Easy Roasted Potatoes, Tomatoes And Eggs Skillet image

2 Yukon gold potatoes
3 tbsp olive oil (extra virgin)
1/2 onion (diced)
1/2 tsp sweet smoked paprika
1 15 oz diced tomatoes (canned)
3 eggs (organic)
pinch sea salt
pinch black pepper
handful chives (fresh)

Steps:

  • Cut 2 medium sized Yukon gold potatoes into 1/2 inch thick cubes and add to a large bowl. Pour a generous tablespoon of extra virgin olive oil over the cut potatoes, season with sea salt and freshly cracked black pepper, and toss together until well combined.
  • Add the potatoes into a baking tray lined with parchment paper, and bake into a preheated oven at 350 degrees.
  • While the potatoes are roasting, heat a large frying pan or skillet over medium heat and add 2 tbsp of extra virgin olive oil.
  • 2 minutes later, add the diced onions and minced garlic and mix with the oil.
  • 3 minutes later, add a generous 1/2 tsp of sweet smoked paprika and mix it all together.
  • Add one 15 oz can of diced tomatoes, season with sea salt and freshly cracked black pepper and mix it all together. Lower the fire to low heat and simmer.
  • After roasting the potatoes for 20 minutes, remove them from the oven and transfer them to the pan with the tomatoes, mix it all together until well combined.
  • Crack in 3 large organic eggs and place a lid on the pan.
  • After 4 minutes, remove the lid and cook for an additional 1-2 minutes or until the eggs are cooked to your taste.
  • Remove from the heat, season the eggs with sea salt and freshly cracked black pepper, and garnish with freshly chopped chives.

These weeknight tacos are packed with nutrient-dense broccoli and comforting potatoes for a satisfying meal that comes together in just 45 minutes. The secret to its flavor lies in roasting the vegetables over high heat without stirring, which allows their edges to become smoked and crisp. Creamy egg yolks and deep, smoky paprika meld here, to create a rich sauce. If you're short on time, you can roast the vegetables ahead of time and rewarm them, or even serve them at room temperature. Corn tortillas are used here, but flour tortillas can also be used. 1 pound fingerling or baby white potatoes, sliced crosswise 1/4-inch thick (about 4 cups)

2 teaspoons smoked paprika
10 tablespoons extra-virgin olive oil
Kosher salt and black pepper
8 (6-inch) corn tortillas
8 large eggs
2 avocados, cut into wedges
Salsa, sour cream, cilantro sprigs and lime wedges, for serving

Steps:

  • Heat oven to 450 degrees. On a large rimmed baking sheet, combine broccoli, potatoes, scallions and garlic with the paprika and 6 tablespoons oil. Season with salt and pepper, toss to coat, then spread in an even layer. Roast, undisturbed, until tender and charred in spots, 30 minutes.
  • Stack tortillas and wrap tightly in aluminum foil. Five minutes before the vegetables are done, transfer foil-wrapped tortillas to the oven to warm up.
  • Just before serving, heat 2 tablespoons oil over medium heat in a 12-inch nonstick or cast-iron skillet. Crack in 4 eggs and fry until whites are set and yolks are still runny, about 5 minutes. Transfer to a large plate. Repeat with remaining oil and eggs.
  • Divide vegetable filling and avocado among the tortillas and top each with an egg. Spoon over some salsa and sour cream and garnish with cilantro sprigs. Fold over tortillas to form tacos or enjoy with forks and knives. Serve with lime wedges.

1 bunch fresh parsley
2 cups/500ml cherry tomatoes
1 tablespoon/15ml olive oil
4 fresh thyme sprigs
Salt and freshly ground black pepper
2 tablespoons/30ml olive oil
2 zucchini, cut into very small dice
1 shallot, finely chopped
Salt and freshly ground black pepper
2 tablespoons/30ml butter

Steps:

  • For the tomato stock: Heat the oil in a stockpot over medium-high heat. Saute the carrots, celery and onions. Stir in the ketchup, peppercorns, tomatoes and garlic. Add the basil, parsley and enough water to cover. Simmer over low heat for about 45 minutes. Strain.
  • For the roasted tomatoes: Preheat the oven to 350 degrees F (180 degrees C). Arrange the tomatoes on a baking sheet lined with parchment paper. Drizzle with the oil, add the thyme and season with salt and pepper. Bake for 45 minutes. Let cool.
  • For the zucchini: Heat the oil in a saucepan over medium-high heat. Saute the zucchini and shallots for about 2 minutes. Season with salt and pepper. Add 1 cup (250ml) tomato stock and continue cooking for about 2 minutes. Stir in the butter, and then the chives and parsley.
  • For the latkes: Coarsely grate the potatoes into a large bowl of cold water. Drain. Spread the potatoes and onions on a kitchen towel and roll up. Twist the towel tightly to wring out as much liquid as possible. Transfer the potato mixture to a bowl and stir in the chives, eggs, cayenne and some salt and pepper. Shape the potato mixture into patties.
  • Heat the canola oil in an ovenproof nonstick skillet over medium-high heat until hot but not smoking. Working in batches, if necessary, cook the latkes until golden brown, about 2 minutes per side. Transfer the skillet to the oven and cook for about 5 minutes.
  • Serve the latkes with a scoop of ricotta, the roasted tomatoes, zucchini and fried eggs.

2 tablespoons extra-virgin olive oil, 2 turns of the pan
1/2 pound bulk breakfast sausage, such as maple sausage
1 medium sweet potato, scrubbed clean, cut in 1/2 lengthwise, thinly sliced into 1/2 moons
1 large red onion thinly sliced, divided
2 teaspoons chili powder, 2/3 palm full
1 teaspoon ground cumin, 1/3 palm full
2 teaspoons ground coriander, 2/3 palm full
Salt and pepper
3 yellow vine ripe tomatoes, seeded and diced
1 small jalapeno pepper, seeded and chopped
2 to 3 tablespoons chopped fresh cilantro, a palm full
1 lime, juiced
1/2 cup chopped flat-leaf parsley, a few handfuls
1 cup grated manchego or extra-sharp Cheddar
1 tablespoon butter
4 large eggs

Steps:

  • Preheat a large nonstick skillet over medium high heat with 2 turns of the pan of olive oil, about 2 tablespoons. Add the breakfast sausage and break it up with the back of a wooden spoon into little chunks, brown sausage for 3 minutes. Add the sweet potatoes and 3/4 of the chopped red onion to the sausage, season with chili powder, cumin, coriander, salt and pepper, stir frequently and cook for 10 to 12 minutes, or until the potatoes are nice and tender.
  • While the hash is cooking, in a small bowl combine the tomatoes, jalapeno, and the remaining chopped red onion, cilantro, lime juice and a little salt and pepper.
  • Once the hash is cooked, add the chopped parsley, stir to combine and transfer hash to a serving platter. Sprinkle with the cheese and cover with aluminum foil, the cheese will melt while you make the fried eggs.
  • Wipe clean the skillet you made the hash in, return it to the cook top over medium-high heat and add the butter. Once the butter has melted, crack each of the eggs into the skillet, season with a little salt and pepper and fry to desired doneness. Eggs may, of course, be scrambled as well. As you like!
  • Transfer the fried eggs to the top of the hash, sprinkle with the fresh tomato salsa and serve.

This is a really wonderful way to have your eggs. Simple, economical and full of delicious flavours it is proof positive that tasty doesn't have to be complicated! You can multiply this to make more servings, but I don't recommend doing anymore than two in a pan at a time. You could also do individual servings in indidividual skillets and serve them right in the skillets at the table for a novel presentation.

2 tablespoons good quality extra virgin olive oil
1 fat garlic clove, peeled and smashed
1 (400 g) can diced tomatoes with juice
sea salt
freshly cracked black pepper
2 leaves fresh basil, torn up or 1/2 teaspoon dried basil
2 large eggs

Steps:

  • Heat a non-stick frying pan over medium heat until hot.
  • Pour in the olive oil and heat that until it just starts to shimmer.
  • Add the garlic and saute just until it begins to be fragrant.
  • Pour in the tinned tomatoes.
  • Season with salt and pepper and throw in the basil leaves.
  • Turn the heat down to low and simmer for a few minutes until the flavours meld and the tomatoes have reduced a bit.
  • Break the eggs into the pan, leaving some space between them if possible. (This all depends on the size of your pan)
  • Cook until the whites just start to set, then pop a cover on and finish cooking until eggs are set and done to your taste. We like them so that the yolks are a bit runny.
  • Sprinkle a little sea salt and cracked black pepper over the yolks and serve with toasted bread fingers for dipping.

600g mushrooms , quartered

  • Heat oven to 200C/180C fan/gas 6. Put the potatoes in a pan of water, bring to the boil, cook for 5 mins, then drain. Heat the oil in a large frying pan. Cook the potatoes, mushrooms and garlic for 5-8 mins to soften the mushrooms and brown the edges of the potatoes. Stir in half the thyme and cook for 1 min more.
  • Spoon the potato mixture into a baking dish and sprinkle with the cheese and the remaining thyme. Make holes in the mixture and break in 4 eggs. Bake in the oven for 12-15 mins until the eggs are set and the cheese has melted.

750g even-sized potato , such as Desirée or Maris Piper
750g tomato
4-5 tbsp olive oil

Steps:

  • Heat the oven to 190C/fan 170/gas 5. Thinly slice the potatoes either by hand or in the food processor (no need to peel them). Put in a pan with water to cover, bring to the boil, simmer for 3 mins, then drain well. Slice the tomatoes.
  • Brush oil over the base and sides of a 1.5 litre ovenproof dish. Layer up half the potatoes, seasoning and drizzling with oil as you go, then cover with half the sliced tomatoes. Repeat the layers, finishing with tomatoes.
  • Bake for 45-55 mins, until the top is lightly browned. Serve warm or at room temperature. Can be reheated.

2 tbsp sunflower oil

  • Make the chutney: heat the vinegar and sugar with 1 tbsp cold water, swirling until sugar dissolves. Throw in the onion and cook for 1 min, then add the tomatoes and cook for 3 mins until starting to soften. Turn off the heat and set aside to cool.
  • Mix the mashed potato and spring onion with some seasoning, then carefully fold in the black pudding. Shape into 4 patties and dust in the flour. Heat half the oil in a large non-stick frying pan and cook the potato cakes for 3 mins each side until golden. Remove from the pan and keep warm.
  • Heat the remaining oil in the frying pan, then crack both eggs in and cook how you like them. Serve 2 black pudding cakes per person, topped with a fried egg and a dollop of tomato chutney.
