3 sweet potatoes
2 tablespoons oil
1 tablespoon dried rosemary
1 teaspoon salt
1 teaspoon pepper
fresh parsley, chopped, for serving

Steps:

  • Preheat the oven to 400°F (200ºC).
  • Slice the top and bottom off of the sweet potatoes, and slice potatoes in half crosswise. Rest each half on the broader end, then slice 3 times vertically and horizontally. Turn the potatoes on their side and make 4 or five more slices, to form cubes.
  • Transfer the sweet potatoes to a baking sheet, then add the oil, rosemary, salt, and pepper. Toss to coat evenly.
  • Bake for 35-40 minutes, until the sweet potatoes are tender and starting to brown around the edges.
  • Let cool for 5 minutes. Garnish with chopped parsley before serving.

2 pounds sweet potatoes (about 3 medium) (peeled and cut into 1-inch cubes)
1 1/2 tablespoons olive oil
1 heaping tablespoon minced fresh rosemary
3/4 teaspoon garlic salt
1/4 cup freshly grated Parmesan
Freshly ground black pepper

Steps:

  • Adjust oven rack to center position and preheat the oven to 400°F.
  • In a large bowl, combine the sweet potatoes and the olive oil. Stir to coat the sweet potatoes. Evenly sprinkle with rosemary, garlic salt, and pepper. Stir well until all sweet potatoes are evenly coated with seasonings and herbs. Transfer the sweet potatoes to a large rimmed baking sheet and spread out so that they are in a single layer.
  • Cook for 15 minutes. Remove the pan from the oven and use a metal spatula to scrape any stuck bits. Stir everything around and flip all of the sweet potatoes over. Cook for 10 to 15 more minutes until the potatoes are tender.
  • Remove potatoes from oven and, if necessary, season with additional garlic salt and pepper, to taste. Sprinkle with half of the Parmesan, toss and flip to coat, then sprinkle with the remainder of the Parmesan. Bake for a couple more minutes until the cheese is melted. Serve immediately.

They are delicious with a classic roast dinner... but equally at home with midweek favourites, such as burgers, fish and chicken.

1 large sweet potato (roughly 500g / 1lb) (chopped into 1cm / ½inch cubes)
2 tablespoons olive oil
Salt and pepper to taste
3 sprigs rosemary (leaves only, chopped finely)
3 cloves garlic (crushed or grated)

Steps:

  • Preheat your oven to 220C / 200C fan / gas mark 7 / 425F.
  • Place the sweet potato cubes on a large non-stick baking tray, drizzle over the olive oil and sprinkle with plenty of salt and pepper.
  • Turn the sweet potato cubes to coat them evenly in the oil, then ensure the cubes are well spread out (use 2 baking sheets if necessary) and in a single layer. Roast in the oven for 15 minutes.
  • Remove from the oven, sprinkle over with the garlic and rosemary. Turn the cubes to get them all coated in the rosemary and garlic. Return to the oven for a further 10 minutes.

2 pounds brown fingerling potatoes
2 pounds small purple potatoes
2 pounds small red potatoes

  • Preheat the oven to 400 degrees F. Mince the garlic really finely, then strip the leaves off the rosemary sprigs and mince them finely, too.

2 lbs red potatoes, unpeeled and cut in large chunks
1/4 cup olive oil
5 garlic cloves, smashed

Steps:

  • In a saucepan large enough to hold all of the potato chunks, bring water to a boil.
  • Add potatoes, and boil for 2 minutes. You are not trying to cook the potatoes through at this point.
  • In a large bowl, combine the oil, garlic, rosemary, salt and pepper. Be generous with the salt, or the potatoes will be bland.
  • Drain the potatoes well, and add to the oil and garlic mixture.
  • Mix gently, but thoroughly.

Crispy roasties are essential to any Sunday dinner. Everyone's favourite side can only be improved by roasting in goose fat, with garlic and herbs

2kg Maris Piper potatoes
4 tbsp goose fat
4 rosemary sprigs, leaves picked and roughly chopped
4 garlic cloves , peeled and left whole

Steps:

  • Peel the potatoes, leaving the smaller ones whole and cutting the larger ones so that they are all roughly the same size. Put them in a large pan of cold salted water, bring to the boil and simmer gently for about 15 mins until cooked through. Tip gently into a colander and leave to drain and cool - there's no need to shake. When they stop steaming, put them on a tray in a single layer and place in the fridge, uncovered, until ready to roast. Can be done up to two days ahead.
  • Once you have put the loin in to start roasting, spoon the goose fat into a flameproof roasting tin and heat on the hob for a few mins. Turn the heat off and, one at a time, turn each potato in the fat so they are completely coated. Make sure they are in a single layer and not touching. Once the oven has been turned down to 180C/160C fan/gas 4, put the potatoes in the oven with the pork and cook for 40 mins undisturbed.
  • Remove from the oven and, again, turn each potato. Return to the oven for 20 mins, then remove and repeat the turning process. The pork should have come out of the oven by now, so turn the oven up to 220C/200C fan/gas 7 and cook the potatoes for a final 20 mins. Add the rosemary and garlic 5 mins before the end. Once cooked, the potatoes should be deep golden and crunchy on the outside and fluffy in the middle. Sprinkle with sea salt and serve.
