AVOCADO AND GRILLED CORN SALAD WITH GREEN GODDESS DRESSING
Steps:
- Preheat a grill to medium-high.
- Rub the corn and jalapeno with the oil and grill, turning occasionally, until tender and charred in spots, about 6 minutes for the jalapeno and 12 minutes for the corn. Cut the kernels from the corn cobs and place them in a large bowl. Add the avocado and romaine to the bowl.
- Stem and seed the grilled jalapeno. Combine the jalapeno, mayonnaise, buttermilk, parsley, chives, lemon juice, dill, anchovy, garlic and 1/2 teaspoon salt in a blender and blend until smooth.
- Add just enough of the dressing to coat the salad; season with salt. Toss gently to combine.

- Preheat the oven to 425 degrees F. Measure a 24-inch length of twine, if using, and cut into 4 even pieces.
- Peel back the husks from the cobs but do not remove completely. Remove all of the silk underneath and discard. Drizzle the cobs with some oil and sprinkle with salt and pepper. Pull the husks back up and around the corn.
- Put the corn directly on the oven rack and roast until the corn is tender and the husks are golden brown, 15 to 20 minutes.
- If using twine, pull the husks back and tie with a piece of string. Transfer the cobs, in their husks, to a serving platter.

- Prepare grill for direct-heat cooking over hot charcoal (high heat for gas); see Grilling Procedure .
- Put parmesan in a medium bowl and add olive oil in a slow stream, whisking. Whisk in lime juice, garlic, chipotles, and 1/4 teaspoon each of salt and pepper.
- Rub vegetable oil on corn and cut sides of avocados, then season with 1/8 teaspoon each of salt and pepper. Grill avocados, cut sides down, and corn, covered only if using a gas grill, turning corn occasionally, until golden-brown, 3 to 4 minutes.
- Peel avocados and thinly slice. Cut corn kernels from cobs.
- Toss romaine with dressing and serve topped with avocado and corn.

- Heat and outdoor grill on high, make sure to lightly oil the grates (you can also heat an indoor griddle or large grill pan.)
- Prepare tahini sauce according to this recipe. If you want the tahini sauce to be a little more runny like a dressing, add just a little bit of water and stir well until you get the desired consistency.
- When grill is hot, arrange the corn on top and cook on high for 10 minutes, turning as each part gets nicely charred. Remove from heat and set aside.
- Brush the Romaine lettuce with extra virgin olive oil on both sides. Arrange the lettuce on the hot grill. Grill on one side for 3 minutes or so, turn over, using a pair of tongs, and grill on the other side for another 3 minutes. The lettuce should soften quite a bit and gain some good char on both sides. Remove from heat and arrange the grilled lettuce on a large platter. (Turn grill off at this point)
