WHOLE ROASTED SNAPPER
Whole fish is great on the grill but can come together quickly in the oven, too. Fresh and bright from lemons and kumquats, gochugaru Korean chile flakes give a bit of smokiness reminiscent of the grill. When you buy whole fish from our Seafood department, it will already be cleaned, but our fishmongers will happily scale it for you, too.

BBQ BROILED RED SNAPPER
If you don't cook fish often, or don't like fish, this broiled red snapper recipe may be just what the doctor ordered. Normally we don't want to cover up the delicate flavors of the seafood, but in this case, we have no choice. It's not like you can't tell you're eating fish, but close enough.

- Set it aside to sit for a few minutes to marinate the fish, or until the oven is ready.
- Place red snapper ( uncovered) on the center rack.
- Roast for 10 minutes.
- Then open the oven, and slowly pour the white wine over the snapper. Close the oven and continue to roast for an additional 5 to 6 minutes. Fish is done when meat is opaque and flakes easily with a fork.

Steps:
- Preheat oven to 400 degrees F. Rub the fish with olive oil and place it in an oiled oval pan, gratin dish, or sheet pan. Bake for about 15 minutes per inch of thickness at the thickest part of the fish. Check for doneness by carefully sliding a paring knife into the back at the thickest part, gently lifting the top fillet, and peeking inside to make sure the fish pulls away from the bone and the flesh is opaque (but still moist) rather than translucent and raw. Season with salt, pepper, olive oil and lemon.;

Steps:
- Roasted Garlic Oil:
- Place oil and garlic in a blender and blend until smooth. Strain.
- Flatbread:
- Mix water and yeast in a large bowl and let stand 5 minutes to proof. Gradually pour in 2 cups of the flour and stir to incorporate. Mix for about 1 minute to form a sponge. Let stand, covered, for at least an hour.
- Put sponge in the bowl of a stand mixer. Using the dough hook, add the salt and oil, then add the flour, 1/2 cup at a time, to form a dough. Remove from bowl and knead. Place in a clean oiled bowl and let rise, slowly, about 2 1/2 hours. Divide dough into 4 balls, if desired, let rise again for 1/2 hour, and then roll out as desired.
- Flatten flatbread dough, gently press into a large rectangle, brush liberally with olive oil, and throw on grill. Grill on both sides until golden brown. Spread 1 side with ricotta, sprinkle with salt and pepper, scatter tomatoes over, drizzle with Roasted Garlic Oil, and garnish with basil and more freshly ground black pepper. Serve immediately.

- The first step of this baked red snapper fillet recipe is preheating your oven to 400 degrees Fahrenheit. Take your Cameron’s red snapper fillet and score it on the skin side about halfway through the fish and 2 inches apart; this will allow the herb mixture to permeate the meat of the fish and keep the fish from curling up.
- Put your olive oil, garlic, parsley, thyme, lemon juice, and salt and pepper into a food processor and blend until the garlic and herbs are in tiny pieces. Line a baking dish that is large enough to fit your fillet with foil and place your lemon slices on the foil. Rub your herb mixture all over your red snapper fillet and inside the scores you made on the fish.
- Place the red snapper on top of the lemon slices and bake for about 15 minutes. You are going to want to check your snapper starting at around 12 minutes. You want it to be fork flakey but not overdone. If it is too rubbery and not flakey, it needs some more time in the oven.
- We found that these red snapper fillets are great served with roasted potatoes and a salad, but there are so many options you could choose as your side. A simple brown butter sauced pasta or rice pilaf would be lovely too.

- Pat the snapper fish dry. With a large knife, make two slits on each side of the fish. Fill the slits and coat the gut cavity of each fish with the minced garlic.
- To make the spice mix, combine the cumin, coriander, salt, pepper and sumac in a small bowl. Use 3/4 of the spice mix to season the snapper on both sides; pat the spices into the fish pushing into the slits you made earlier. Keep the remainder 1/4 of the spice mix aside for now.
- Stuff each gut cavity with the chopped dill, and as much of the sliced peppers, tomatoes and onions as possible.

- The sausage can be stuffed into a natural casing and smoked; it can be frozen or grilled fresh. It can also be served in patties as well. Please allow the sausage to sit in the refrigerator for 24 hours before cooking to allow the flavors to develop. Use half the batch for this snapper recipe, and freeze the rest.
- To assemble: Place the oil in a sauté pan over high heat and add the onions, garlic, herbs and spices. Cook for several minutes until onions are glassy. Add the tomatoes and cook until liquid is evaporated. Cool and fold in the corn, lime juice and cheese.
- Unroll the banana leaves and cut into 3-foot lengths. Place a fish portion into the third of the leaf nearest you. Place a few tablespoons of raw sausage, crumbled on top of the fish and cover with a few tablespoons of the sauce. Season with salt, pepper.
- Fold the fish packages burrito-style, tucking the sides in as you roll up the leaf. Place on a sheet pan, seam side down to prevent unrolling, and bake in a preheated 400 degree F oven for 40 minutes until cooked through.
