Here's a good basic recipe for corn dogs. I'm looking forward to trying some of the suggestions from reviews as to adding dry mustard or other seasonings to the batter.

3/4 cup yellow cornmeal
3/4 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1 egg, beaten
2/3 cup milk
6 -8 small wooden sticks
6 -8 hot dogs
oil, for deep-fat frying

Steps:

  • Combine cornmeal, flour, baking powder, salt and egg; mix well.
  • Stir in milk to make a thick batter; place in a tall narrow glass. Let stand 4 minutes to thicken.
  • Meanwhile, heat oil to 375 degrees F.
  • Pat hot dogs dry. Dust with flour if desired. Insert sticks in hot dogs; dip into batter. Let excess drip off.
  • Fry until golden brown, about 5-6 minutes. (I've found it works best to fry them one at a time. Unless you have a fryer that is big enough to handle more without them touching.).
  • Drain on paper towel.

2 lbs chicken wings, cut up buffalo style
6 whole serrano chili peppers
6 whole red chili peppers
10 whole jalapeno peppers
2 cups white wine
1 bottle Tabasco sauce
1/2 bottle Worcestershire sauce
10 tablespoons cayenne pepper
10 tablespoons durkee red hot sauce
1 tablespoon salt
3 tablespoons pepper
1/2 cup vinegar

Steps:

  • In a blender, carefully puree the peppers, wine, vinegar and all spices.
  • Caution, wear rubber gloves or your fingers may burn!
  • Put the puree into a bowl and marinate the wings in the bowl in the fridge for 2-3 days.
  • After that carefully remove the wings and broil them until cooked.
  • Usually approx 15 mins (+/-5 mins).
  • Take the marinade, put it on the stove, add 1/4 cup sugar and heat to a boil.
  • reduce until thick.
  • Pour over wings and re-broil for about 5 more minutes, serve with soda water for maximum heat effect but keep plenty of ice water handy.
  • Drinking milk helps too.

Who doesn't like corn dogs? I bet not many. This recipe is from the Gourmet web exclusive and these are very yummy! The original recipe calls for grilling the hot dogs first to bring out the smokier taste to the corn dogs and they do, but if you are in a hurry like many of us, you can go from opening the package of hot dogs to this recipe and the results will still be great. This recipe calls for 8 hot dogs, but I find that there is usually about 1/3 of the batter leftover every time. Not a problem, you can use the leftover batter to fry up anything else such as asparagus, green beans, onions, etc after making corn dogs. They will taste wonderful. The direction calls for a tall glass. The tall glass will hold the batter and you dunk the hot dogs in the glass which makes it much more convenient than rolling hot dogs around in a bowl with a batter.

8 hot dogs
3 tablespoons flour
1/2 cup flour
1 1/2 cups cornmeal
1 1/2 teaspoons baking powder
1 teaspoon sugar
2 tablespoons vegetable oil
3/4 teaspoon salt
1/2 teaspoon baking soda
1/8 teaspoon cayenne
2 large eggs
1 1/4 cups buttermilk, well shaken
oil, for frying

Steps:

  • Insert a wooden stick into each hot dogs. Put 3 T flour on a plate and roll hot dogs in flour to coat, shaking off excess.
  • Heat 3 inches oil to 350 degrees F in a deep pot over medium high heat.
  • Whisk together cornmeal, 1/2 C flour, 2 T oil, baking powder, sugar, baking soda, cayenne, and salt in a medium bowl. Add eggs 1 at a time, whisking well after each addition. Whisk in buttermilk.
  • Transfer some of batter to a tall glass, filling it almost to the top.
  • Working in batches of 2 or 3, dip hot dogs 1 at a time into glass of batter to coat. Add more batter to glass if necessary. Fry, turning occasionally until golden brown all over, about 2-3 minutes.
  • Transfer corn dogs to paper towels to drain. Repeat until all hot dogs are done.
  • You may have leftover batter, use the batter to dip veggies such as asparagus, green beans, onions and fry for 1-2 minutes until batter is used up. Or you can open another package of hotdogs and fry 4-5 more.

Some of the best ever. Fantastic with spicy mustard. Starlog: June 3 2016: After a few questions lately, I'd like to point one thing out. If you want a quality corndog, buy a quality hot dog to build your base. Get the brand and style YOU like. Those under a dollar a pkg brands like BarS and even Oscar M's cheap ones will not give you a proper corn dog. Well, unless you like those of course, then by all means go for it.

6 quality hot dogs
1/2 cup flour
1 tablespoon sugar
1 teaspoon dry mustard
1 teaspoon baking powder

1/2 cup milk
1 egg, lightly beaten
1 tablespoon melted shortening
6 skewers (or sticks)

Steps:

  • Combine the cornmeal, flour, sugar, mustard, baking powder and salt, mixing well.
  • Add the milk, egg and shortening, mixing until very smooth.
  • Pour the mixture into a tall glass.
  • Put the hot dogs on sticks.
  • Dip them into the cornmeal batter to coat them evenly.
  • Deep fry in oil heated to 375 degrees until golden brown, about two minutes.
  • Drain on paper towels.
