1 tablespoon paprika
1 teaspoon dried thyme
1/4 to 1/2 teaspoon cayenne pepper
Coarse salt and ground pepper
2 pork tenderloins (10 to 12 ounces each)
1 tablespoon vegetable oil, such as safflower
1 teaspoon Dijon mustard
2 tablespoons cider vinegar
1 tablespoon vegetable oil
1 can (15 ounces) black-eyed peas, drained and rinsed
1 package (10 ounces) frozen corn kernels, thawed
1 red bell pepper (ribs and seeds removed), finely diced
2 scallions, thinly sliced
Coarse salt and ground pepper

Steps:

  • Make pork: Preheat oven to 450 degrees. In a small bowl, combine paprika, thyme, cayenne, 1 teaspoon salt, and 1/4 teaspoon pepper; set spice mixture aside.
  • Place pork on a rimmed baking sheet; rub with oil. Sprinkle all over with spice mixture, patting in gently. Roast until an instant-read thermometer inserted in the thickest part of meat registers 150 degrees. 20 to 25 minutes; let cool.
  • Make black-eyed pea salad: In a medium container, whisk mustard, vinegar, and oil. Add all vegetables. Season with salt and pepper; toss to combine.
  • Serve: If stored in refrigerator, bring pork and black-eyed pea salad to room temperature. Thinly slice pork; serve with black-eyed pea salad.

1/2 medium red onion, finely chopped
1 small red bell pepper, finely chopped
1 jalapeno, finely chopped
2 tablespoons chopped green onions
2 tablespoons chopped fresh parsley leaves
1/4 cup unseasoned rice wine vinegar
1/4 cup canola oil
1/2 teaspoon sugar
Salt and freshly ground black pepper
Two 15-ounce cans black-eyed peas, drained

Steps:

  • Combine the first 6 ingredients in a bowl.
  • In a separate small bowl, whisk together the rice wine vinegar, canola oil, sugar, and salt and pepper.
  • Toss all together with the black-eyed peas and let marinate for at up to 8 hours in the refrigerator before serving.

1 pound dried black-eyed peas
8 to 12 ounces boneless pork shoulder or pork butt (cut into small pieces)
1 tablespoon vegetable oil
4 strips bacon (diced)
1 cup onion (chopped)
1/2 cup celery (chopped)
3 cloves garlic (minced)
3 to 4 cups chicken broth (unsalted or low sodium)
1 teaspoon garlic powder
1/2 teaspoon black pepper (freshly ground)
1/2 teaspoon cayenne
1 to 1 1/2 cups water (or to cover)
1/2 teaspoon Cajun or Creole seasoning

Steps:

  • Put the black-eyed peas in a large bowl or pot and cover them completely with cool water. Soak the black-eyed peas for 6 hours or overnight.
  • Rinse and drain the black-eyed peas several times. Set them aside.
  • In a large Dutch oven or stockpot over medium-high heat, sear the pork pieces in the vegetable oil until browned.
  • Add the bacon to the pot and cook , stirring, for 2 minutes.
  • Add the onion and celery and continue cooking, stirring, for 5 to 7 minutes, or until the bacon is cooked and the onion is lightly browned.
  • Add the garlic and cook for 1 minute.
  • Add 3 cups of the chicken broth and the garlic powder, black pepper, and cayenne. Bring it to a boil. Reduce the heat to low and simmer for 45 minutes or until the pork pieces feel fork tender.
  • Add the drained black-eyed peas to the pot along with 1 to 1 1/2 cups of water to cover. Put the lid on the pot and simmer for about 1 to 1 1/2 hours, or until the peas turn tender but retain their shape. Add more chicken broth as necessary to keep the peas covered while they cook.
  • Taste and add the Cajun or Creole seasoning and salt, as needed.

The real beauty of this salad is that it can be made well ahead of time.

½ onion, finely chopped
2 jalapeno chiles, seeded and finely chopped
4 (15 ounce) cans black-eyed peas, rinsed and drained
2 tablespoons chopped fresh parsley
1 clove garlic, minced
½ cup red wine vinegar
2 tablespoons balsamic vinegar
¼ cup olive oil
½ teaspoon ground cumin
1 teaspoon salt
1 teaspoon ground black pepper
4 slices cooked bacon, crumbled

Steps:

  • Mix the yellow and red peppers, onion, jalapeno chiles, black-eyed peas, parsley, and garlic together in a large bowl.

1 cup quartered cherry tomatoes (I used roma tomatoes)
1 cup diagonally cut green onion (about 4 green onions)
1/2 cup finely chopped fresh parsley
1/2 teaspoon chopped of fresh mint (I omit the mint, but that's up to you)
1 (15 7/8 ounce) can black-eyed peas (rinsed and drained)
2 garlic cloves, minced

Steps:
