Roasted Spiralized Sweet Potatoes With Walnuts And Feta Food
ROASTED SPIRALIZED SWEET POTATOES WITH WALNUTS AND FETA RECIPE

Steps:
- Adjust oven rack to middle position and heat oven to 450 degrees. Using spiralizer, cut sweet potatoes into ⅛-inch-thick noodles, then cut noodles into 12-inch lengths.
- Toss potato noodles with oil, ¼ teaspoon salt, and ⅛ teaspoon pepper and spread on rimmed baking sheet. Roast until potatoes are just tender, 12 to 14 minutes, stirring once halfway through roasting.
- Season potatoes with salt and pepper to taste and transfer to serving platter. Sprinkle walnuts, feta, and parsley over top, then drizzle with extra oil to taste. Serve.

Steps:
- Heat oven to 200C/180C fan/gas 6. Toss the sweet potato with the oil and some seasoning. Spread on a baking parchment-lined baking tray and roast for 30-35 mins until tender. Cool to room temperature.
- Whisk the dressing ingredients with a little more seasoning. Pile the potato onto a serving platter and drizzle over the dressing. Scatter over the feta and nuts, and very gently toss with your hands so you don't break up the potato.
