Ramen noodle pasta with spinach and chicken is easy to make, inexpensive, and a lot of fun! You will enjoy the taste of the Ramen Noodles just like you did in college but with a lot more flavor of today.

1/2 lb chicken breast
white pepper (five shakes)
1/2 teaspoon olive oil
2 garlic cloves, minced
3 (3 ounce) packages chicken-flavored ramen noodles
3 ounces frozen spinach
fresh ground black pepper
2 eggs
4 tablespoons parmesan cheese (add per taste)

Steps:

  • Cut chicken breast julienne style or cubed, add to sauce pan, saute in olive oil, white pepper and garlic cloves. Cook for only a couple of minutes until you see the chicken turn very light brown.
  • Pour six cups of water into a medium pot, boil, add frozen spinach, 3 packs of Ramen Noodles, and Ramen Chicken spice, add 3 to 4 rotations of crushed black pepper, boil until noodles are soft (2 to 3 minutes max).
  • Crack each egg and stir rapidly in the middle of the pasta mixture, one by one.
  • Ladle into serving bowls and sprinkle generously with parmesan cheese. Enjoy with fork and spoon!

2 tablespoons soy sauce (shoyu tare)
1 tablespoon schmaltz (chicken fat)
1 tablespoon back fat (pork)
1 teaspoon dried red chili
1/4 chopped pork belly
1 (14 1/2 ounce) can chicken broth
2 teaspoons dashi stock (powder)
1 whole egg
1 tablespoon chopped scallion

Steps:

  • Boil egg for 12 minutes. Remove egg and keep water boiling for the noodles.
  • Mix chicken broth and dashi stock powder.
  • Mix soy sauce, red chili, fat, chopped pork belly and soup base.
  • Add ramen noodle, egg and scallions.

1 (10 ounce) package frozen chopped spinach
1 (3 ounce) package chicken-flavored ramen noodles

Steps:

  • Cook the frozen chopped spinach and the flavor packet from the ramen noodles in 2 cups of boiling water for 3 minutes or until spinach is done.
  • Add in the ramen noodles and cook for another three minutes.

4 large eggs
1 tablespoon unsalted butter
1 cup sweet corn
1 tablespoon olive oil
8 ounces fresh spinach
1 quart chicken stock
1 teaspoon red miso
6 ounces ramen noodles
6 ounces cooked chicken
4 green onions, thinly sliced
1 teaspoon toasted sesame oil, for drizzling

Steps:

  • Begin by soft boiling the eggs so they can cool. Heat about 3 inches of water in a small saucepan pver medium heat until boiling. Once boiling, reduce the heat until it's barely a simmer, add the eggs gently and cook for 6 minutes. Remove the eggs with a slotted spoon and place in an ice bath. Let cool completely before peeling.
  • In a small saucepan, heat the butter and add the corn, stirring to coat. You can add a sprinkle of salt and pepper if desired. Place the corn in a bowl. Add the olive oil to the skillet and cook the spinach until it just begins to wilt.
  • Heat the chicken stock just until it's boiling. Whisk in the miso paste. Add the ramen noodles and cook for 2 to 3 minutes - or as long as the noodles call for. As soon as they are finished, begin serving the ramen in bowls. I like to add the noodles, corn, spinach and chicken, then ladle some broth over top. Finish it off with sliced green onions, a drizzle of sesame oil and the soft boiled eggs - cut in half.
