1/4 cup Sichuan peppercorns
1/4 cup kosher salt

Steps:

  • Mix together the peppercorns and the salt in a small bowl. Transfer the mixture to a medium-sized skillet and toast over medium heat, stirring constantly, just until the mixture is fragrant and smoking and the salt begins to turn golden, five to eight minutes. Be very careful not to let the mixture burn.
  • Remove from the heat and let cool. Then grind the pepper-salt until fine and sieve to remove any large pieces. Store in an airtight container.

1 tablespoon Sichuan peppercorns, toasted
2 teaspoons coarse salt
1 whole chicken (about 3 1/2 pound)
1 tablespoon olive oil
Equipment:
an electric coffee/spice grinder; an instant-read thermometer

Steps:

  • Preheat oven to 425°F with rack in middle.
  • Finely grind peppercorns with salt in grinder.
  • Pat chicken dry, then rub with olive oil and 2 teaspoons pepper-salt (reserve remainder). Transfer to a rack set over a roasting pan. Pour 1 cup water into bottom of pan and roast chicken until skin is golden and crisp and a thermometer inserted into thickest part of thigh (do not touch bone) registers 170°F, 50 minutes to 1 hour.
  • Transfer chicken to a platter and let rest 10 minutes. Serve chicken with remaining pepper-salt on the side.

This recipe - which works as either a main dish or appetizer - is a result of combining some different "Salt and Pepper Squid" recipes that I hadn't made before. I was aiming for the taste I'd had in a Seattle sushi place, but didn't quite achieve it. On the other hand, my husband and I loved these anyhow, so I decided to write up the recipe so that I - and others - can duplicate it in the future. These are as good as any calamari I've gotten in restaurants! The first time we made them we gobbled them down so fast that I forgot to take a photo... :)

1/2 lb cleaned young squid, body and tentacles separated
1 tablespoon tricolor peppercorns (I prefer the different flavors of the tricolor) or 1/2-3/4 teaspoon black peppercorns
5 -10 szechuan peppercorns (individual Szechuan peppercorns, to taste and depending on the freshness of your peppercorns)
1/2 cup flour
2 teaspoons sea salt
1/8 teaspoon cayenne pepper, to taste
1/4 teaspoon garlic powder
2 -3 cups vegetable oil or 2 -3 cups peanut oil, for frying
chili-garlic sauce, for dipping (or other favorite dipping sauce)

Steps:

  • If you got whole squid, clean them first: gently pull the head and tentacles away from the body, then pull out the backbone (quill, aka cuttlebone) from inside the body and discard it and the intestines and ink sac; cut the tentacles from the head just below the eyes and discard head; remove membrane/skin from body.
  • (How you cut up the squid at this point is a matter of preference, but here's how I like it.).
  • Cut the larger tentacles away from the smaller ones, so that you get some single tentacles in the mix.
  • Pull or cut the wings away from the body.
  • Cut the body down the center so that you can open the two sides up flat, then make strips that are between 1/8 to 1/4 inch wide and about 1 to 1 1/2 inch long; you can also cut the body into 1/4-inch wide tubes, if you like.
  • Rinse all the cut pieces, tentacles, and wings well in a sieve, and let drain.
  • In a dry skillet, roast the peppercorns over medium high heat until they begin to smoke; remove from heat, let cool, then use a mortar and pestle or other grinder (I use a coffee grinder) to make into a fine powder.
  • In a bowl, mix together the flour, salt, cayenne, garlic powder, and powdered peppercorns.
  • Add the drained squid pieces, and toss or stir well with your hand to coat them well, shaking off excess.
  • Heat oil in a hot wok or deep heavy pan until very hot (the surface should seem to simmer slightly - you can test it with a single piece to see if it's not enough), then deep fry the squid in batches for 1 to 2 minutes until tender and beginning to turn golden. Do not overcook or your cooked squid will turn rubbery -- blech.
  • Remove with a slotted spoon and let drain on paper towels.
  • Serve immediately with dipping sauce - we like garlic chile sauce, but cocktail sauce or aioli is nice, too.

4 squabs, 16 to 18 ounces each
1 tablespoon course sea salt
2 tablespoons Sichuan peppercorns
1 tablespoon soybean or corn oil
3 shallots, peeled and minced
1 1/2 cups port
1/4 cup honey
3 tablespoons white-wine vinegar
Fresh rosemary sprigs for garnish

Steps:

  • Rinse the squabs and pat them dry. Use shears or a sharp knife to cut away the extra neck portions and back fat.
  • Heat a small heavy skillet over medium-low heat and add the salt and peppercorns. Roast the mixture, shaking the pan, until the peppercorns turn dark brown. Transfer to a bowl and cool. Rub each squab inside and out with the mixture. Place the birds in a dish, cover with plastic wrap and refrigerate 4 to 6 hours or overnight.
  • In a medium saucepan, heat the oil, add the shallots and cook over medium heat, stirring, until the shallots are soft, about 5 minutes. Pour in the port and cook until the sauce thickens and reduces by about two-thirds, about 20 minutes. Set aside.
  • When ready to cook the squabs, preheat the oven to 400 degrees. In a small bowl, whisk together the honey and vinegar. Place the squabs breast side down on the rack of a broiler pan. Brush generously with the honey mixture and roast for 5 minutes. Brush again and roast for 10 minutes more. Turn the birds over, brush again and roast for 5 minutes more. Brush again and roast for a final 10 minutes, until the squabs are nicely browned. Use poultry shears to split the birds down the middle; remove the backbone. Place the squab halves on a platter. Reheat the port sauce if necessary and spoon it around the birds. Garnish with rosemary sprigs.

600 g chicken, cut into bite size pieces
2 tablespoons soy sauce
1 tablespoon brandy
1 tablespoon cornflour
2 spring onions, chopped
2 teaspoons ginger, minced
vegetable oil (for frying)
1 tablespoon olive oil
1 tablespoon sichuan pepper
12 dried red chilies, chopped
1 tablespoon garlic, minced
1 tablespoon ginger, minced
2 spring onions, chopped
1/2 teaspoon salt
1/2 teaspoon sugar

Steps:

  • Mix soy sauce, brandy, cornflour, spring onions and ginger.
  • Add the chicken pieces and mix to coat. Cover and marinate for one hour.
  • Heat the oil in a deep frying pan or wok and deep fry the chicken pieces in batches each for around 5 minutes. Remove the batches of chicken and drain on kitchen paper.
  • Heat the olive oil in a wok and fry the Sichuan pepper and dried red chilies for about 1 minute.
  • Add the garlic and ginger and stir fry for 30 seconds. Don't burn the garlic.
  • Add the reserved cooked chicken, salt, sugar and green onions.
  • Stir until combined.
  • Serve hot with steamed white rice or rice noodles.
