ROASTED SALMON WITH WHITE WINE AND LEMON BUTTER SAUCE

Roasted Salmon With White Wine and Lemon Butter Sauce image

Individual portions of salmon are roasted in the oven and then served with a buttery and refreshing white wine and lemon butter sauce. The aromatic sauce has both creamy and acidic notes in it, complementing the fish so well.

Time 25m

Yield 4

Number Of Ingredients 9

4 portions of salmon fillets
1 1/2 Tablespoons oil
salt and ground black pepper
1 shallot (minced)
1 garlic clove (minced)
1 cup dry white wine (I like Sauvignon Blanc)
juice from 1 lemon
6 1/2 Tablespoons butter (cut into 1 Tablespoon chunks)
1 Tablespoon fresh parsley (minced)

Steps:

  • Preheat the oven to 500 degrees. Place a rimmed baking sheet into the oven to heat up.
  • Meanwhile, season each fillet with salt and ground black pepper and rub each fillet with oil all over.
  • When the oven has preheated to 500 degrees and the baking sheet has been in the oven for about 10 minutes, take out the baking sheet and place the salmon, skin side down, onto the searingly hot baking sheet. You will hear it sizzle and the skin will start to sear right away.
  • Place the fish in the preheated oven. Reduce the heat to 250 degrees and roast the fish for 15 minutes.
  • While the fish is in the oven, melt 1/2 Tablespoon of butter in a skillet on medium high heat. Add the shallot and garlic clove. Season with salt and pepper. Cook them until the shallots are tender and start to turn golden.
  • Deglaze the skillet with the white wine and then add the lemon juice.
  • Turn the heat up to high and reduce the liquid until it has reduced to half the amount.
  • Turn off the heat and whisk in the butter, one Tablespoon at a time. The sauce will become thick and velvety. Add the parsley to the sauce.
  • Spoon the sauce over the roasted fish and serve.

PAN-SEARED SALMON WITH LEMON-WHITE WINE SAUCE

Pan-Seared Salmon with Lemon-White Wine Sauce image

This Pan Seared Salmon with Lemon White Wine Butter Sauce is a fast and easy salmon recipe for busy weeknights. Only six ingredients and 20 minutes!

Provided by Jacqueline

Time 25m

Number Of Ingredients 7

1 1/4 lb salmon (about 1)
Seasoning of choice (Old Bay)
3 T butter
1 clove garlic (minced or pressed)
1/3 c white wine (Chardonnay)
1/2 fresh lemon
1 teaspoon lemon zest

Steps:

  • Pre-heat a large skillet over medium high heat. Season the flesh of the fish with whatever seasoning you would prefer, I used Old Bay in this particular instance.
  • Add 2 tablespoons olive oil to the pan and heat to shimmering. Add fish skin side down, and allow to crisp up, 4 minutes or so. Turn the heat down to medium. Using a spatula, carefully turn the fish over and finish cooking while crisping up the skin, approximately eight minutes. Check the fish using a fork towards the end of cooking-if it flakes easily, it is done. Do not overcook it, as it will also continue to cook slightly once remove from the pan. Transfer fish to a serving platter.
  • In the same skillet, melt 2 tablespoons of butter. Add garlic to the pan and sauté until fragrant, about 30 seconds. Deglaze the pan with the wine, scraping up any browned bits stuck to the bottom of the pan, and add a squeeze or two of the lemon. Simmer until reduced by half and add the lemon zest. Whisk in remaining tablespoon of butter to give the sauce a creamy texture.
  • Serve the salmon topped with the sauce.

SALMON WITH BUTTER SAUCE

Salmon With Butter Sauce image

This is a recipe I'm posting for Zaar World Tour 2006. It's from a cookbook, French Classics. The author, Richard Grausman, stated that poached salmon is traditionally served with a hollandaise sauce but this is much better. You can substitute any thick fish. Serve with potatoes or rice and Chardonnay. Or if you prefer French Hollandaise Sauce #170385

Categories     European

Time 30m

Yield 6 serving(s)

Number Of Ingredients 8

3 lbs skinned salmon fillets
1 lemons, juice of or 1 cup white wine
2 shallots, finely chopped
1/2 cup white distilled vinegar
8 ounces lightly-salted butter, softened to room temperature
1 -2 tablespoon chopped fresh basil
chopped chives
chopped fresh tarragon

Steps:

  • Cut fish into individual serving sizes.
  • In large skillet, bring enough water to a boil to cover fish by 1 inch.
  • If the fish isn't fresh add the white wine, lemon juice, or vinegar.
  • Add the fish and turn down the heat to simmer. Cook about 10 minutes per inch of thickness of fish. When done, drain on paper towels.
  • While fish is simmering, cook shallots in the vinegar in a small pan over low to medium heat until 1 TB of liquid remains. Add optional ingredients.
  • Remove pan from heat. Whisk the butter, 2 TB at a time, into the shallots letting it melt before adding more.
  • Serve sauce over fish.
