PORK BELLY WITH LENTILS
Steps:
- Preheat the oven to 450 degrees F.
- Score the fat on the belly and season both sides with salt and pepper. Make a bed in a roasting pan with the carrots and onions. Lay the pork belly on top, skin-side up. Pour over the cider and a cup of water. Cook 30 minutes to get the fat running. Stir together the honey and Dijon with a spoonful of water. Brush the mustard mixture onto the fat, and lower the heat to 325 degrees F. Continue cooking, basting occasionally with the honey, for 3 hours.
- An hour before the belly is done, start the lentils. Rinse the lentils in cold water, drain, and put in a saucepan with 1 1/2 cups water, the shallot, bay leaf and thyme. Bring to a boil, cover, and simmer gently until tender, 30 to 40 minutes, checking occasionally to make sure no more water is needed. Drain the lentils, and season with salt, and pepper. Set aside to reheat later.
- Remove the belly from the oven when it's done, and transfer to a baking sheet. Return it to the oven at 450 degrees F for 15 minutes to crispen the skin.
- Meanwhile, drain the juices from the roasting pan into a measuring cup, reserving the vegetables and keeping them warm. Pour the fat off the juices, using some to moisten the lentils and saving the rest for another use. Deglaze the roasting pan with the vinegar and reduce to a glaze, then add the cooking juices and cook down for a minute or two. Reheat the lentils gently.
- Slice the belly and serve with the vegetables, and with the pork-fat moistened lentils.
PORK AND LENTIL CASSOULET
This variation on cassoulet uses lentils instead of the traditional white beans. In place of pork, you may substitute beef bottom round. *EDIT*I have had a problem with the lentil's cooking well in the crock pot. I suggest that you pre-soak them for an hour prior to adding them to the crock pot and cook on high and allowing for an extra 1/2 hours cooking time if it's needed.

- Trim fat from pork and cut meat into 3/4-inch cubes.
- In a large nonstick skillet brown pork, onion, and garlic in hot oil.
- Transfer mixture to a 3-1/2- to 4-quart electric crockery cooker, add water, undrained tomatoes, carrots or parsnips, celery, lentils, rosemary, bouillon granules, salt, and pepper.
- Cover and cook on high-heat setting for 4-1/2 to 5-1/2 hours (12 hours if using the low-heat setting).
- Garnish with a fresh rosemary sprig, if desired.
- Make-Ahead Tip: Slice vegetables the night before; add seasonings. Cover and chill until ready to assemble in crockery cooker.

MUSTARD-CRUSTED PORK WITH CARROTS AND LENTILS

- Preheat oven to 425°F with rack in middle.
- Toss carrots with 2 tablespoons oil and 1/4 teaspoon each of salt and pepper in a shallow baking pan and roast while preparing pork.
- Pat pork dry and sprinkle with 1/2 teaspoon salt. Heat 1 tablespoon oil in a 12-inch heavy skillet over medium-high heat until it shimmers, then brown pork all over, about 3 minutes total.
- Put pork on a work surface and brush with 1 tablespoon mustard. Stir together bread crumbs and 1/2 tablespoon oil, then press onto mustard on pork to form a crust.
- Transfer pork to pan with carrots and roast until carrots are browned and tender and an instant-read thermometer inserted into center of meat registers 140 to 145°F, 15 to 22 minutes. Let pork stand 5 minutes; keep carrots warm, covered (or continue roasting if needed).
- While pork roasts, heat remaining 2 tablespoons oil with garlic and thyme in a small saucepan until fragrant, about 1 minute. Stir in lentils, broth, and remaining tablespoon mustard and cook until heated through. Season with salt and pepper and discard thyme. Serve pork with carrots and lentils.

- Preheat oven to 300° F. Score the fat on the edge of the pork chops in two or three places and season with salt and pepper. Heat oil in a large heavy skillet over medium-high heat. Add two pork chops and sear until brown on each side, about 3 to 5 minutes per side. Place 1 clove of garlic and 1 sprig of thyme on top of each pork chop and add 1 tablespoon of butter to the pan. Using a large spoon, baste the chops with the melted fat to aromatize the thyme and garlic (this is a bit cheffy but I promise the results are worth it). Transfer the pork chops to an ovenproof dish and repeat with the other two.

- In a heavy medium saucepan, heat 2 tablespoons of the oil. Add the diced fennel, onion, carrot and celery and cook over moderately high heat until the onion is softened but not browned, about 5 minutes. Add the lentils and stir to coat with the oil. Add 2 1/2 cups of water and bring to a simmer. Cover partially and cook over moderately low heat, stirring occasionally, until the lentils are tender and the liquid is absorbed, about 40 minutes.
- Meanwhile, preheat the oven to 450°. In a medium saucepan, boil the wine until reduced to 6 tablespoons, 10 to 12 minutes. Remove the pan from the heat. Whisk in the vinegar, 1/2 cup of the oil, 1 1/4 teaspoons of salt and 1/2 teaspoon of pepper. Add the vinaigrette to the lentils and cook over low heat, stirring occasionally, for 5 minutes.

Let the pork stand, covered, for 5 minutes, then slice and serve on top of the lentils.
