Vegetarians and meat-eaters alike will devour these comforting lasagna rolls. We use thinly sliced eggplant in place of pasta to cut the carbs. Preroasting the eggplant helps develop the flavor and softens the slices for easy rolling.

3 large eggplants
½ teaspoon salt, divided
3 tablespoons extra-virgin olive oil
2 cups crushed tomatoes
½ cup chopped fresh basil, divided
3 teaspoons minced garlic, divided
1 cup frozen chopped spinach, thawed
2 ½ cups part-skim ricotta cheese
¼ cup grated Parmesan cheese
½ teaspoon ground pepper
1 cup shredded part-skim mozzarella cheese

Steps:

  • Position racks in the middle and upper third of oven; preheat to 425 degrees F. Coat 2 rimmed baking sheets with cooking spray.
  • Slice each eggplant lengthwise into 1/4-inch-thick strips. Discard any small or misshapen pieces. You should have about 24 strips. Sprinkle the strips with 1/4 teaspoon salt and let stand for 15 minutes.
  • Pat the eggplant slices dry and brush both sides with oil. Place on the prepared pans, overlapping the slices a little if necessary. Roast until soft and beginning to brown, swapping the pans from top to bottom midway, about 20 minutes. Let cool slightly.
  • Meanwhile, combine tomatoes, 1/4 cup basil, 2 teaspoons garlic and the remaining 1/4 teaspoon salt in a large bowl. Spread 1/2 cup of the mixture in a broiler-safe 9-by-13-inch baking pan. Squeeze spinach to remove any excess liquid. Combine the spinach, ricotta, Parmesan, pepper and the remaining 1 teaspoon garlic in a medium bowl.
  • When the eggplant is cool enough to handle, spread a generous tablespoon of the ricotta mixture on each slice. Starting from the narrowest end, roll up the slices and place in the baking pan seam-side down. Top with the remaining tomato mixture.
  • Bake the rolls on the middle rack until the tomato mixture is hot and bubbling, 40 to 45 minutes. Remove from the oven and preheat the broiler to high.
  • Top the rolls with mozzarella. Broil until the cheese is bubbling and beginning to brown, 1 to 2 minutes. Sprinkle with the remaining 1/4 cup basil and serve.

2 medium eggplants ((sliced into 12 1/4-inch slices lengthwise* // OR 12 lasagna noodles, boiled))
2 medium lemons, juiced
1 12- ounce block extra-firm tofu ((drained and pressed dry for 10 minutes))
3 Tbsp nutritional yeast
1/2 cup fresh basil ((finely chopped))
1 Tbsp dried oregano
3-4 Tbsp extra virgin olive oil
~1/2 tsp each salt + pepper
1/4 cup vegan parmesan cheese
Vegan parmesan cheese
2-3 cups favorite marinara/red sauce
Fresh basil ((optional // chopped))

Steps:

  • Preheat oven to 425 degrees F (218 C).
  • Salt eggplant slices on both sides and arrange in a colander in the sink to remove excess water/bitterness for 15 minutes. (If using lasagna noodles, boil, drain and set aside.)
  • Rinse salted eggplant slices well and dry thoroughly between two clean absorbent towels. Lay a baking sheet on top and place something heavy on top to absorb excess moisture.
  • Arrange slices on 1-2 baking sheets in an even layer and bake oven for 13-15 minutes. Set aside and reduce heat to 375 degrees F (190 C).
  • While eggplant is baking, add all tofu filling ingredients to a food process or blender and pulse to combine, scraping down sides as needed. You are looking for a semi-pureed mixture with bits of basil still intact. Taste and adjust seasonings as needed, adding more salt and pepper for flavor, nutritional yeast for cheesiness, and lemon juice for brightness.
  • Pour about 1/2-1/3 of the marinara sauce into an 8x8 baking dish (or similar sized dish) and reserve rest of sauce for topping / serving. Set aside.
  • Scoop generous amounts (about 3 Tbsp) of ricotta filling onto each eggplant slice or lasagna noodle and roll up. Place seam side down in the sauce-lined baking dish. Continue until all filling and noodles or eggplant strips are used up. Pour more sauce down the center of the rolls for extra flavor (see photo).
  • Bake for 15-23 minutes, or until sauce is bubbly and warm and the top of the rolls are very slightly browned.
  • Serve immediately with additional vegan parmesan cheese and fresh basil. Leftovers keep for a couple of days, though best when fresh.

2 eggplants
2 cups ricotta cheese
1 cup shredded mozzarella cheese
½ cup shredded parmesan cheese
¼ cup fresh basil, chopped
1 egg

1 cup marinara sauce

Steps:

  • Preheat oven to 350ºF (175ºC).
  • Slice the ends the eggplants and slice them into ¼ -inch (½ cm) slices and lay them out on a baking sheet covered in parchment paper.
  • Season with a pinch of salt on both sides of the eggplant slices and let them sweat for 20 minutes, then dry them with a paper towel. Once dried; add a pinch of pepper.
  • Bake for 20 minutes, or until soft.
  • Meanwhile, in a medium-size bowl, mix ricotta cheese, mozzarella cheese, parmesan cheese, basil, and egg.
  • Remove eggplant slices from the oven and turn oven to 400ºF (200ºC).
  • Spoon about 2 tablespoons of the mixture onto eggplant slice then roll it up, repeating for all slices.
  • In a 11x17-inch (28 x 43cm) baking sheet, pour ½ of the marinara sauce, then add all the roll-ups seam down. Pour remaining ½ of marinara sauce, and top with basil and parmesan.
  • Bake for 25 minutes, or until cheese is melted and golden brown.

1 egg, beaten

Cooking spray
1/2 teaspoon salt
3 cups fresh spinach leaves
SAUCE:
1 tablespoon olive oil
2 garlic cloves, minced
1 can (14-1/2 ounces) diced tomatoes
1 can (15 ounces) tomato puree
3 tablespoons minced fresh basil or 3 teaspoons dried basil
2 teaspoons sugar
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
FILLING:
1 carton (15 ounces) reduced-fat ricotta cheese
1/4 cup grated Parmesan cheese
1/2 teaspoon dried oregano
1/4 teaspoon pepper
Dash ground nutmeg
TOPPING:
1/4 cup grated Parmesan cheese
3 tablespoons panko bread crumbs
Minced fresh parsley, optional

Steps:

  • Preheat oven to 400°. Cut eggplants lengthwise into eighteen 1/4-in.-thick slices; reserve leftover pieces. Line 2 baking sheets with foil. Coat both sides of eggplant slices with cooking spray; place in a single layer on prepared pans. Sprinkle eggplant with 1/2 teaspoon salt. Bake until just pliable (do not soften completely), 10-12 minutes; cool slightly. , Meanwhile, in a large saucepan, bring 1/2 in. of water to a boil. Add spinach; cover and boil 2-3 minutes or until wilted. Drain spinach and squeeze dry. Chop spinach and set aside., Finely chop leftover eggplant to measure 1 cup (discard remaining or save for another use). In a large saucepan, heat oil over medium heat. This recipe combines lasagna and the classic favorite eggplant parmesan. The lasagna rolls are stuffed with fried eggplant, 3 cheeses and nestled into a homemade tomato sauce.

1 eggplant (12 to 14 ounces)
Kosher salt
6 tablespoons extra-virgin olive oil, plus more if needed
1 onion, chopped
2 28-ounce cans crushed tomatoes
4 cloves garlic, crushed
2 sprigs basil, plus leaves for topping
2 teaspoons sugar
3/4 cup all-purpose flour
3 large eggs
1 1/4 cups breadcrumbs
1/2 cup plus 3 tablespoons grated Parmesan cheese
1 teaspoon garlic powder
2 teaspoons dried Italian seasoning
Freshly ground pepper
1 pound lasagna noodles (not no-boil)
3/4 cup whole-milk ricotta cheese
2 1/2 cups freshly grated mozzarella cheese (about 1 pound)

Steps:

  • Slice the eggplant lengthwise into twelve 1/8- to 1/4-inch-thick slices. Arrange the eggplant slices on a baking sheet and sprinkle both sides generously with salt. Set aside to draw out the moisture, about 40 minutes. Transfer the eggplant to a colander and rinse. Pat very dry with paper towels.
  • Meanwhile, make the tomato sauce: Heat 3 tablespoons olive oil in a large pot over medium-high heat. Add the onion and cook, stirring occasionally, until softened, about 5 minutes. Stir in the tomatoes, 1/2 cup water, the garlic, basil, sugar and 1 teaspoon salt. Bring to a boil, then reduce the heat and simmer until slightly thickened, 30 minutes. Discard the basil sprigs and puree the sauce with an immersion blender (or puree in a regular blender in batches).
  • Mix the flour and 1 teaspoon salt in a shallow bowl. Beat the eggs in a separate shallow bowl. Combine the breadcrumbs, 3 tablespoons Parmesan, the garlic powder, Italian seasoning, 1 teaspoon salt and 1/2 teaspoon pepper in a third shallow bowl. One at a time, dip each eggplant slice in the flour, then the eggs, then the breadcrumbs and transfer to a baking sheet.
  • Heat the remaining 3 tablespoons olive oil in a large nonstick skillet over medium-high heat. Add 4 eggplant slices and cook until golden brown and crisp, 1 to 2 minutes per side. Remove to a paper towel-lined baking sheet. Repeat with the remaining eggplant, adding more oil to the skillet as needed.
  • Meanwhile, bring a large pot of salted water to a boil. Add the lasagna noodles and cook as the label directs for al dente. Remove 1/2 cup cooking water, then drain the noodles. Stir the reserved cooking water into the tomato sauce.
  • Assemble the lasagna rolls: Preheat the oven to 375 ̊ F. Pour 5 cups of the tomato sauce into a 9-by-13-inch baking dish. Spread 1 tablespoon ricotta on a lasagna noodle; top with 1 tablespoon Parmesan, 3 heaping tablespoons mozzarella, another lasagna noodle and 2 eggplant slices to cover the length of the entire noodle. Top the eggplant with 2 heaping tablespoons of the tomato sauce. Starting with a short end, roll up the stack into a spiral. Use a sharp knife to slice the spiral in half to make 2 spirals. Place each piece in the baking dish cut-side down with the wavy edges of the noodle facing up. Continue with the remaining lasagna noodles and eggplant slices until you have 12 spirals in the baking dish. Top with any remaining ricotta, Parmesan and mozzarella.
  • Cover the dish with foil and bake until the cheese is melted and the sauce is bubbling, 20 to 25 minutes. Uncover and continue to bake until browned on top, 10 to 12 more minutes. Top with basil and serve with any remaining tomato sauce.

1 pound lasagna noodles
Nonstick cooking spray, for spraying baking sheet
2 tablespoons olive oil
4 cloves garlic, minced
1 medium onion, diced
1 red bell pepper, diced
24 ounces white mushrooms, chopped
2 yellow squash, diced
2 zucchini, diced
1/2 cup white wine
1/2 teaspoon crushed red pepper flakes
Salt and freshly ground black pepper
One 28-ounce can diced tomatoes, drained
1/4 cup tomato paste
1/4 cup chopped fresh parsley
32 ounces ricotta
1/2 cup grated Parmesan
2 large eggs
Salt and freshly ground black pepper
1 1/2 pounds shredded fresh mozzarella
Grated Parmesan, for sprinkling

Steps:

  • For the noodles: Cook the noodles according to the package instructions. Spray a baking sheet with cooking spray. Drain the noodles and transfer them to the prepared sheet.
  • For the sauce: Heat the olive oil in a large skillet over medium heat. Add the garlic and onions and cook for a minute. Add the red peppers and saute for another minute or so. Add the mushrooms, yellow squash and zucchini and cook for a few minutes. Pour in the wine, add the red pepper flakes and some salt and pepper and stir. Pour in the tomatoes, using your hands to squeeze and crush the tomatoes, and add the tomato paste. Stir to combine, bring to a simmer and let simmer for 20 minutes or so. Stir in the parsley.
  • For the ricotta mix: In a bowl, combine the ricotta, Parmesan, eggs, 1/4 teaspoon salt and some pepper.
  • To assemble: Grab a foil loaf pan and spoon in 1/4 to 1/2 cup of the sauce on the bottom of the pan. Lay out 3 noodles and spoon 1/4 cup of the ricotta mix on each and spread evenly. Roll each noodle tightly and place the rolled noodles in the loaf pan on top of the sauce. Top with more sauce and sprinkle with shredded mozzarella and Parmesan. Repeat with the remaining ingredients. Cook immediately, or cover with foil and freeze.
  • To cook immediately, bake, uncovered, at 350 degrees F until bubbly, about 25 minutes. To cook frozen, remove the loaf pans from the freezer and bake, covered, at 350 degrees F for 40 minutes. Uncover and bake until the cheese is nice and bubbly, an additional 10 minutes.

8 lasagna noodles (boiled per instruction on the package and strained)
1 small eggplant
2 cups shredded cheese, divided (I used jalapeno jack, you can use any other per your choice)
no. 1 onion (sliced thin and long)
1 (24 ounce) jar spicy marinara sauce (or you can make your own sauce, I didn't have time in hand)
1 teaspoon crushed red pepper flakes
1/2 teaspoon dried basil
1/2 teaspoon dried oregano
1/4 teaspoon garlic salt
salt, for sprinkling on eggplant
1/2 teaspoon black pepper (for sprinkling on eggplants)
1/2 teaspoon italian seasoning
2 tablespoons olive oil

Steps:

  • Peel eggplant. Place the eggplant upright on the cutting board and slice the eggplant in long thin vertical slices. Sprinkle some salt and black pepper on eggplant.
  • Heat one tbsp of olive oil in a pan and fry the eggplant slices lightly from both sides. Keep aside.
  • Now heat rest of 1 tbsp of olive oil and put onions in it. Stir-fry until translucent. Add some garlic salt, red crushed pepper, Italian seasoning, dried basil and oregano and mix well. Take onions off gas.
  • Heat the marinara sauce in a pan and adjust the spices per your taste. Now layer the baking dish with 1 cup of sauce in the bottom.
  • Now taking one strip of pasta at a time, start layering it with 2 slices of eggplant, then onions and top it off with some cheese. Start rolling pasta starting from one end and go till end. Put it seam side down in the baking dish. Repeat this process until all the pasta sheets are finished.
  • Cover the pasta completely with the rest of the sauce. Sprinkle rest 1 cup of the cheese on top of it.
  • Bake at 400 degree F in a pre-heated oven for about 25 minutes.
  • Serve with your favorite salad or my favorite Herb Italian Bread (recipe coming soon!) :).

Grill seasoning blend (recommended: McCormick Montreal Seasoning)
1 cup semi-soft garlic and herb cheese (recommended: Alouette or Boursin)
1 cup semi-soft garlic and herb cheese (recommended: Alouette or Boursin)
1 cup ricotta cheese
1/2 cup freshly grated Parmigiano, a couple of handfuls
A few grinds black pepper
6 to 8 soft sun-dried tomatoes, chopped (tender sun-dried tomatoes are available in small pouches in produce department)
2 cups arugula leaves, chopped
1 cup basil leaves, chopped

Steps:

  • Heat a grill pan over high heat. Thinly slice the eggplant, a minimum of 18 slices. Season with salt, pepper and grill seasoning blend. Grill the thin slices to tenderize the eggplant, 2 to 3 minutes on each side or until cooked through. Combine the cheeses, black pepper and sun-dried tomatoes. Top each slice of cooked eggplant with a dab of cheese and some arugula and basil then roll up. The eggplant roll ups should have a few greens sticking out of both ends.

Steps:

  • Heat oven to 450 dgrees.
  • Toss eggplant slices with olive oil garlic 1/2 tsp salt, and 1/4 tsp pepper.
  • Arrange in single layer on oiled baking sheet.
  • Bake until tender, about 12 minutes, tuning once.
  • Cook spinach in boiling salted water for 2 minutes.
  • Drain in colander.
  • When cool enough to handle,squeeze excess water end chop finely.
  • Mix together Ricotta cheese, egg yolk, spinach and parmesan, add 1/4 tsp salt and pepper, mix well.
  • Cook lasangne noodles as directed on package, until tender.
  • Drain and rinse with cold water.
  • Spoon two cups tomato sauce into 13 by 9 baking dish.
  • lay out lasagne noodles on work surface, spread 1/3 cup filling over each noodle, cover with slice of eggplant.
  • Roll up each noodle and arrange seam side down over tomato sauce.
  • Brush top of noodles with water, and spoon remaining tomato sauce down middle of each roll.
  • Cover tightly with foil.
  • Bake in 350 degree oven about 20 minutes.
  • Serve with a mixed green salad.

1 teaspoon olive oil for brushing
2 eggs
2 tablespoons water
1 cup grated Parmesan cheese
1 cup Italian-seasoned breadcrumbs
salt and ground black pepper to taste
2 large eggplants, peeled and sliced into 1/2-inch rounds
2 tablespoons olive oil
1 pound ground beef
48 ounces chunky tomato sauce (such as Prego®)
2 cups shredded mozzarella cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Oil 2 baking sheets and a 9x13-inch baking dish with 1 teaspoon olive oil.
  • Whisk eggs and water together in a shallow dish. Combine Parmesan cheese, bread crumbs, salt, and ground black pepper in a separate shallow dish.
  • Dip eggplant slices into egg mixture, then press each gently into bread crumb mixture. Gently tap off any excess crumbs. Arrange slices on the prepared baking sheets.
  • Bake eggplant slices in the preheated oven until tops are golden brown, 20 to 25 minutes. Flip eggplant and bake an additional 20 to 25 minutes.
  • Remove eggplant from the oven and increase temperature to 400 degrees F (200 degrees C).
  • Heat 2 tablespoons olive oil in a skillet over medium-high heat and stir in ground beef. Season beef with salt and ground black pepper. Cook and stir until beef is browned and crumbly, about 10 minutes. Drain excess grease. Stir tomato sauce into ground beef; bring to a simmer and set sauce aside.
  • Place 1/3 of the eggplant slices on bottom of the dish. Pour 1/3 of tomato sauce with ground beef on top of eggplant layer. Sprinkle 1/3 of mozzarella cheese on top of sauce layer. Repeat 2 more times, finishing with a layer of mozzarella cheese.
  • Bake in the preheated oven until cheese is melted and sauce is bubbling, 10 to 15 minutes. Cool for 5 minutes before slicing.

  • Leave the peel on the eggplant and slice it on the thinest setting lengthwise on a mandolin. You need 14 to 18 slices of eggplant. If some slices don’t get cut evenly as one piece, you can layer a couple of pieces to make one roll up.
  • You will have part of the eggplant left once you get enough slices. Peel this leftover portion and dice it up finely. You will mix it in with the lentil and mushroom filling.
  • Sprinkle approximately 1 teaspoon of sea salt total, divided amongst each slice of eggplant, on both sides and lay overlapping on a baking sheet covered with paper towels. Let this sit for 20 minutes or so to release the moisture from the eggplant. Use clean paper towel to gently press and extract more moisture from the slices and pat dry.
  • While the eggplant is sweating, you can make the tofu ricotta. Start by squeezing out the excess water from the block of firm tofu by using a nut milk bag or clean dish towel and wring out as much water as possible. You could also squeeze the firm tofu into a fine mesh sieve to remove excess moisture.
