FRESH RANCH DIP
Creamy yogurt served alongside salty chips and vegetables, like crisp Persian cucumber, never disappoints. In this superbly simple recipe, a tub of Greek yogurt is transformed into a delicious dip that's loosely inspired by the dominant flavors of ranch dressing. Add a handful of fragrant dill and chives, brighten things up with a little lemon juice and lemon zest, and you have yourself a party for a crowd (or for one!). This dip can be made a day in advance and travels well if kept cool.

Steps:
- Place the yogurt in a medium bowl. (Save the container for storing your dip.) Add the garlic, dill and chives. Add ½ teaspoon of lemon zest and 1 tablespoon of lemon juice, and season with salt (about 1 teaspoon). Stir to combine and taste for seasoning. Be mindful not to oversalt if you plan to serve this with salty chips. Serve right away or transfer back to the container, cover and store in the fridge for up to 1 day.

Steps:
- Heat the oven to 190C/gas 5/fan 170C. Cut a slice off the top of each head of garlic and place on foil. Spoon over 4 tbsp of the oil, tuck in the thyme and wrap. Season with salt and pepper and bake for up to 1 hour - until the garlic is very soft. Cool.
- Beat the cheese in a bowl until smooth. Squeeze the roasted garlic out of its skin into the cheese and mash with a fork until smoothish. Beat in sufficient oil and/or milk to get a good dipping consistency. Beat in the herbs and season to taste - add a squeeze of lemon too, if necessary.
- Heat 1 tsp oil in a small pan and fry the sliced garlic gently until golden brown (not too brown or it will taste bitter). Drain and scatter the garlic over the dip. Serve the dip in the centre of a large platter of vegetables.

- Wash, peel, and dry either carrots, beets, and/or a small butternut squash. Then, chop the peeled vegetables into approximately 1/2- to 1-inch chunks. Spread the vegetables on a baking sheet and toss in olive oil and salt. Place vegetables in the oven for about 30-35 mins, or until slightly browned and fork-tender.
- Remove the veggies from the oven and let them cool before making the dips. While they cool, prepare other ingredients. Spread nuts on a small baking sheet and place in the oven for about 7 mins until they're toasted. Prep garlic, herbs, etc.
- Once the veggies have cooled, place 2 cups of them into either a high-speed blender or a food processor. If you have leftover veggies, feel free to increase the recipe or just save them for later - roasted veggies are great to have as an easy side dish!
