeseed)
Salt and pepper
Fried eggs and/or plain yogurt
Fresh herbs, torn or chopped

Steps:

  • Heat oven to 425 degrees. Toss vegetables with oil, salt, and pepper. Roast, 30 minutes to an hour, stirring at least once or twice during roasting for even cooking and browning.
  • Serve with fried eggs and/or yogurt, ground black pepper and plenty of torn herbs on top.

ROASTED ROOT VEGETABLES WITH EGGS



Roasted Root Vegetables with Eggs image

2 or 3 small beets, plus 3 cups (110 g) beet greens, washed and chopped
4 tablespoons (60 ml) extra virgin olive oil
Kosher salt
1 apple, unpeeled, sliced into eighths
2 small turnips
2 cups sliced carrots, cut into 1/2-inch (12-mm) coins
1 tablespoon chopped fresh rosemary
1 garlic clove
1 tablespoon capers in brine, drained and coarsely chopped
1 tablespoon Dijon mustard
1 tablespoon chopped fresh parsley
1 to 2 tablespoons unsalted butter
2 to 4 eggs
Fleur de sel, for sprinkling

Steps:

  • Preheat oven to 425 F (220 C).
  • Put the beets, 1 tablespoon of the olive oil, and 1/8 teaspoon salt on a sheet of aluminum foil and wrap thoroughly. Roast for about 1 hour and 30 minutes
  • Meanwhile, toss the apple, turnips and carrots with 2 tablespoons olive oil, 1 teaspoon salt, and the rosemary. Place on a baking sheet and roast beside the beets until browned, 15 to 20 minutes longer, and the beets are fork-tender. While warm, but not hot, rub the skin off the beets with a paper towel or clean kitchen towel. Slice the beets.
  • When everything is roasted, heat the remaining 1 tablespoon olive oil and the garlic in a large saute pan over medium-high until browned and fragrant. Discard the garlic. Add the beet greens and capers and saute until wilted. Add the roasted vegetables and saute until heated through. Taste for salt and adjust as needed. Remove from the heat, toss with the mustard and parsley, and set aside.
  • When it comes to frying the eggs, you may need to either work in batches or have two pans going at once. Heat 1 tablespoon of the butter in a nonstick saute pan over high heat. Crack 2 eggs into a small bowl and gently slide them into the butter. (If you break a yolk, discard the egg and try again.) Reduce the heat to medium and cook until the whites are set but the yolks are runny, about 2 minutes. When ready, give the pan a gentle shake to loosen the eggs.
  • Meanwhile, mound the roasted vegetables onto two plates. Slide the eggs on the vegetables, and sprinckle with fleur de sel. Repeat with any remaining butter and eggs.
  • The roasted vegetable mixture keeps, refrigerated, for up to 2 days.

HEAVY CREAM FRIED EGGS



Heavy Cream Fried Eggs image

Rather than cooking eggs in butter or oil, you can "fry" them in heavy cream and upgrade their flavor at the same time. As the heavy cream boils, the liquid butter fat separates from the butter solids, which then start to brown -- essentially frying the eggs and imparting a nutty flavor. Here, we season the heavy cream with fresh thyme, garlic and red pepper flakes, creating the perfect egg topper for avocado toast but the possibilities are endless. The secret to success is starting with a thin layer of cream in a nonstick skillet and a tight-fitting lid. If you don't have a lid, no worries; a heatproof plate or a baking sheet will work just fine.

5 sprigs fresh thyme
1 clove garlic, grated
Pinch crushed red pepper flakes

Steps:

  • Add the heavy cream, thyme sprigs, garlic, red pepper flakes, 1/4 teaspoon salt and a few grinds of black pepper to an 8-inch nonstick skillet. Crack the eggs on top and season with 1/4 teaspoon salt and a few grinds of black pepper. Bring to a simmer over medium-low heat and cook until the cream starts to caramelize around the edges and the egg whites are just set, 3 to 4 minutes. Remove the skillet from the heat and cover with a tight-fitting lid until the yolks are slightly firm but still a bit runny, about 1 minute. Use a spatula to remove the eggs to a plate; discard the thyme sprigs.

TOMATO GRITS WITH FRIED EGGS



Tomato Grits with Fried Eggs image

4 large plum tomatoes
3/4 cup quick-cooking grits
Kosher salt and freshly ground pepper
4 slices bacon
4 large eggs
1 cup grated cheddar cheese

Steps:

  • Grate 3 tomatoes into a bowl, discarding any remaining skin. Chop the remaining tomato and set aside. Bring 3 cups water to a boil in a medium saucepan. Add the grits and the grated tomatoes; reduce the heat to medium and cook, stirring occasionally, until thickened, about 5 minutes. Season with salt and pepper. Remove from the heat and cover to keep warm.
  • Meanwhile, cook the bacon in a medium nonstick skillet over medium-high heat, turning, until crisp, about 8 minutes. Remove to a paper towel-lined plate; discard all but 1 tablespoon drippings from the skillet. Let the bacon cool slightly, then crumble. Heat the bacon drippings over medium-high heat. Crack in the eggs and cook until the whites are set and the yolks are cooked to desired doneness, 2 to 5 minutes.
  • Top each serving of grits with bacon, chopped tomato, cheese and a fried egg; season with salt and pepper.

Salt and pepper
4 large eggs
1 head red leaf lettuce, trimmed and leaves torn into bite-size pieces
1 tablespoon lemon juice plus wedges for serving

Steps:

  • Preheat oven to 425 degrees. On a rimmed baking sheet, toss potatoes, onion, carrots, beet, and rosemary with 2 tablespoons oil; season with salt and pepper. Roast vegetables until golden and tender, about 30 minutes.
  • Meanwhile, in a straight-sided skillet, heat 2 inches water over medium until a few bubbles rise to the top. Crack eggs, one at a time, into a small bowl and gently pour into skillet. Cook, undisturbed, until whites are just set and yolks are still runny, 3 to 4 minutes. With a slotted spoon, transfer eggs to a paper-towel-lined plate.
  • Transfer roasted vegetables to a large bowl and toss with lettuce, lemon juice, and remaining tablespoon oil; season with salt and pepper. Divide among four plates, top with poached eggs, and serve with lemon wedges.
