CHILAQUILES WITH ROASTED TOMATILLO SALSA

Chilaquiles with Roasted Tomatillo Salsa image

Provided by Marcela Valladolid

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 16

1 pound fresh tomatillos
3 fresh serrano chiles
3 garlic cloves, unpeeled
1 large onion, coarsely chopped
Olive oil, as needed
Salt and freshly ground black pepper
1/2 cup fresh cilantro leaves
1/4 cup chicken broth or more as needed
1/3 cup vegetable oil
10 corn tortillas, cut into eighths, preferably stale (spread out to dry overnight)
3 cups roasted Tomatillo Salsa
Kosher salt and fresh ground black pepper
1/2 cup crumbled queso fresco*** or a mild feta
2 thin slices onion, separated into rings
1/2 cup Mexican crema, creme fraiche or sour cream
1/4 cup chopped fresh cilantro leaves, for garnish

Steps:

  • Special equipment: 4 individual casserole dishes
  • To make the salsa:
  • Preheat the broiler or oven to 550 degrees F.
  • Remove husks from the tomatillos and rinse under warm water to remove the stickiness. Put the chiles, garlic, onion and tomatillos on a baking sheet. Season with a little olive oil, and salt and pepper, to taste. Put on a rack about 1 or 2 inches from the heat, and cook, turning the vegetables once, until softened and slightly charred, about 5 to 7 minutes. When cool enough to handle, peel the garlic and pull off the tops of the chiles. Add all the broiled ingredients to a blender along with the fresh cilantro and puree. Pour in 1/4 cup of chicken broth and blend to combine. Add more broth, if needed, for desired consistency.
  • To make the chilaquiles:
  • Pour about 1/3 cup vegetable oil into a large saute pan over medium heat. When the oil is hot, add the tortillas, working in 2 or 3 batches, and cook until lightly browned and nearly crisp. Drain the tortillas on paper towels and discard the remaining oil. Wipe the pan with a paper towel.
  • In the same pan, add the tomatillo salsa and bring to simmer over low heat. Add the tortillas and cook until soft but not mushy, about 5 minutes. Season with salt and pepper, to taste. Divide the mixture among 4 individual casserole dishes. Top with the cheese crumbles and onion rings. Drizzle with Mexican crema, sprinkle with some chopped fresh cilantro and serve immediately.
  • *Cook's Note: Salsa Verde means "green sauce" and is typically made with tomatillos, green chiles and cilantro. Make your own fresh, or you can also find it canned at most supermarkets.
  • Tomatillos are a small green fruit encased in a tissue paper-like husk. They should be used when they are still green, before they are ripe and the husk has turned brown. Before using, remove the husk, rinse and dry the fruit. (They do not need to be seeded.) They are found in most supermarkets
  • **Cook's Note: Chilaquiles is a Mexican brunch dish invented to use leftovers. It is made with day old tortillas (cut or torn into chips) and salsa verde. They are cooked together until the tortillas are slightly softened. Chilaquiles are eaten alone or with beans, eggs or shredded chicken.
  • ***Cook's Note: Queso fresco is a white, mild, fresh Mexican cheese with the texture of fresh farmer's cheese in the US. Queso fresco can be found in many supermarkets, Latin specialty markets or online. It can be substituted with a mild feta cheese.

2 pounds fresh tomatillos, husked and well rinsed
2 fresh jalapeno peppers
1 medium white onion, quartered
4 tablespoons olive oil
4 cloves garlic, unpeeled

TOMATILLO-SERRANO SAUCE (SALSA VERDE) STEP-BY-STEP

Tomatillo-Serrano Sauce (Salsa Verde) Step-by-Step image

Getting good at whipping up this Green Sauce opens up loads of possibilities in the kitchen. Use it generously on eggs, enchiladas, carnitas and burritos.

Provided by Patrick Calhoun | Mexican Please

Time 20m

Number Of Ingredients 6

4-5 medium-sized tomatillos
1 serrano pepper
1/2 white onion ((yellow is OK))
1 garlic clove
10-12 sprigs cilantro
salt to taste

Steps:

  • Pull the husks off the tomatillos and give them a good rinse. Cut the stems out of the tomatillos.
  • Roast the tomatillos in a 400F oven for 10-20 minutes or until they start to turn army green in color.
  • Add the tomatillos to a blender along with 1/2 onion, 1 peeled garlic clove, 10-12 sprigs cilantro (using the upper stems is fine), and 1/4 of the serrano pepper. (Be sure to give the cilantro and serrano a good rinse.)
  • Pulse blend and taste for heat level. If you want more spice add another quarter of serrano. Keep adding serrano until it tastes "right" to you.
  • Salt to taste (I typically do not add much salt).
  • Serve immediately and store leftovers in an airtight container in the fridge.

ROASTED TOMATO AND TOMATILLO SALSA

Roasted Tomato and Tomatillo Salsa image

This is a delicious Salsa to add to your repertoire! It uses both tomatoes and tomatillos to create a completely unique flavor. Yum!!

Provided by Mexican Please

Time 30m

Number Of Ingredients 8

2 roma tomatoes
4-5 tomatillos
1/3 small onion
1 garlic clove
1-2 jalapenos (or serranos)
10-12 sprigs cilantro
pinch of salt
squeeze of lime

Steps:

  • Husk the tomatillos and then rinse both the tomatoes and tomatillos. I usually remove the stems from both of them knowing that any juices leftover in the roasting pan will go into the blender.
  • Roast the tomatoes and tomatillos in a 400F oven for 20-25 minutes. Here's why roasting tomatillos is better than boiling them.
  • Add the roasted tomatoes and tomatillos to a blender along with 1/3 small onion, 1 peeled garlic clove, 1 rinsed and de-stemmed jalapeno (or less for a milder version), 10-12 sprigs rinsed cilantro. Combine well (I usually leave it a bit chunky.)
  • Take a taste for seasoning. I added another 1/2 jalapeno, a pinch of salt, and a generous squeeze of lime.
  • Serve immediately or chill in the fridge for a bit before serving.
  • Store leftovers in an airtight container in the fridge where they will keep for a few days.

Quick Roasted Tomatillo Salsita recipe from Pati's Mexican Table Season 6, Episode 10 "How I Got to Now"

Provided by Pati Jinich

Categories     Sauce     Side Dish

Time 20m

Number Of Ingredients 6

1 pound tomatillos (husked and rinsed)
1 garlic clove (unpeeled)
1 thick slice of a large white onion ((about 2 ounces))
1 whole jalapeño or serrano chile (or more to taste)
1/2 cup fresh cilantro leaves and upper stems (coarsely chopped)
1/2 teaspoon kosher or coarse sea salt (or more to taste)

Steps:

  • Pre-heat the broiler.
  • On a small baking dish or baking sheet lined with aluminum foil, place the tomatillos, garlic, onion slice and chile. Place under the broiler for 8 to 10 minutes, flipping the ingredients once in between, until completely charred and mushy. Watch out for the garlic as you may need to remove it a few minutes before the rest of the ingredients. When cool enough to handle, peel the husk off the garlic cloves and remove stem from the chile.
  • In the jar of a blender, place the tomatillos and their juices, chile, onion and garlic. Also add cilantro and salt. Puree to your desired texture, you may leave it chunky or puree until smooth.

I used a splatter screen) Add the tortillas and cook until soft but not mushy, about 5 minutes. Season with salt and pepper, to taste. Divide the mixture among 4 individual casserole dishes. Top with the cheese crumbles and onion rings. Drizzle with Mexican crema, sprinkle with some chopped fresh cilantro and serve immediately.

  • Using a slotted spoon, transfer the tomatillo mixture to the blender. Season with salt. Blend on high for just a few seconds.
  • Pour salsa into a sauce pan and heat to medium heat. Just bring to a light simmer and cook the salsa for 8-10 minutes. Cooking the salsa helps remove the natural pectins in the tomatillos and keep your salsa from clumping up when refrigerated. Once salsa cools you could add in some chopped onion and cilantro. It's an option.

  • Place the tomatillos, chile, the half onion, and the garlic on a vegetable grilling tray. Grill over medium high flame, turning the veggies over as they blacken. Grill until the tomatillos begin to soften. The garlic and chile will be done first--pull them off the grill. Alternatively, line a baking sheet with foil. Roast the tomatillos and chiles close to the broiler flame, until slightly blackened on all sides. You will need to move things around to get them evenly charred.
  • If you broiled the tomatillos instead of charring on the grill, you will want to char the onion and garlic in a hot cast iron skillet or comal. On a stovetop, heat the comal or cast iron skillet on high flame. Toast the garlic on all sides, and the onions, cut side down until nicely charred.
  • Puree all the charred veggies together in a blender. Add the cilantro and salt; blending just until there are bits of cilantro throughout the salsa.
