ROOIBOS LIMEADE
In this tropical take on the Arnold Palmer, lime wedges, thyme sprigs, and fresh ginger are muddled together, then mixed with chilled rooibos tea.

- Combine sugar, ginger, 8 thyme sprigs, and quartered lime in a cocktail shaker. Muddle until lime quarters release their juices and ginger and thyme begin to break down. Add lime juice, stirring until sugar has completely dissolved. Strain mixture into a pitcher partially filled with ice, or divide evenly among 4 ice-filled glasses. Top with tea, stirring to evenly combine. Garnish with thyme sprigs, ginger slices, and lime wheels; serve.
ROOIBOS TEA AND GRAPEFRUIT-ADE

- Brew tea in 2 cups boiling water 4 minutes; strain or remove bag. Let cool completely. Meanwhile, combine sugar and 1/2 cup water in a small saucepan. Bring to a boil, stirring until sugar is dissolved. Let cool completely, then combine with grapefruit juice and tea in a pitcher. Refrigerate until ready to serve, up to 2 days. Serve over ice, garnished with grapefruit slices.
ROOIBOS CHAI
Rooibos leaves, which are grown in South Africa, resemble tea leaves but come from a different plant and don't have any tannins. They have recently made an appearance on store shelves here. You can substitute black tea in this recipe; add it during the last 5 minutes of simmering.

- Combine all of the ingredients in a large saucepan and bring to a boil over moderate heat. Reduce the heat to moderately low and simmer, stirring occasionally, until pale rust colored, about 20 minutes.
- Strain the chai through a fine sieve and serve hot.

HOMEMADE CHAI ROOIBOS CONCENTRATE(MADAGASCAR)
Smooth Madagascar vanilla is added to rich Rooibos red tea to make a refreshing drink you will enjoy, and no caffeine! Rooibos tea has no tannins so will not get bitter. Adapted from the Nourishing Gourmet.

Steps:
- Crack the spices (excluding the cinnamon sticks and ginger). You can use a mortar and pestle, or a quick whiz in a coffee grinder.
- . Add to a medium pot with the cinnamon sticks and ginger and add 6 cups of filtered water.
- Bring to a boil and lower the heat to maintain a low simmer. Simmer for 15 minutes.
- Strain. Add the vanilla extract.
- This concentrate will keep up to 10 days in the refrigerator.
- To serve, combine and heat with milk of choice(I like almond or coconut) in a 1 to 1 ratio (per serving, generally use 3/4 cup of concentrate to 3/4 cup of milk) and sweetener of choice. Or, if you like, just add to water to make tea.

ROOIBOS ICED TEA
High in anti-oxidants and also caffeine-free, this tea is not only refreshing but also a wonderfully healthy thirst quencher. Rooibos and Honeybush teas are both available in local supermarkets in Maryland. I have also purchased this tea from Cost Plus World Market.

- Place teabags, lemon, mint leaves and sugar in a large pot, pour boiling water onto this and leave to steep.
- Stir occasionally until cold.
- Remove tea bags when tea is cold and refridgerate.
